¼ cup butter, softened
¼ cup granulated sugar
1 teaspoon grated lime rind
⅛ teaspoon salt
⅛ teaspoon lemon extract
1 cup all-purpose flour
1 serving Cooking spray
⅔ cup granulated sugar
3 tablespoons all-purpose flour
¾ teaspoon baking powder
⅛ teaspoon salt
½ cup fresh Key lime juice
3 large eggs large eggs
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Place first 5 ingredients in a medium bowl; beat with a mixer at medium speed until creamy (about 2 minutes). Lightly spoon flour into a dry measuring cup; level with a knife. Gradually add this flour to butter mixture, beating at low speed until mixture resembles coarse meal. Gently press two-thirds of mixture (about 1 1/3 cups) into bottom of an 8-inch square baking pan coated with cooking spray; set remaining 2/3 cup flour mixture aside. Bake at 350 degrees F for 12 minutes or until mixture is just beginning to brown.
  • Combine granulated sugar, flour, baking powder, and salt in a medium bowl, stirring with a whisk. Add lime juice and eggs, stirring with a whisk until smooth. Pour mixture over crust. Bake at 350 degrees F for 12 minutes. Remove pan from oven (do not turn oven off); sprinkle remaining 2/3 cup flour mixture evenly over egg mixture. Bake an additional 8 to 10 minutes or until set. Remove pan from oven; cool in pan on a wire rack. Sprinkle with powdered sugar.

This recipe is based on the famous Key lime pie from Joe's Stone Crab restaurant in Miami Beach. If you can't find Key limes, use regular fresh lime juice.

Number Of Ingredients 9

1 cup plus 2 1/2 tablespoons finely ground graham cracker crumbs
1/3 cup sugar
5 tablespoons unsalted butter, melted
3 large egg yolks
1 1/2 teaspoons finely grated lime zest
2/3 cup fresh Key lime juice (about 23 Key limes total)
1 can sweetened condensed milk (14 ounces)
1/4 cup heavy cream
2 Key limes, thinly sliced into half-moons

Steps:

  • Make crust: Preheat oven to 350 degrees. Stir together graham cracker crumbs, sugar, and butter in a small bowl. Press evenly onto bottom of an 8-inch square glass baking dish. Bake until dry and golden brown, about 10 minutes. Let cool completely on a wire rack. (Leave oven on.)
  • Make filling: Put egg yolks and lime zest in the bowl of an electric mixer fitted with the whisk attachment. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until just combined.
  • Spread filling evenly over crust using a spatula. Bake, rotating dish halfway through, until filling is just set, about 10 minutes. Let cool completely on a wire rack. Refrigerate at least 4 hours (or overnight).
  • Cut into 2-by-2-inch bars. Put cream in the clean bowl of an electric mixer fitted with the clean whisk attachment. Mix on medium-high speed until stiff peaks form. Garnish bars with whipped cream and a slice of lime.

1/2 cup finely chopped walnuts

Steps:

  • Heat oven to 375*.
  • Combine flour, oats, sugar, baking powder and cinnamon.
  • Beat in butter just until moistened.
  • Set aside 2 cups.
  • Pat the rest into a greased 13x9 pan.
  • Bake for 15 minutes.
  • Toss apples with the 2 T flour.
  • Stir in preserves.
  • Spread over hot crust almost to edges.
  • Mix nuts and the 2 cups oat mixture.
  • Sprinkle over the apples.
  • Bake for another 30 minutes.

2 large eggs, room temperature
1 large egg white, room temperature
3 tablespoons Key lime juice
4-1/2 teaspoons grated Key lime zest
1 cup all-purpose flour
1/2 teaspoon plus 1/8 teaspoon salt, divided
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
FROSTING:
1/4 cup butter, softened
1/4 cup cream cheese, softened
4 cups confectioners' sugar
2 tablespoons 2% milk
1 teaspoon vanilla extract
Key lime slices, optional

Steps:

  • Preheat oven to 350°. Line a 9-in. square baking pan with parchment, letting ends extend up sides. Combine 1 cup cracker crumbs, 1/3 cup melted butter and 3 tablespoons brown sugar; press onto bottom of prepared pan. Bake 10 minutes. Cool on a wire rack., For blondie layer, in a large bowl, cream softened butter and 1 cup sugar until light and fluffy, 5-7 minutes. Beat in eggs, egg white, and lime juice and zest. In a small bowl, mix flour and 1/2 teaspoon salt; gradually add to creamed mixture, mixing well., Spread over crust. Bake until a toothpick inserted in center comes out clean, 25-30 minutes (do not overbake). Cool completely in pan on a wire rack., For streusel, combine the remaining 1/3 cup cracker crumbs, 2 tablespoons melted butter, 1/4 cup brown sugar, 1 tablespoon sugar and 1/8 teaspoon salt, along with the vanilla and cinnamon, until crumbly. Reserve 1/2 cup for topping., In a large bowl, combine the 5 frosting ingredients; beat until smooth. Stir in remaining 1/2 cup streusel. Spread over bars. Sprinkle with reserved topping. Refrigerate at least 4 hours before cutting. Lifting with the parchment, remove from pan. Cut into bars. Store in an airtight container in the refrigerator. If desired, garnish with sliced Key limes.

These unique lemon bars have a creamy filling made with condensed milk, sandwiched between a sweet, crumbly streusel. The recipe is from a Pampered Chef cookbook created especially for their stoneware collection. If you don't have a stoneware baking dish of the correct size, I'm sure a regular pan would be just fine. The bars might require less baking time, though.

2 teaspoons freshly grated lemon zest
1/2 cup fresh lemon juice
3/4 cup butter, softened
1 cup brown sugar, firmly packed
2 cups flour
1 1/2 cups rolled oats

Steps:

  • Combine filling ingredients until fully blended.
  • Blend butter and brown sugar together, add flour and oats, and mix with pastry blender until mixture resembles coarse crumbs.
  • Reserve 2 cups streusel and press remaining streusel onto bottom of sprayed 9-inch baking pan.
  • Spread filling over crust, sprinkle with reserved streusel, and pat streusel gently into filling.
  • Bake 30-35 minutes at 350° or until light golden brown, and cool completely before cutting into bars.
