BUCATINI WITH BACON SAUCE AND MEATBALLS

7 or 8 strips regular bacon
1 large onion, diced
1 clove garlic, minced
Salt and freshly ground black pepper
Two 28-ounce cans chunky ground tomatoes, such as Pastene Chunky Kitchen Ready
Oil, for greasing pan
2 pounds 80-percent lean ground beef
3/4 cup breadcrumbs (made from day old Italian bread)
3/4 cup freshly grated Parmigiano-Reggiano, plus more for serving
3/4 cup fresh parsley leaves, chopped
2 or 3 cloves garlic, minced (not too fine)
2 eggs
Salt and freshly ground black pepper
1 pound bucatini pasta

Steps:

  • For the bacon sauce: Cut the bacon into pieces. Using a big saute pan or skillet that has a cover, cook over medium heat until almost crispy. Don't drain the fat. Add the onions to the pan. When the onions are almost cooked and start to become translucent, add the garlic and salt and pepper to taste. Cook for 1 to 2 minutes, and then add tomatoes and bring to a boil. Reduce the heat, cover and simmer on low for about an hour to an hour and a half.
  • For the meatballs: Preheat the oven to 425 degrees F. Grease a baking sheet. In a large bowl, combine the beef, breadcrumbs, Parmigiano-Reggiano, parsley, garlic, eggs and some salt and pepper. Form into 1- to 1 1/2-inch meatballs and place on the prepared baking sheet. Bake for 5 minutes. Then turn the oven down to 350 degrees F and bake for an additional 10 minutes. Make sure to turn every few minutes to brown on all sides.
  • Cook the bucatini according to the package directions.
  • Serve the bacon sauce over the pasta with the meatballs on the side. Garnish with freshly grated Parmigiano-Reggiano.

One 28-ounce can Italian plum tomatoes, preferably San Marzano
1/2 teaspoon coarse sea salt or kosher salt, or to taste, plus 1 tablespoon for the pasta pot
4 cups 1/3-inch-thick onion slices (about 3/4 pound)
4 tablespoons extra-virgin olive oil, plus more for serving
4 plump garlic cloves, peeled and crushed
6 ounces guanciale, pancetta, or bacon, cut in 1/2-inch pieces
1/2 teaspoon peperoncino flakes
1 pound bucatini or perciatelli
1 cup grated Pecorino Romano cheese, plus more for passing
Recommended Equipment
A heavy-bottomed skillet or sauté pan, 13- or 14-inch diameter

Steps:

  • Drain the canned tomatoes; save all the juices. Cut each tomato in quarters lengthwise; slice the quarters in strips, 1/2 inch wide.
  • Start heating 6 quarts of water with 1 tablespoon of salt in a large pot, to cook the bucatini.
  • Put 1/2 cup water in the wide skillet, and set it over medium-high heat. Dump in the sliced onions; spread them out and turn them over in the pan as the water starts to boil. Cook the onions, turning occasionally, for several minutes, until they're softened and the water is nearly evaporated.
  • Pour the olive oil over the onions, toss in the crushed garlic cloves, and sprinkle with 1/4 teaspoon salt. Stir well to coat all the onion slices with oil; cook for a couple of minutes or more, until onions and garlic are sizzling.
  • Clear a space on one side of the skillet and scatter in the cured pork (guanciale, pancetta, or bacon). Heat and stir in the hot spot until they're rendering fat and sizzling, then stir in with the onions. Sprinkle the peperoncino in the pan, stir, and let everything cook for 4 or 5 minutes, until the onions and pork are caramelized and golden-adjust the heat so nothing burns.
  • Now spill all the sliced tomatoes and their juices into the skillet, and stir well. Rinse the tomato containers with a couple cups of "slosh" water, and stir that in too; season with salt lightly. Bring the sauce to a boil, stirring frequently, and then lower the heat to keep it simmering actively. Let the sauce cook and thicken for about 20 minutes, or until it has the consistency you like for pasta. (If you're pressed for time, concentrate the sauce at a boil, stirring frequently.)
  • When the tomatoes have been added and the sauce is simmering, you can start cooking the bucatini. (If you prefer, prepare the sauce ahead of time. Stop cooking when nearly thickened and let it cool. Return it to the simmer as your pasta cooks.)
  • With the water at a rolling boil, slide the bucatini into the pasta pot, letting the strands soften so they don't break, and fanning them out so they don't stick together. Stir well, cover the pot to bring the water back to the boil over high heat, then cook partially covered.
  • Stir the bucatini occasionally, and check doneness frequently. When the sauce has thickened, taste it and adjust seasoning-keep in mind that the Pecorino Romano will add salt.
  • When the bucatini are cooked through but still al dente, lift them from the cooking pot with tongs, drain for just a moment, then drop them right onto the simmering sauce. Toss together continuously, over moderate heat, for a couple of minutes, until the pasta is perfectly cooked and evenly coated with sauce. If the dish is dry, ladle in a bit of hot pasta water from the cooking pot. If the sauce is soupy, toss over higher heat to concentrate.
  • Turn off the heat, and toss in the grated cheese. Drizzle over it a final flourish of olive oil, and serve, either directly from the skillet or in a warm serving bowl, passing additional cheese at the table.

