CHEF JOHN'S STRAWBERRY ICE CREAM
Many people consider this type of strawberry ice cream recipe a 'hack' or a 'cheat' because we're skipping the more time-consuming and sometimes temperamental egg-custard step; but even if I didn't want to save time I'd still prefer this method. To be clear, I'm only speaking about this specific flavor of ice cream. For deep, dark chocolate, or butter pecan, I'll take the classic French-style every time. But, for sweet, juicy strawberries, I'm not a big fan of the egginess you get with the traditional method.

Steps:
- Place strawberries and sugar in a blender and pulse until pureed; steep for 10 minutes.
- Pour cream, milk, vanilla extract, and salt into strawberry mixture; blend until smooth and slightly thickened, 10 to 15 seconds. Whisk red food color into cream mixture.
- Pour strawberry mixture into the container of an ice cream maker and freeze according to the manufacturer's instructions. Transfer ice cream to a sealable container, cover the ice cream with plastic wrap, seal the container, and freeze, 2 hours to overnight.
- Process in an ice cream maker until thick. Immediately transfer to a sealable container, cover with plastic wrap, cover the bowl with a lid and freeze for 2 hours to overnight.

Steps:
- Cut any large strawberries in half. In medium saucepan, combine strawberries and 1/2 cup of the sugar. Cook over medium-low heat for 15 to 20 minutes or until berries are soft, stirring occasionally. Transfer mixture to blender or food processor. Cover and blend or process until smooth. Cover and chill for 4 to 24 hours.
- In small saucepan, combine egg, 1 cup of the half and half, and remaining sugar. Cook and stir over medium heat just until mixture coats a metal spoon(see tip). Immediately transfer to medium bowl. Stir in remaining half and half, orange peel( if desired), and almond extract. Cover and chill 4 to 24 hours.
- Pour half and half mixture into freezer canister of 1 or 1 1/2 quart ice cream freezer. Freeze according to manufacturer's directions, adding strawberry mixture after 5 minutes of freezing. If desired, ripen about 4 hours.
- TIP: The Key to Custard: To make custard base ice creams, its important to cook the egg mixture to just the right stage. To know when to remove the cooked custard from the heat, coat a metal spoon with the custard and draw your finger down the spoon. If your finger leaves a clear trail, the custard is done.
OLD-FASHIONED STRAWBERRY ICE CREAM

- In a medium glass or strainless steel bowl, combine the strawberries and 1/4 cup sugar; mash with a fork.
- Set the bowl in a larger bowl filled with ice water.
- In a medium saucepan, bring the half-and-half and remaining 1/2 cup sugar to a simmer, stirring occasionally, over medium heat.
- In a heatproof bowl, whisk the egg yolks; gradually whisk in about 1/2 cup of the hot cream mixture.
- Pour the mixture into the saucepan and cook, whisking constantly, over medium heat until steaming hot and frothy, about 3 minutes.
- Strain the custard into the bowl of strawberries.
- Let stand, whisking occasionally, until cool.
- Using an ice cream maker, process the cooled custard according to the manufacturer's instructions.
- Transfer to an airtight container and freeze.

- In each glass combine 1/4 cup each of the milk and strawberry syrup.
- Put 2 or 3 scoops of the ice cream into each glass and fill the glasses with the club soda or seltzer.
- Divide the remaining syrup among the sodas and garnish each soda with a strawberry.
- In the food processor or in a blender in batches puree the strawberries, transfer the puree to a stainless steel or enameled saucepan, and stir in the sugar and water.
- Bring the mixture to a boil over moderate heat, stirring, and simmer it for 1 minute.
- Force the mixture through a fine sieve set over a bowl and chill the syrup, covered, for at least 3 hours.

TIBS OLD FASHIONED STRAWBERRY MILKSHAKE
There is nothing like an old fashioned strawberry milkshake on a hot Summer day to cure what ails you. I love a good milkshake. It evokes memories of days gone by when baby boomers sat around the soda shop and listened to oldies like Bill Haley And The Comets. My Dad used to tell me stories about the soda shop at the drug store in Rule, TX in the late 50's. He said it was to die for.

- Hull the strawberries and slice them. Place the strawberries in a bowl. Sprinkle the sugar over them and stir in the vanilla. Put the strawberries in the freezer for about an hour.
- Place two pint glasses (or four smaller glasses) in the freezer to chill.
- When the strawberries have frozen solid, pull them out and put them in the blender with 3/4 cup milk. Be sure to include the juices in the bowl.
- Blend until the strawberries are pulverized thoroughly and no chunks remain.
- Add the powdered or malted milk and blend. NOTE: I prefer powdered myself. It adds depth to the texture and gives it extra creaminess. In addition, you can also add 2 tbsp of whipped cream as well. Optional depending on how creamy you like it.
- Remove the jar from the blender and add the ice cream. NOTE: Do not be cheap buying the ice cream. No artificial flavors or dyes. Like the saying goes, "You get what you pay for.".
- With a spoon, stir in the milk and strawberries. Place the jar on the blender. Blend thoroughly. If it doesn't blend well or sticks, carefully add up to 1/4 cup of milk. Stir and/or shake if necessary.
- Remove chilled glasses from the freezer.
- Pour into the chilled glasses. Top with whipped cream and garnish with strawberries.
- Serve immediately.

I have to thank my sister for this one, I got this from her, and it is yummy.She says that the ice cream makes all the difference, use a good brand.If you want to jazz it up a little, add some strawberry liqueur or strawberry flavored vodka. You could use any fruit you like, we made blueberry ones, and they were great. We had to make our own blueberry ice cream,since we couldn't find it in our grocery, and it was really good!

- Combine the strawberries with the lemon juice and 1/4 cup of the sugar in a bowl. Toss until the ingredients are well incorporated and allow to macerate in the refrigerator for several hours to let the natural juice of the strawberry come out.
- In a large bowl, whisk together egg yolks. Add granulated and brown sugars as well as salt and whisk together until lightened in color and smooth.
- Pour the whole milk, the heavy cream, and the vanilla bean into a medium saucepan, over medium heat. Bring the mixture just to a simmer, stirring occasionally while pressing onto the vanilla beans to extract the flavor and the seeds, and then remove the pot from the heat.
- Use a ladle to transfer one spoonful at a time of the hot milk/cream to the egg yolk mixture while whisking the entire time. Your goal is to slowly mix in the hot mixture to temper the eggs but not to cook them. Continue to slowly add the hot cream while whisking until all of it has been thoroughly combined.
