4 large sweet potatoes, peeled and cubed
1/3 cup butter
1/3 cup real maple syrup
1 teaspoon vanilla paste, extract works to but I always prefer paste
1 teaspoon sea salt
1 cup chopped pecans
1/3 cup real maple syrup
1/3 cup melted butter
1/4 teaspoon cinnamon
1/4 cup all purpose flour, gluten free friends, use your favorite GF flour

Steps:

  • Preheat oven to 350 degrees. Start a large pot of water to boil.
  • Peel sweet potatoes and cut into 1"cubes. When water is boiling, carefully add potatoes.
  • Boil for 10 minutes or until a fork goes in easily. (check often)
  • While potatoes boil combine all topping ingredients and stir until well mixed. Set aside.
  • When potatoes are soft, strain into a colander.
  • Place potatoes in mixing bowl. Add butter, sea salt, maple syrup and vanilla paste.
  • Mix well. Spoon into ramekins or baking dish, then add topping.
  • Bake for 25 minutes. Potatoes should be firm and topping browned. Serve.

2 tablespoons butter

Steps:

  • Place sweet potatoes in a 13x9-in. baking dish and set aside. In a saucepan, combine sugar, cornstarch, salt and cinnamon; stir in apricot nectar, water and orange zest. Bring to a boil, stirring constantly. Cook and stir 2 minutes more. Remove from heat; stir in butter and pecans. Pour over sweet potatoes. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

4 large sweet potatoes
½ cup softened butter
1 cup heavy cream
2 tablespoons vanilla extract
½ cup packed light brown sugar
1 teaspoon salt
½ cup maple syrup
1 cup chopped pecans
2 eggs, beaten
2 tablespoons maple syrup
¼ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Place sweet potatoes onto the prepared baking sheet, and bake in preheated oven until soft, 45 minutes to 1 hour. Remove from the oven and allow to cool slightly before peeling and placing into a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart casserole dish.
  • Mash the warm potatoes along with butter, cream, vanilla extract, brown sugar, salt, 1/2 cup maple syrup, 1 cup chopped pecans, and eggs. Spread mashed sweet potato into the prepared baking dish, and sprinkle with the remaining 2 tablespoons of maple syrup, and 1/4 cup of pecans.
  • Bake sweet potatoes in preheated oven until thoroughly hot, 30 to 35 minutes.

Steps:

  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.

1 cup water
3/4 cup sugar
2 pounds yams
1 lemon, sliced thinly
1/2 cup brown sugar
1 stick butter
2 tablespoons apricot brandy
1/2 cup pecans or walnuts, chopped coarsely

Steps:

  • Combine apricots, water and sugar and cook until soft, about 20 minutes. Drain and reserve liquid in a saucepan.
  • Peel, slice and cook yams in water until tender, about 15 minutes.
  • Grease casserole. Alternate layers of sliced yams, apricots and lemon slices in casserole.
  • Add brown sugar, butter and apricot brandy to the saucepan with apricot liquid and heat until butter is melted. Pour over casserole.

It has been a favorite of my family and many others that read it in our self published cookbook " The Main Menu of Memories". If you use fresh potatoes, they should be cooked first to al dente stage.

1 (18 ounce) can sweet potatoes
1 cup brown sugar
1 1/2 tablespoons cornstarch
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 (5 1/2 ounce) can apricot nectar
1/3 cup water
2 tablespoons margarine
12 apricots, quartered (may be fresh, dried or canned)
1/2 cup pecan halves (or big pieces)

Steps:

  • Grease a 1 to 1 1/2 quart baking dish.
  • Arrange sweet potatoes in single layer.
  • Mix sugar, cornstarch, salt and cinnamon in a 1 quart saucepan.
  • Stir in apricot nectar and 1/3 cup water.
  • Cook and stir on high heat until the mixture comes to a boil.
  • Remove from heat and add margarine and apricots.
  • Pour evenly over potatoes.
  • Sprinkle with pecans.
  • Bake uncovered at 375 degrees for 25 to 30 minutes.
  • The casserole will be hot and bubbly.

4 small sweet potatoes (or 2 large), peeled and cut into 1-inch cubes
1/4 cup grade B maple syrup, divided
1/4 cup extra-virgin olive oil, divided
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
4 large shallots, peeled and thinly sliced
2 tablespoons balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl add the sweet potatoes, 2 tablespoons of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper. Mix to evenly coat the potatoes and arrange on a sheet tray. Roast until caramelized, golden brown and soft, about 20 to 30 minutes. Be sure to check them after 15 minutes and stir, if needed.
  • Meanwhile, in a large skillet over medium-low heat, add the remaining 2 tablespoons of olive oil and the sliced shallots and saute until they start to caramelize, about 5 minutes Add the remaining 2 tablespoons of maple syrup and balsamic vinegar. 3 lb Kroger Sweet Potatoes
6 slices bacon
1 small yellow onion, chopped
½ teaspoon fresh thyme, chopped
½ teaspoon fresh rosemary, chopped
⅓ cup kroger heavy whipping cream
1 large egg
¾ teaspoon kosher salt
freshly ground black pepper, to taste
1 cup shredded gruyère cheese
2 tablespoons unsalted butter
1 ½ cups crumbled herb stuffing
1 teaspoon fresh thyme, for garnish

Steps:

  • Preheat the oven to 425°F (220°C).
  • Place the sweet potatoes on a baking sheet and poke each one a few times with a fork. Bake for 40-50 minutes, or until very soft. Remove from the oven and let cool until easy to handle. Reduce the oven temperature to 350°F (180°F).
  • Meanwhile, cook the bacon in a medium skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
  • Pour out all but 2 tablespoons of bacon grease from the skillet. Add the onion to the skillet and cook over medium heat for about 5 minutes, or until soft and translucent.   • Sprinkle the crumbled stuffing evenly over the sweet potatoes. Crumble the bacon and evenly sprinkle on top.
  • Cover the baking dish with foil and bake for 30 minutes, until heated through. If desired, remove the foil and broil on high until the topping is lightly browned, 1-2 minutes. Keep an eye on the casserole so it does not burn.
