MAPLE SWEET POTATO CASSEROLE
Steps:
- Preheat oven to 350 degrees. Start a large pot of water to boil.
- Peel sweet potatoes and cut into 1"cubes. When water is boiling, carefully add potatoes.
- Boil for 10 minutes or until a fork goes in easily. (check often)
- While potatoes boil combine all topping ingredients and stir until well mixed. Set aside.
- When potatoes are soft, strain into a colander.
- Place potatoes in mixing bowl. Add butter, sea salt, maple syrup and vanilla paste.
- Mix well. Spoon into ramekins or baking dish, then add topping.
- Bake for 25 minutes. Potatoes should be firm and topping browned. Serve.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Place sweet potatoes onto the prepared baking sheet, and bake in preheated oven until soft, 45 minutes to 1 hour. Remove from the oven and allow to cool slightly before peeling and placing into a large bowl.
- Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart casserole dish.

- Preheat oven to 350°F. Oil a 3-qt. baking dish. Cook potatoes in a large pot of boiling salted water until very tender, about 12 minutes. Drain; let sit in colander 15 minutes.
- Meanwhile, heat 1/2 cup syrup in a large skillet over medium-high. Add pecans, 3/4 tsp. salt, and 1 tsp. pepper and cook, stirring constantly, until syrup has evaporated and pecans are glazed, about 5 minutes. Transfer to a parchment-lined rimmed baking sheet and let cool.
- Purée potatoes, 1 1/2 cups water, and remaining 3/4 cup syrup, 1 1/4 tsp. salt, and 1/2 tsp. pepper in a food processor until smooth. Transfer potato mixture to prepared baking dish.

APRICOT-PECAN SWEET POTATOES
This is a wonderful sweet potato recipe with a little bit of preparation. You can use orange juice in place of the apricot nectar, which can be a little hard to find -- but the result is different and really makes the sweet potato pop! This is a recipe my Aunt Birdie gave me about ten years ago

- Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix together brown sugar, cornstarch, salt, cinnamon, apricot nectar, water, and orange peel in a saucepan; bring to a boil over medium heat. Reduce heat to medium-low, and cook for 2 minutes, stirring constantly. When the sauce is thick, stir in the butter and pecans. - Combine apricots, water and sugar and cook until soft, about 20 minutes. Drain and reserve liquid in a saucepan.
- Peel, slice and cook yams in water until tender, about 15 minutes.
- Grease casserole. Alternate layers of sliced yams, apricots and lemon slices in casserole.
- Add brown sugar, butter and apricot brandy to the saucepan with apricot liquid and heat until butter is melted. Pour over casserole.
- Bake at 350 degrees for 20 to 30 minutes.

It has been a favorite of my family and many others that read it in our self published cookbook " The Main Menu of Memories". If you use fresh potatoes, they should be cooked first to al dente stage.

- Grease a 1 to 1 1/2 quart baking dish.
- Arrange sweet potatoes in single layer.
- Mix sugar, cornstarch, salt and cinnamon in a 1 quart saucepan.
- Stir in apricot nectar and 1/3 cup water.
- Cook and stir on high heat until the mixture comes to a boil.
- Remove from heat and add margarine and apricots.
- Pour evenly over potatoes.
- Sprinkle with pecans.
- Bake uncovered at 375 degrees for 25 to 30 minutes.
- The casserole will be hot and bubbly.

MAPLE ROASTED SWEET POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- In a large bowl add the sweet potatoes, 2 tablespoons of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper. Mix to evenly coat the potatoes and arrange on a sheet tray. Roast until caramelized, golden brown and soft, about 20 to 30 minutes. Be sure to check them after 15 minutes and stir, if needed.
- Meanwhile, in a large skillet over medium-low heat, add the remaining 2 tablespoons of olive oil and the sliced shallots and saute until they start to caramelize, about 5 minutes Add the remaining 2 tablespoons of maple syrup and balsamic vinegar. - Preheat the oven to 425°F (220°C).
- Place the sweet potatoes on a baking sheet and poke each one a few times with a fork. Bake for 40-50 minutes, or until very soft. Remove from the oven and let cool until easy to handle. Reduce the oven temperature to 350°F (180°F).
- Meanwhile, cook the bacon in a medium skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
- Pour out all but 2 tablespoons of bacon grease from the skillet. Add the onion to the skillet and cook over medium heat for about 5 minutes, or until soft and translucent. - Make the topping: In the same skillet, melt the butter over medium heat. Add the stuffing and stir until warmed through and slightly toasted, about 2 minutes.
- Sprinkle the crumbled stuffing evenly over the sweet potatoes. Crumble the bacon and evenly sprinkle on top.
- Cover the baking dish with foil and bake for 30 minutes, until heated through. If desired, remove the foil and broil on high until the topping is lightly browned, 1-2 minutes. Keep an eye on the casserole so it does not burn.
- Remove the casserole from the oven and garnish with fresh thyme. Let cool for about 10 minutes before serving.
