CHEESE ENCHILADAS WITH RED SAUCE



Cheese Enchiladas with Red Sauce image

Cheese Enchiladas are a family-friendly dinner recipe that's perfect for busy weeknights. You'll never buy canned again after tasting my easy homemade red enchilada sauce!

Number Of Ingredients 12

14-16 white corn tortillas (I like Mission GF Super Soft Tortillas)
16oz shredded Mexican cheese blend
3 Tablespoons vegetable oil
2 Tablespoons gluten free flour OR all purpose flour (dish will not be GF if using AP flour)
3 Tablespoons chili powder (see notes)
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
scant 1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1/4 cup tomato paste
2 cups chicken broth

Steps:

  • Preheat oven to 350 degrees then spray a 9x13" baking dish, or two smaller casserole dishes, with nonstick spray and set aside.
  • For the Red Enchilada Sauce: Heat oil in a saucepan over medium heat then add flour and whisk constantly for 1 minute. Add seasonings - chili powder through cumin - then whisk until the spices are toasted and very fragrant, 1-2 minutes. Add tomato paste then whisk until combined, and then slowly stream in chicken broth while whisking to create a smooth sauce. Turn heat up to medium-high then simmer until sauce has thickened, 3-4 minutes, stirring often. Cool slightly - can be made up to several days ahead of time. Warm before using.
  • Assembly: Spread 1/2 cup enchilada sauce into the bottom of the baking dish then reserve 1 cup shredded cheese and set aside. Place 1 tortilla on a plate or cutting board then add 1/4 cup shredded cheese into the center and roll snugly. Place seam-side down into the baking dish then continue until the dish has been filled.
  • Spoon enchilada sauce over the tops of the tortillas ensuring they are completely covered - uncovered spots will come out tough and hard - then sprinkle reserved cheese on top.
  • Cover baking dish with nonstick sprayed foil then bake for 20-30 minutes, or until the cheese has melted and sauce is hot and bubbly. Let enchiladas rest for 5 minutes then serve.

My family loves this delicious, easy, budget-friendly Mexican enchilada casserole with lots of vegetables. The Herdez® Red Guajillo Chile Mexican Cooking Sauce adds a deep, earthy robust flavor to this family favorite.

1 pound extra-lean ground beef
¼ teaspoon ground black pepper
3 tablespoons taco seasoning mix
1 small onion, chopped
½ green bell pepper, chopped
½ red bell pepper, chopped
¼ cup shredded carrots
1 (12 ounce) bottle Mexican guajillo red chile cooking sauce (such as Herdez®)
2 tablespoons white sugar
1 (15 ounce) can reduced-sodium black beans, rinsed and drained
6 (6 inch) corn tortillas
2 cups shredded reduced-fat Cheddar cheese (such as Cabot®)

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet, sprinkling in pepper and taco seasoning, until browned and crumbly, 5 to 7 minutes. Add onion, bell peppers, and carrots; saute for 5 minutes.
  • Pour guajillo sauce into a large measuring cup and stir in sugar. Pour sauce over the beef mixture; stir in black beans.
  • Place 3 tortillas on the bottom of a casserole dish. Add half the meat mixture on top. Sprinkle 1/2 of the shredded cheese on top. Repeat the layers, ending with cheese on top.
  • Bake in the preheated oven until cheese is melted and golden brown, about 25 minutes.

A friend of mine gave me this recipe for ground beef enchiladas and it is delicious!

2 pounds lean ground beef
1 large chopped onion
⅛ teaspoon garlic salt
12 (8 inch) flour tortillas
2 teaspoons vegetable oil
8 ounces shredded Colby cheese
2 (19 ounce) cans enchilada sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a heavy saucepan or skillet, brown the ground beef and onions. Season the ground beef mixture with garlic salt and set aside.
  • In a skillet, fry the tortillas in vegetable oil. Spoon some meat mixture and cheese into the center of each tortilla, roll them up and arrange them in a 9x13 inch baking dish or oblong pan. Pour the enchilada sauce over the rolled enchiladas and top with any remaining meat or cheese.
  • Bake in the preheated 350 degrees F (175 degrees C) for 20 to 30 minutes.

  • For the Roasted Poblano Salsa: Preheat oven to 425 degrees then line a baking sheet with foil. Add tomatoes, pepper, and onion to the baking sheet then drizzle lightly with extra virgin olive oil and rub to coat. Place head of garlic onto a smaller piece of foil then drizzle the revealed cloves generously with extra virgin olive oil and close the piece of foil up and place on baking sheet. Roast for 20 minutes, flipping everything but the garlic halfway through.
  • Once cool enough to handle, add tomatoes and onions, 7 roasted garlic cloves (squeeze the head to remove the cloves,) cilantro, juice of 1/2 lime, 3 teaspoons salt, and 1 teaspoon pepper to a food processor. Remove stem from poblano pepper and any excess seeds then add to food processor. Process salsa until smooth then taste and add more lime juice, salt, and pepper if desired. Set aside then turn oven down to 350 degrees. (Salsa can be made up to 3 days ahead of time.)
  • Meanwhile, heat extra virgin olive oil in a large skillet over medium high heat then add chicken and onions, season with garlic salt and pepper, then saute until chicken is cooked through and set aside.
  • Spray a baking dish well with nonstick spray then spread a couple Tablespoons Roasted Poblano Salsa into the bottom. Wrap half the tortillas in a damp paper towel then microwave for 30 seconds. Add a scoop of cooked chicken and onions across the center of each tortilla then top with a spoonful of salsa and about 1 Tablespoon shredded cheese. Roll then place seam side down into prepared baking dish, and then repeat with remaining ingredients. Spoon enough salsa on top to generously cover the enchiladas (you will have extra,) then top with remaining cheese.

  • Trim large pieces of excess fat from roast then cut into 6-8 big hunks. Add onion, garlic, and beef broth into the bottom of a 5.5 or 6 quart crock pot then nestle beef into mixture. Sprinkle in chili powder, cumin, garlic salt, and pepper and then place the lid on top and cook on low for 6-7 hours, or until beef shreds easily. Remove beef then shred and place into a large bowl with enough cooking liquid to make it juicy, but not so much that it's dripping. Stir in green chiles. Discard remaining cooking liquid.
  • Preheat oven to 350 degrees then spray a 9x13" pan or two smaller pans with nonstick spray, and then spread a couple Tablespoons of enchilada sauce in the bottom. Divide shredded cheese in half, reserving half for topping the enchiladas.
  • Wrap half the tortillas in a damp paper towel then microwave for 30 seconds. Spread about 1/4 cup (just eyeball it) shredded beef across the center of each tortilla then top with 1 Tablespoon shredded cheese and roll. Place seam side down in the prepared pan then repeat with remaining ingredients. Pour remaining enchilada sauce on top, then top with remaining cheese.
  • Generously spray a large piece of foil with nonstick spray then place sprayed side down on the pan. Bake for 20 minutes then remove foil and bake for 5-10 more minutes or until cheese is melted and sauce is bubbly. Let rest for 5 minutes before serving with toppings.
