Polenta Bites with Wild Mushrooms and Fontina image

Store-bought tubes of polenta are the ultimate appetizer shortcut: just slice and toast in the oven, top with sautéed wild mushrooms and a sprinkling of grated Fontina, then bake again until melty and irresistible. A pinch of crushed red pepper flakes and a splash of Sherry vinegar punch up the flavor of the mushrooms.

4 pounds prepared polenta, sliced into 1/2-inch-thick rounds (about 30 rounds)
2 tablespoons extra-virgin olive oil, plus more for brushing
1/4 cup (1/2 stick) unsalted butter
2 pounds assorted wild mushrooms (such as oyster, crimini, and/or stemmed shiitake), cut into thick slices
2 shallots, thinly sliced
1/4 cup Sherry vinegar
1 3/4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
1/2 cup chopped parsley leaves
4 ounces Fontina cheese, coarsely grated (about 1 cup)

Steps:

  • Preheat oven to 450°F. Brush both sides of polenta slices very lightly with oil and arrange on 2 rimmed baking sheets. Roast polenta until lightly golden brown and warmed through, about 25 minutes.
  • Meanwhile, melt butter with remaining 2 Tbsp. oil in large, deep skillet over medium-high heat. Add mushrooms and cook, stirring often, until tender and browned, about 12 minutes. Add shallots, vinegar, salt, black pepper, and red pepper and cook, stirring, until tender, about 5 minutes. Stir in parsley.
  • Divide mushroom mixture between baking sheets with polenta. Top with cheese. Continue to roast until cheese is melted, about 5 minutes.
  • Arrange polenta bites on a platter and serve.

  • Mushroom mixture can be made 1 day ahead. Transfer to an airtight container and chill.

1 1/4 teaspoons kosher salt
1 1/2 cups yellow polenta meal
2 tablespoons butter
1/4 pound each of 4 different wild mushrooms (1 pound total)
2 tablespoons unsalted butter
2 tablespoons olive oil
4 tablespoons finely minced shallots
Kosher salt and freshly ground pepper to taste
1 tablespoon finely minced parsley

Steps:

  • To make the polenta, place 5 cups of water and the salt in a large saucepan and bring to a boil. Whisk in the polenta very slowly, whisking constantly to prevent lumps. Switch to a wooden spoon and lower the heat so that the polenta is just sputtering occasionally. Cook, stirring constantly, until the polenta is very thick and pulls away from the sides of the pan, 20 to 25 minutes. Stir in the butter, remove from heat, cover and set in a warm place while you cook the mushrooms.
  • To make the mushrooms, clean each variety and remove the stem if it is fibrous. Slice any that are very large, but try to maintain their distinctive shapes. Place 2 small saute pans over medium heat and add 1 1/2 teaspoons butter and 1 1/2 teaspoons oil to each. When the butter is melted, add one variety of mushroom and 1 tablespoon of shallots to each. Season with salt and pepper and cook, stirring frequently, until the mushrooms have released all their liquid and are lightly browned, 5 to 8 minutes depending on variety.
  • Transfer the cooked mushrooms to a warmed serving platter, placing them in piles around the edge of the platter. Cover with foil. Wipe out the skillets, add more butter and oil to each, return them to the heat and cook the remaining mushrooms in the same manner.
  • Place a generous amount of the polenta in the middle of the platter and garnish with the parsley. Serve immediately.

1 cup whole milk
1/2 teaspoon chopped garlic
2 tablespoons butter, salted
3/4 cup cornmeal (regular)
2 tablespoons chopped sun-dried tomato (in oil, drained)
2 tablespoons grated Parmesan
1 tablespoon chopped fresh basil
Wild Mushroom Saute, recipe follows
Locatelli Fondue, recipe follows
Chopped chives, for garnish
White truffle, sliced thin, for garnish
2 tablespoons butter
1 to 2 shallots, chopped finely
2 garlic cloves, chopped finely
8 medium button mushrooms, sliced thinly
5 medium shiitake mushrooms, sliced thinly
Handful small oyster mushrooms, sliced thinly
Salt and pepper, to taste
1 shallot, chopped finely
1 tablespoon butter
1/4 cup white wine (Chardonnay or Pinot Grigio)
1/2 cup chicken broth
1/2 cup heavy cream
3 tablespoons roux (flour-butter mixture)
1/4 cup grated Locatelli or other Pecorino Romano
Salt and freshly ground black pepper, to taste
White truffle oil, optional

Steps:

