POLISH DILL POTATOES
These dill potatoes are the perfect way to shake up your boring side dish!

Steps:
- Peel the potatoes, place in a large pot and cover with cold water
- Add a pinch of salt to the water and bring to a boil
- Boil the potatoes until fork tender and drain
- Add back into the pot and toss with ghee, chopped dill and 1-2 tsp of salt (you want a good amount of salt because you are only able to season the outside of the potato)
GARLIC DILL NEW POTATOES
Potatoes are tossed in a garlicky dill butter before being served in this fantastic side dish.

Steps:
- Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
- In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

Steps:
- To caramelize the onions, heat the olive oil with the butter in a medium skillet until butter just begins to foam. Add onions and cook over medium heat until they start to brown, stirring frequently, about 10 minutes.
- Reduce heat to low and continue cooking, stirring occasionally, about 20 minutes longer until onions turn a golden brown. Watch carefully toward the end of cooking time. Sprinkle with sugar, if desired, and cook another minute or two, tossing to incorporate. Set aside.
- In a large pot of salted water, boil potatoes until tender, 10 to 15 minutes. Drain well, return to pot, and set over low heat for a few minutes to evaporate any remaining water. Remove from heat.
- Add caramelized onions, salt, and dill. Toss until all ingredients are well incorporated.
- Transfer potatoes to a serving dish and serve warm.

Steps:
- Preheat oven to 400 degrees.
- Grease a baking dish with nonstick cooking spray and place sliced potatoes in bottom.
- Saute chopped onions in butter.
- Pour over potatoes.
- Beat together eggs, sour cream, and milk.
- Mix in salt and pepper.
- Pour sour cream mixture over top of potatoes.
- In small mixing bowl, mix together bread crumbs and grated Parmesan cheese.
- Sprinkle mixture over top of potatoes.
- Bake 20 minutes or until top is browned.

My Baba made this and it has been passed down. I still make it all of the time. It is all my all time favorite way to have small new potatoes

Steps:
- Boil potatoes until done. Drain and set aside.
- Chop green onions and add to a frying pan with 1/4 stick of butter. Cook on medium heat until onions are soft. Add the rest of the butter and stir until melted.
- Add container of sour cream, dill and salt and pepper to taste. Cook until sour cream is warm.
- Place potatoes in pan with sour cream mixture, stirring occasionally until potatoes are heated through.
