BACON-WRAPPED MEATLOAF
This bacon wrapped meatloaf is made with a blend of pork and beef and cooked in the classic loaf fashion. It's very meaty and a great family dinner.

- Preheat the oven to 350 degrees F (175 degrees C) .
- Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
- Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

BACON WRAPPED MEATLOAVES
Steps:
- Preheat the oven to 400 degrees F.
- Put the bread in a large bowl and pour the milk over. Let soak a few minutes, then squeeze through your fingers to combine. Add the egg, onion, parsley, dry mustard, caraway and coriander and mix well. Add the ground beef, ground pork, 1 1/4 teaspoons salt and several grinds of pepper. Mix well with your hands to combine.
- In a small bowl, stir together the ketchup, steak sauce, mustard and brown sugar.
- Divide the mixture into 6 equal portions and form into balls. Wrap each ball with 1 strip of bacon. Place, without touching, on a rimmed baking sheet or in a large braiser. Brush with a light coating of the glaze. Bake until the fat from the bacon has rendered, about 20 minutes.
- Increase the oven temperature to 425 degrees F.
- Brush the meatloaves with the remaining glaze. Continue to bake until the meatloaves are cooked through, the bacon is crisp and the glaze is shiny, 15 to 20 minutes more. Remove to a platter or plates to serve, leaving the drippings behind. (Save drippings for the Cheesy Mashed Potatoes & Gravy.)
BACON WRAPPED MEATLOAF
The seasonings and vegetables give this meatloaf great flavor but the whole grain rolled oats gives this dish a nice denseness and maintains the juicyness. And let's face it, bacon wrapped anything is a delight to the senses.

- Preheat oven to 350 degrees.
- Put a nonstick skillet on medium heat for a few minutes. Add the oil, chopped vegetables and creole seasoning. Saute for a few minutes until just tender and onions are translucent. Remove from heat to let cool.
- Line a loaf pan with the bacon so the ends hang over the side of the pan.
- Combine all other ingredients in a large mixing bowl.
- When the vegetables are cool enough to handle put in the mixing bowl. Mix all ingredients until well incorporated but not over mixed.
- Put meat mixture in the loaf pan, tamping down to compact and spread to the whole pan. Take the bacon ends and lay on top of the meat mixture. Your loaf should be entirely wrapped with bacon at this point.
- Cover loosely with foil and place in oven for 1 hour.
- After 1 hour remove the foil, increase the temperature to 425 and bake for another 20-25 minutes.
- Remove from oven and let set for 10-15 minutes.
- Slice and serve.

BACON WRAPPED HEART ATTACK "MEATLOAF"
I have no words to describe this... Just try it for your husband and he will think you are the coolest thing since sliced bread... Or bacon. Feel free to add cheese and spinach and whatever else in between the bacon and meatloaf layers.

- Cut your French bread loaf in half (depending on its size of course -- You want it to be about 6 inches long). Hollow out about half of the middle, as far as you can (see my picture -- You want it to have a layer of bread still all the way around so don't overdo it). Stuff the smoked sausage into it, trimming it to be even with the bread. Repeat with second half of bread.
- Mix ground beef thru basil. Take half and flatten into a square onto a cookie sheet. Put the bread/sausage on top and wrap the meatloaf mixture around it completely.
- On a plate or cutting board take 10 strips of bacon and weave them together. Wrap them around the meatloaf -- sometimes they won't reach all the way and that's fine, just keep the pretty woven part on top and hide the ends on the bottom. Repeat with other 10 strips and loaf.
- Cook on cookie sheet at 375 for 45 minutes (or till done).

BACON-WRAPPED MEATLOAF WITH BROWN SUGAR-KETCHUP GLAZE

- For the glaze: Mix all ingredients in a small bowl; set aside.
- For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
- Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
- Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
- Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
- Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve
BACON WRAPPED SAUSAGE MEATLOAF
A different way of using sausages and a recipe from the Good Food Magazine from 2000, we love it and I made this many times. Serve sliced with some mustard, chutney or roasted onion gravy on the side. Any left overs are good on sandwiches. You can put it together up to a day ahead, leaf in the fridge until you are ready to cook it. It can be cooked without the tin, on a baking sheet and can easily be doubled. Adjust the seasoning to the type of sausagemeat you bought.

- 1 small (500 ml) loaf tin (optional, see intro).
- Preheat oven to 350°F.
- Heat oil in a frying pan, fry onion for about 8 minutes until golden brown, remove from the heat.
- With a sharp knife cut open the sausages, remove the meat from the casings and put in a bowl.
- Add the onion, tomato puree, mustard, breadcrumbs and egg.
- Add seasoning if needed, depending on the sausage meat you have chosen.
- Using your hands mix together well and shape into a large sausage, the length of the loaf tin.
- Wrap the bacon rashes around the sausage and put it in the loaf tin.
- Bake for 50 to 60 minutes, the bacon should be crisp and the meat cooked through.
- Let rest in the tin for 5 minutes, turn out, slice and serve!

- Mix together the beef, tomatoes, stuffing onion, carrot, garlic, basil, egg, Worcestershire sauce, salt and pepper in a bowl.
- Knead with hands until well mixed.
- Place bacon strips horizontally in a loaf pan.
- The ends of the bacon should hang over the sides.
- Put the meat mixture in the pan, shaping it like a loaf, then fold over the ends of the bacon.
- Turn the loaf pan upside down over a roasting pan.
- The meat loaf should slide out easily, with bacon strips intact.

- Preheat oven to 350.
- Combine milk, eggs, and bread in a bowl and mash with your fingers.
- Add remaining ingrediets (except bacon) use your hands and mix only until it is all combined.
- Lightly spray a cooking sheet with cooking spray, and form a loaf in the center of the pan.
- Wrap bacon slices around the bacon, tucking ends underneath as you go.
- Bake for an hour and 15 minutes.

- Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
- With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
- Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
- Serve with mashed potatoes. Yummy!