  • Bring broth, milk, garlic, and butter to a boil in a thick bottomed pot. Reduce heat to a simmer and whisk in cornmeal, cooking while stirring with wooden spoon for about ten minutes. As it thickens reduce heat and add sun-dried tomatoes and Parmesan. Remove from heat and add basil. Quickly spread on a cookie sheet to 1/3-inch thickness and refrigerate. Polenta should remain in refrigeration at least 1 hour, or as long as 3 days prior to final preparation. (Once cool, it should be covered for safe storage.) Preheat oven to 400 degrees F. Remove polenta from the refrigerator and cut out rounds with cookie cutter about 1 1/2-inches. Saute polenta rounds in nonstick pan until brown on both sides. Remove from heat. Lay polenta rounds on cookie sheet and top with Wild Mushroom Saute. Bake for 5 minutes, (heat fondue in saucepot or microwave and stir in truffle oil if desired) Drizzle with Locatelli Fondue. Garnish with chives and white truffle slice.
  • Heat saute pan and add butter, shallot and garlic, cook 1 minute and add mushrooms, salt and pepper. Continue cooking about 2 minutes, remove from heat, and allow to cool. White mushrooms can be used if others are not available.
  • Saute shallot in butter in heavy bottomed pot for 1 minute, add white wine, and reduce by half. Add chicken broth and cream and simmer on medium heat for 5 minutes, (too high a heat, will result in a boil over mess!!!) Add roux, whisking constantly so not to lump. As sauce thickens reduce heat and simmer 5 more minutes. Remove sauce from heat and stir in the Locatelli until melted and smooth. Season with salt and pepper, to taste. Fold in white truffle oil, if desired. Put Fondue in squeeze bottle or resealable plastic bag with corner cut off, for easy drizzling.

  • Heat 2 tablespoons butter in a skillet over medium-high heat. Add 8 ounces sliced cremini mushrooms, season with salt and brown, 5 to 7 minutes. Add 1 teaspoon each butter and fresh thyme and 1 minced shallot; cook 30 seconds. Meanwhile, simmer 3 cups mushroom broth and a pinch of salt in a saucepan. Whisk in 3/4 cup quick-cooking polenta; stir until thickened, 5 minutes. Stir in 2 tablespoons grated Parmesan; season with salt and pepper. Top with the mushrooms, chopped parsley, more Parmesan and pepper.

ROASTED WILD MUSHROOMS IN RED-WINE REDUCTION

3 lb fresh porcini (also known as cèpes) or 3 lb other exotic mushrooms and 2 oz large dried porcini slices
2 medium onions, cut into 1/2-inch-thick wedges
6 garlic cloves, minced
3 tablespoons chopped fresh thyme
1/4 cup dry Marsala wine
4 tablespoons extra-virgin olive oil
1 teaspoon salt
1 1/2 lbs. assorted pearl onions, blanched and peeled
2 cups red-wine reduction

Steps:

  • If using dried porcini, soak in boiling-hot water to cover until soft, about 45 minutes. Lift out porcini, squeezing out excess liquid, and discard soaking liquid. Rinse in a sieve to remove any grit and pat dry. Halve larger slices.
  • Preheat oven to 375°F.
  • If using fresh porcini, halve or quarter larger ones, keeping smaller ones whole, and transfer all to a baking pan. Toss all mushrooms with onion wedges, garlic, thyme, wine, 3 tablespoons oil, salt, and pepper to taste. Toss pearl onions with remaining tablespoon oil and salt and pepper to taste in a shallow baking pan.
  • Roast mushroom mixture, covered with foil, in upper third of oven and pearl onions, uncovered, in lower third, stirring occasionally and switching position of pans halfway through roasting, until pearl onions are tender and golden brown, about 45 minutes total. Remove pearl onions from oven.
  • Uncover mushroom mixture and stir in 1/2 cup red-wine reduction. Continue roasting mixture in middle of oven, uncovered, stirring occasionally, until vegetables are tender and liquid is reduced by half, about 30 minutes. Stir in pearl onions and roast until hot, about 10 minutes more. Heat remaining red-wine reduction.
  • Season mushrooms and onions with salt and pepper. Drizzle with some red-wine reduction and serve the rest on the side.

Mushroom Ragout:
3 tablespoons butter, divided
4 tablespoons extra-virgin olive oil, divided
1 1/2 pounds assorted wild mushrooms (such as oyster, crimini, and stemmed shiitake), thickly sliced
1/4 cup finely chopped shallots
2 teaspoons balsamic vinegar
1/4 cup low-salt chicken broth
1/3 cup crème fraîche or whipping cream
1/3 cup chopped fresh parsley, divided
1/3 cup (packed) coarsely grated Comté cheese

Steps:

