Our traditional bread sauce recipe is the perfect creamy accompaniment to your roast dinner. This easy bread sauce is sure to be a Christmas favourite

Number Of Ingredients 11

600ml milk
50g butter
1 onion , chopped
6 cloves
6 peppercorns
2 garlic cloves
1 bay leaf
3 thyme sprigs
100g white breadcrumbs
4 tbsp single cream or mascarpone
pinch nutmeg , freshly grated

Steps:

  • Simmer the milk, butter, onion, cloves, peppercorns, garlic and herbs in a pan for 20 mins. Strain and return the liquid to the pan. Add the breadcrumbs and simmer for 3-4 mins. Stir in the cream or mascarpone. Add nutmeg, season and serve. Can be made up to 3 days in advance and heated up on the hob or microwave on Medium for 3 mins.

EXTRA CREAMY BREAD SAUCE



Extra creamy bread sauce image

Go for a stale baguette or sourdough over a sliced white loaf to make this creamy bread sauce. It makes an ideal accompaniment at Christmas or a Sunday lunch

500ml whole milk
50g butter
1 onion , chopped
6 cloves
1 star anise
1 bay leaf
3 thyme sprigs
100g stale crustless white bread , made into rough breadcrumbs
4 tbsp clotted cream
pinch nutmeg , freshly grated

Steps:

  • Simmer the milk, butter, onion, cloves, star anise and herbs in a pan for 20 mins. Can be done the day before and left to infuse in the fridge. Strain the mixture and return the liquid to the pan. Place back on the heat and scatter in the breadcrumbs.
  • Simmer and stir for 3-4 mins until you have a thick sauce. Stir in the clotted cream and nutmeg, season generously and serve. Can be made up to three days ahead; reheat on the hob or in the microwave on medium for three mins.

Every Christmas lunch needs a big bowl of bread sauce on the table

1 onion studded with 6 cloves
300ml milk
75ml double cream
6 black peppercorns
2 bay leaves
100g fresh white breadcrumbs
1 tbsp butter
freshly grated nutmeg , to season

Steps:

  • Pop the onion in a pan with the milk, cream, peppercorns and bay leaves. Bring to a simmer, then turn off the heat and leave to infuse for 30 mins. Pour the milk through a sieve into a jug, then return it to a cleaned pan.
  • Stir in the breadcrumbs, bring back to the simmer and cook for a few mins (add a splash more milk if you like your sauce thinner). Stir in the butter, season with salt, white pepper and nutmeg, then pour into a warm serving jug or bowl. Or leave to cool and chill or freeze for up to 1 month until needed.

SOURDOUGH BREAD SAUCE

Try a sourdough twist on classic bread sauce. Serve with your Sunday roast or to impress friends and family at Christmas. Can be made up to two days ahead

80g sourdough bread (around 2 slices)
2 large shallots , peeled and root cut off
12 cloves
2 fresh bay leaves
3 black peppercorns
500ml whole milk
1 tsp dark rye flour or wholemeal flour
25g butter
½ tsp freshly grated nutmeg
50ml double cream
50ml buttermilk
thyme leaves (optional)

Steps:

  • Blitz the bread to crumbs in a food processor and stud the shallots with the cloves. Put the shallots in a saucepan with the bay leaves, peppercorns and milk. Heat gently for 20 mins, then pour the mixture through a sieve into a clean pan and discard the aromatics.
  • Heat the infused milk until simmering, then add the flour, breadcrumbs, butter and nutmeg. Add the cream and buttermilk, and season well. Cook for 6-8 mins more or until the sauce has thickened. Can be made up to two days ahead or frozen for two months. Reheat gently on the hob before serving, and sprinkle over the thyme leaves, if using.

A Christmas dinner staple. Made with freshly grated nutmeg and lashings of double cream, this is the ultimate bread sauce to pair with your roast dinner

1 large onion
12 cloves
2 fresh bay leaves
4 black peppercorns
500ml whole milk
1 tsp wholemeal flour
50g fresh breadcrumbs
25g butter
1 tsp freshly grated nutmeg
100ml double cream

Steps:

  • Peel the onion and remove the root. Make 12 holes in the onion using a cocktail stick, and push the cloves into the holes.
  • Put the onion in a medium saucepan with the bay leaves, peppercorns and milk. Heat gently for 20 mins until the onion is soft, then pour the milk through a sieve into a clean pan and discard the bay, onion and peppercorns.
  • Heat the infused milk until just simmering, then add the flour, breadcrumbs, butter and nutmeg. Cook for 5 mins more until the sauce has thickened, then add the cream and season well. Can be made up to two days ahead. Reheat gently on the hob before serving.

140g crust-less bread , torn into chunks
1 onion , chopped
1 bay leaf , plus extra to serve
½ tsp ground mace , plus extra to serve
grating fresh nutmeg
500ml milk

Steps:

  • Put all of the ingredients into a small saucepan. Cover and simmer for 15 mins, then whizz to a smooth or chunky sauce - whichever is your favourite. Top with extra bay leaves or more nutmeg to serve. Can be made 3-4 hrs ahead, then reheated in a microwave to serve.