Big Beef Meatballs with Bucatini image

1 1/2 pounds ground sirloin
2 small to medium yellow onion, 1 grated and 1 finely chopped
6 cloves garlic, chopped, divided
1 egg
1/2 to 2/3 cup Italian bread crumbs, a couple of overflowing handfuls
1/2 cup grated Parmigiano-Reggiano, plus some to pass at table
1/4 teaspoon ground allspice or nutmeg
3 tablespoons capers, drained and chopped
2 tablespoons chopped sage leaves, 4 to 6 sprigs
A couple generous handfuls flat-leaf parsley, chopped, divided
Salt and pepper
3 tablespoons extra-virgin olive oil, plus some for drizzling
1 pound bucatini (thick, hollow spaghetti)
1/4 pound pancetta, chopped
12 baby portobello caps, (crimini mushrooms), chopped
1/2 cup dry red wine, eyeball it
1 cup, (8 ounces), beef stock
1 (28-ounce), can crushed tomatoes, Sam Marzano if available

Steps:

  • Preheat 400 degrees F. Place a large pot of water over high heat and bring to a boil.
  • Mix meat with the grated onion, 3 cloves chopped garlic, egg, bread crumbs, cheese, allspice, capers, sage, a handful of the chopped parsley, salt and pepper and a healthy drizzle of extra-virgin olive oil. Mix meat, score the meat into 4 sections and make 3 very large balls from each section. Arrange the 12 balls on a nonstick cookie sheet and roast 15 minutes until firm but not hard.
  • Drop bucatini in salted boiling water to cook off. Drain.
  • Add another tablespoon of extra-virgin olive oil to the skillet and the pancetta. Cook 3 to 4 minutes then add the remaining garlic and mushrooms to the pan and cook 5 minutes. Season the mushrooms with salt and pepper. Add remaining chopped onion and deglaze the pan with wine, cook off 1 minute, add in stock and whisk up remaining drippings. Stir in the tomatoes and season sauce with salt and pepper, if necessary. Stir in parsley. Simmer 5 minutes.
  • Toss pasta with half the sauce. Remove balls from oven and add to remaining sauce and turn to coat. Serve large balls, 3 per person, along side pasta. Spoon any remaining sauce over the pasta. Pass extra cheese at the tables.

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Add onions and reduce heat to medium-low. Cook until very soft and almost mushy, 7 to 10 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Add ketchup, molasses, brown sugar, cider vinegar, Worcestershire, Dijon, liquid smoke, hot sauce, and black pepper. Bring to a simmer, cover, and cook for 15 minutes.

4 to 6 cloves garlic, chopped
1 (28-ounce) can crushed tomatoes
2 tablespoons chopped flat-leaf parsley
Black pepper
Grated Parmigiano-Reggiano, Grana Padano or Romano, to pass at the table

Steps:

  • Bring a large pot of salted water to a boil and salt the water.
  • Heat a large deep over medium high heat. Add oil and pancetta. Cook pancetta 2 or 3 minutes then add onions and garlic and crushed red pepper flakes. Cook 7 or 8 minutes more, until onions are translucent. Add tomatoes and parsley. Season the sauce with salt and pepper. Simmer sauce over low heat until ready to serve.
  • Cook bucatini pasta to al dente or, with a bite to it. Drain pasta well. Do not rinse. Starchy pasta holds more sauce. Toss hot pasta with sauce and serve. Pass grated cheese at the table.

1 lb top round beef steak, 3/4 inch thick
1 tablespoon flour
1 large oven cooking bag (20"x 14")
1 medium onion, thinly sliced,separated into rings
4 crusty rolls, split
3/4 cup prepared chili sauce
1 tablespoon chili powder
1 tablespoon packed brown sugar
2 cloves garlic, crushed
1 -1 1/2 teaspoon hot pepper sauce

Steps:

  • Heat oven to 325.
  • Cut beef steak lengthwise in half and then crosswise into 1/4" strips; set aside.
  • Shake flour in oven bag.
  • (Leave excess flour in bag).
  • Place sauce ingredients and onion in bag.
  • Squeeze bag to mix well, blending in flour.
  • Place beef in bag, turning to coat.
  • Place bag in 13 x 9" pan, arranging ingredients in even layer.
  • Close bag with nylon tie.
  • Cut 6 1/2-inch slits in top.
  • Bake 45-50 minutes or until beef is tender.
  • Serve beef in rolls.