  • For polenta:
  • Generously butter 13x9x1- inch baking sheet. Bring milk, broth, and bay leaf to simmer in heavy medium saucepan. Remove saucepan from heat; cover and let steep 20 minutes to allow flavors to develop. Discard bay leaf. Bring liquid to boil. Gradually add polenta, whisking constantly until smooth. Reduce heat to medium-low and cook until polenta is very thick, stirring frequently, about 10 minutes. Stir in Comté cheese and butter. Season to taste with salt and pepper. Transfer polenta to prepared 13x9x1-inch baking sheet. Using wet hands, press polenta evenly over sheet to edges. Chill until firm, at least 3 hours. Cut polenta into 20 squares. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • For mushroom ragout:
  • Melt 2 tablespoons butter with 2 tablespoons oil in large deep skillet over medium-high heat. Add all mushrooms and sauté until tender and browned, stirring often, about 10 minutes. Add shallots and balsamic vinegar; sauté until tender, about 2 minutes. Season lightly to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • Rewarm mushrooms in large skillet over medium-high heat until heated through. Add broth and simmer 1 minute. Stir in crème fraîche and half of parsley. Season mushroom ragout to taste with salt and pepper. Remove from heat; cover to keep warm.
  • Meanwhile, preheat oven to 300°F. Melt remaining 1 tablespoon butter with remaining 2 tablespoons olive oil in large nonstick skillet over medium-high heat. Working in batches, add polenta squares to skillet and cook until browned, about 2 1/2 minutes per side. Transfer to rimmed baking sheet and keep warm in oven while cooking remaining polenta squares.
  • Arrange 2 polenta squares on each plate. Top each with warm mushroom ragout; sprinkle with grated Comté cheese and remaining parsley and serve.

  • Comté is a semi-firm, Gruyère-style cow's-milk cheese made primarily in France's Franche-Comté region. It adds great flavor to this recipe and would also be delicious on a cheese platter. Comté is available at some supermarkets, cheese shops, and specialty foods stores.
  • *Polenta can be found at some supermarkets, as well as at natural foods stores and Italian markets. If polenta is unavailable, substitute an equal amount of regular yellow cornmeal and cook it about half as long.

1 ounce dried porcini mushrooms
1 tablespoon extra-virgin olive oil
1 small shallot, peeled and finely chopped
2 garlic cloves, minced
1/2 cup dry white wine
1 bay leaf
1 1/2 cups vegetable stock
1 tablespoon butter, room temperature
2 teaspoons all-purpose flour
Salt
freshly ground pepper
For the mushrooms:
1 1/2 pounds mixed wild mushrooms (such as maitake, chanterelle, shiitake); large mushrooms torn into smaller pieces
1 tablespoon fresh thyme leaves
1/4 cup extra-virgin olive oil
Salt
freshly ground black pepper
For the polenta:
1/2 teaspoon salt
2 cups polenta
1/2 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmigiano-Reggiano
2 tablespoons unsalted butter

Steps:

  • Prep the porcini:
  • In a small bowl, combine porcini mushrooms and 1 cup warm water. Let stand until mushrooms soften, about 30 minutes. Remove porcini mushrooms from the liquid, strain and reserve liquid. Finely chop the mushrooms and set aside.
  • Roast the mushrooms:
  • While the porcini are soaking, set racks in the upper and lower thirds of the oven and preheat oven to 450°F. On two rimmed baking sheets, gently toss mushrooms with thyme and oil; season with salt and pepper. Roast mushrooms until edges are browned, about 10 minutes. Set aside until ready to use.
  • Heat oil in a large saucepan over medium-high heat. Sauté shallot until softened, about 5 minutes. Add garlic, and sauté for 2 minutes more. Add white wine and bay leaf and increase heat; boil until most liquid evaporates, about 7 minutes. Add reserved chopped porcini mushrooms, vegetable stock, and reserved mushroom liquid. Boil until liquid is reduced to 1 cup, 15 to 20 minutes. Remove bay leaf.
  • In a small bowl, stir butter and flour together until it forms a paste. Whisk the butter mixture into the mushroom sauce. Simmer until sauce thickens, about 1 minute. Season with salt and pepper.
  • Make the polenta:
  • In a large saucepan, bring 6 cups water and the salt to a boil. Reduce the heat to medium-low and whisk in the polenta, whisking constantly to make sure there are no lumps. Cook, stirring occasionally with a wooden spoon, until thickened and cooked through, 15 to 20 minutes. Remove from heat; stir in the cheese,and butter. Season with salt and pepper. Serve polenta immediately topped with porcini sauce and roasted mushrooms.

  • Heat the stock in a medium pot and bring to a boil. Once it is boiling, turn the heat down to low and gradually whisk in the cornmeal to the hot liquid while whisking vigorously to avoid any clumping.
  • Bring to a simmer, cover and let simmer gently on low heat for 10 minutes, then give a good stir. (Start the mushrooms below!) Cover again, simmer 10 more minutes, give another good stir. If using fine cornmeal, this should be close to done, if using a coarse polenta, you may need to cook a tad longer until grains fully open.
  • When the polenta is tender and cooked through, add your choice of olive oil, or butter, optional cheese, white pepper, stirring until fully incorporated. TASTE and adjust salt. Turn off heat, cover until ready to serve.
  • While the polenta is simmering, saute the mushrooms. Heat oil over med heat, add shallots, garlic and mushrooms, cook 6-7 minutes until mushrooms release their liquid, lowering heat if necessary. Season with salt and pepper. Let the liquid cook off and allow the mushrooms to brown a little. At this point, you could splash with a little wine, letting this cook-off too- optional. Add the sage leaves right at the end and cook for one minute. Taste and add more salt and pepper, if needed.
