BEEF AND BOWS ALFREDO

Beef and Bows Alfredo image

Another little grocery store recipe card that I keep losing in the maelstrom. I haven't made this yet, but it sounds really good to me. Adapted from certifiedangusbeef.com

Provided by Muffin Goddess

Categories     Steak

Time 30m

Yield 6 serving(s)

Number Of Ingredients 8

1 lb blade steaks or 1 lb top sirloin steak
1/2 cup red bell peppers or 1/2 cup yellow bell pepper, chopped
8 ounces sliced fresh mushrooms
10 ounces hot cooked bow tie pasta (approx. 4 cups)
2 (8 ounce) packages frozen asparagus cuts, cooked
2 (10 ounce) packages prepared low-fat alfredo sauce (I'm not clear on this one, maybe just use a jar of alfredo sauce?)
parmesan cheese (optional)
fresh ground pepper (optional)

Steps:

  • Spray a large skillet with cooking spray. Sauté steak over medium-high heat for about 3-5 minutes per side, or until it is cooked to your liking (keeping in mind that steak will continue to cook slightly once removed from the heat). Keeping skillet hot, transfer steak to a cutting board and allow to rest for about 10 minutes (this allows the juices to settle into the meat so they are not lost in cutting). Cut steak across the grain into thin slices.
  • Add peppers and mushrooms to hot skillet. Sauté until tender (3-5 minutes).
  • Add slices steak, cooked pasta, asparagus and alfredo sauce to cooked peppers and mushrooms. Cook until evenly heated (approx. 2-3 minutes), stirring constantly, taking care not to boil it.
  • Season with pepper. Top each serving with parmesan (if using).

Very rich fettuccine Alfredo with steak. Super good, if slightly fattening.

Provided by Elissa

Categories     Main Dish Recipes     Pasta

Time 5h30m

Yield 6

Number Of Ingredients 15

1 ½ cups 2% milk
1 ½ cups heavy cream
½ cup grated Parmesan cheese
½ cup grated Romano cheese
6 jumbo egg yolks
salt and ground black pepper to taste
1 ½ cups Italian-style salad dressing
1 tablespoon fresh rosemary
1 tablespoon lemon juice
2 pounds flat iron steak, cut into 3-inch squares
4 cups chopped fresh spinach
4 tablespoons crumbled Gorgonzola cheese, divided
1 pound dry fettuccine pasta
2 tablespoons balsamic glaze
chopped fresh parsley, or as needed

Steps:

  • Heat milk and cream in a saucepan over medium heat until simmering, about 5 minutes. Slowly whip in Parmesan and Romano cheeses and remove from heat. Whisk egg yolks together in a heat-proof bowl and slowly add about 1/4 cup of the hot sauce to temper eggs. Whisk egg mixture into the saucepan slowly. Season with salt and pepper. Allow Alfredo sauce to cool and refrigerate until needed.
  • Combine salad dressing, rosemary, and lemon juice in a large bowl. Add steak and stir to coat. Marinate in the refrigerator for 4 hours.
  • When ready to prepare the meal, preheat an outdoor grill for medium heat and lightly oil the grate.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
  • Heat 2 cups refrigerated Alfredo sauce in a saucepan over medium heat. Add spinach and 2 tablespoons Gorgonzola cheese.
  • Remove steak from marinade and cook on the preheated grill to desired doneness, 5 to 10 minutes.
  • Pour hot Alfredo sauce into a large serving bowl. Add cooked pasta and mix to combine. Sprinkle remaining Gorgonzola cheese on top. Add grilled steak and drizzle the meat with balsamic glaze. Garnish with parsley.

CUBAN BATIDO

Cuban Batido image

Found this in one of those little grocery store magazines and it looks so yummy I want to save it here to try when those warm, lazy summer days arrive. The magazine states "A batido is a popular Latin American drink made with water, milk, fruit and ice. It is similar in testure to a smoothie and literally means "beaten" in Portuguese" Sound good to me. Update: After seeing Loof's wonderful picture I finally got around to making this myself and so glad I did. Love that tropical flavor.
