150 g grapes, (on the stalk if possible)
1 lemon
olive oil
60 g shelled walnuts
1 teaspoon English mustard
250 ml fat-free natural yoghurt
6 sprigs of fresh tarragon
2 sticks of celery
2 crisp eating apples, such as Braeburn or Cox
1 cos, or Romaine lettuce

Steps:

  • Preheat the oven to 180°C/350°F/gas 4. Place the grapes on a baking tray, finely grate over the zest from ½ the lemon, drizzle with a little oil and season with sea salt and black pepper.
  • Place in the hot oven for 15 minutes, then add the walnuts and roast for a further 5 to 10 minutes, or until the grapes are soft and caramelised and the walnuts are golden.
  • Meanwhile, make the dressing. Place the mustard and yoghurt into a bowl and whisk well. Pick, finely chop and add the tarragon leaves, squeeze in the lemon juice and mix well, then season to taste.
  • Trim and chop the celery into 1cm chunks, slice the apple into large matchsticks, then place into a large bowl. Discard the tatty outer lettuce leaves, then roughly chop and add to the bowl. Pick the grapes off their stalks and add to the bowl. Drizzle over the yoghurt dressing and toss well. Place onto a platter, roughly chop and sprinkle over the walnuts, then serve.

Steps:

This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.

2 cups diced unpared apples
1 cup diced celery
1 cup sliced red grapes
1 banana, halved lengthwise and thinly sliced
1 cup miniature marshmallow
1/2 cup chopped walnuts
1 tablespoon lemon juice
1 cup mayonnaise
1 tablespoon sugar
2 tablespoons cream or 2 tablespoons half-and-half

Steps:

  • Combine first six ingredients; sprinkle lemon juice on top.
  • Combine gently--best to use your hands to mix.
  • Mix mayonnaise with sugar and cream and stir until sugar is dissolved.
  • Dress the salad with this.
  • Chill before serving.
  • Can be prepared several hours ahead of time if necessary.

Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

1 tablespoon granulated sugar
1 teaspoon lemon juice
Dash of salt
1 cup celery (thinly sliced)
1/2 cup walnuts (coarsely chopped)

1/4 cup mayonnaise
Mixed salad greens or lettuce leaves

Steps:

  • Gather the ingredients.
  • Wash the apples, but do not peel them. Core the apples and cut them into 1/2-inch cubes.
  • Sprinkle the cubed apples with sugar, lemon juice, and salt.
  • Add celery and nuts and toss to blend.
  • In a medium bowl with an electric mixer, whip the cream to stiff peaks .

Steps:

  • Combine apples, grapes, and celery in a large mixing bowl, set aside.

5 ounces celery
3 ounces mayonnaise

  • Peel, core and medium dice the red delicious apples. Apples start with approximately 2 pounds of apple to yield 1 1/4 pounds of diced apple. Place in a mixing bowl and mix with the lemon juice. This will keep the apple from discoloring. Before dicing the celery, blanch it in boiling water for 60 seconds and cool it with cold water. This will bring out the sweet flavor and extend the salads shelf life. Combine diced apple, lemon juice, mayonnaise, celery and chill. Serve on a bed of lettuce topped with walnuts and add a simple fruit garnish. Traditionally this is also served with tiny sweet finger sandwiches. (Example: date nut bread and raspberry jam.)

2 tablespoons sugar
2 tablespoons water
Kosher salt, to taste
2 crisp apples, cut into ½-inch cubes

Steps:

  • Preheat oven to 375° F. Line a baking sheet with parchment paper.
  • In a small saucepan on the stovetop, combine sugar and water. Bring to a boil, whisking to dissolve the sugar. Remove from the heat, stir in the walnuts; toss to coat.
  • Spread the nuts on a single layer on the prepared baking sheet. Toast in the oven for about 8-10 minutes, or until fragrant and golden brown. Keep a close eye on them so that they don't burn. 100g/3½oz cooked chicken, chopped
50g/1¾oz walnuts
handful fresh rocket
2 free-range egg yolks
1 tsp Dijon mustard
290ml/10¼ fl oz vegetable oil
1 lemon, juice only
salt and freshly ground black pepper

  • For the salad, put all the salad ingredients into a large bowl and mix well.
  • For the mayonnaise dressing, put the egg yolks and mustard into a mixing bowl and whisk together.
  • Gradually add the vegetable oil, whisking continuously until all the oil is mixed in.
  • Whisk the lemon juice into the mixture and season with salt and freshly ground black pepper.
  • To serve, mix the mayonnaise with the salad and spoon into a serving bowl.

2 cups granny smith and gala apples cored and cut into bite-sized pieces
2 cups red grapes sliced in half
2 cups celery sliced into thin bite-sized pieces
1 cup toasted walnuts chopped
Bibb or Buttercup Lettuce for serving
½ cup plain greek yogurt
½ cup mayonnaise
2 teaspoons lemon
2 Tablespoons granulated sugar
¼ teaspoon salt
⅛ teaspoon pepper

Steps:

  • In a large bowl, combine the salad ingredients and toss to evenly distribute.
  • Line a serving bowl with Bibb lettuce and set it aside.
  • In a small bowl, prepare the dressing by whisking together the yogurt, mayonnaise, lemon juice, sugar, salt, and pepper until thoroughly combined.
  • Pour the dressing over the salad ingredients and gently stir until well incorporated.
  • Spoon the salad into the prepared bowl and serve.

1/2 cup walnuts halves
1/2 cup non-fat yogurt
2 tablespoons light mayonnaise
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon honey
1/2 lemon, zest finely grated
Freshly ground black pepper
2 large crisp apples, such as Gala
2 ribs celery (with leaves), sliced into 1/2-inch-thick pieces (leaves chopped)
1/4 cup golden raisins
1/2 lemon, juiced
1 head Boston lettuce, trimmed, washed, and dried

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
  • Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
  • Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
  • When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

1 1/2 c mayonnaise
3 Tbsp sugar
3 Tbsp lemon juice
1/2 tsp salt
9 edium red apples, cored and diced
3 c sliced celery
1 1/2 c chopped walnuts

Steps:

  • 1. In a small bowl, combine the mayonnaise, sugar, lemon juice, and salt. Mix until smooth.
  • 2. In a large bowl, combine the apples and celery.
  • 3. Pour the mayonnaise mixture over the apples and celery and toss until coated.
  • 4. Cover and chill for 30 minutes. Just before serving, toss in the walnuts.

2 medium apples (diced (I used Honeycrisp and Granny Smith))
1 cup red seedless grapes (chopped in half)
1/2 cup diced celery (diced)
1/2 cup chopped walnuts (toasted, if you'd like)
1/2 cup plain yogurt (regular, Greek or dairy-free or mayonnaise)
1/4 cup golden raisins (optional)
1/4 cup fresh parsley (optional)
1/2 Tablespoon lemon juice
1/2 teaspoon sea salt
sprinkle of black pepper (to taste)
Butter or Bibb lettuce (for serving (optional))

Steps:

  • Toast walnuts: add walnuts into a skillet over medium heat and toast for 2-5 minutes or until fragrant, tossing occasionally. Remove from pan and let cool.
  • Make salad: In a large bowl combine diced apple, grapes, celery, walnuts, yogurt, lemon juice as well as raisins and parsley (if using). Taste and season with salt and add pepper if desired.
  • Serve: Serve salad over a bed of lettuce, if desired.
  • Storage: Salad will keep in the fridge in an airtight container for 3-4 days.
