QUICHE WITH HERBS AND GOAT CHEESE
This green quiche laden with herbs and with thin slices of fresh goat cheese baked on top has a Gallic rusticity. A proper quiche (also known as a tarte salée, or savory open pie) should have really good pastry and contain a soft, tender eggy custard. It should be light enough to serve as a first course, or in larger portions for a simple main course. It should be something to sing about.

Steps:
- Bake prepared dough at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
- Make the custard: in mixing bowl, beat eggs. Whisk in half-and-half, salt, pepper, lemon zest, thyme, scallions and parsley. Set aside.
- Set tart pan on a baking sheet. Spread goat cheese slices evenly over bottom of pastry. Beat custard once more and carefully pour into shell. Bake at 375 degrees for 30 to 35 minutes, until top is golden and custard is set. Cool for 10 minutes. Serve warm or at room temperature.

- Preheat oven to 400°. Unroll crust into a 9-in. pie plate; flute edge. Sprinkle cheeses into crust. In a large bowl, whisk eggs and cream until blended. Stir in herbs; pour over top., Bake on a lower oven rack 25-30 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

CRUSTLESS QUICHE WITH GREENS, HERBS, AND GOAT CHEESE
Easy and nutritious, this quiche is packed with protein, calcium, and iron. You can use any type of greens you like: swiss chard, kale, collards, mustard greens, spinach, etc. I like a mix of spinach and kale, two superfoods. Serve alone for a light dinner or for breakfast, or with a salad or raw veggies for lunch at work.

- Spray a 9-inch glass pie dish with non-stick spray and sprinkle the breadcrumbs over the bottom and sides of the dish. Shake the dish around to distribute evenly.
- Slice the white and light green parts of the leek 1/2 inch thick. Boil 4 cups of salted water and add leeks. Boil 3 minutes. Remove from heat and add spinach and kale. Set aside for 30 minutes for greens to wilt and soften. Drain, rinse with cold water, squeeze out the water, and set aside.
- Preheat oven to 425 degrees. Whisk egg whites until frothy and then whisk in the whole eggs. Whisk in milk, salt, pepper, nutmeg, tarragon, and basil.
- Scatter the greens mixture in the bottom of the pie plate over the breadcrumbs. Sprinkle on the goat cheese. Pour egg mixture over the greens and bake 25 minutes. Cool 5 minutes before serving.
TOMATO-BASIL QUICHE WITH GOAT CHEESE
I alwaysmake this for brunch parties, and everybody seems to love it. I get a lot of requests for the recipe, so now I can give my friends & family the RZ link. I use a frozen pie crust to keep it easy, but it would be even better with your favorite home-made pie crust. I hope you enjoy it as much as I do!

- Blind-bake the pie shell according to package directions (approximately 12 - 15 minutes at 375 for the type I use. I also use pie weights to keep the crust from puffing.) Set crust aside to cool for approximately 10 minutes.
- Meanwhile, slice the Roma tomato thinly and let it sit on a paper towel to draw out some liquid. Chiffonade the basil leaves (i.e., roll them up and slice them into thin strands.).
- Crumble the goat cheese into the warm pie shell, distributing it evenly over the bottom. It's okay if it begins to melt a bit.
- Layer the tomato slices in one layer over the goat cheese. Sprinkle the basil leaves over the top evenly. Top with a dash of nutmeg and some salt and pepper.
- Whisk the eggs with the half and half thoroughly. Pour the egg mixture into the pie shell carefully. (I like to do this when the pan in on the oven rack to avoid any spillage.).
- Bake at 325 for 40 - 50 minutes, until the top is slightly puffed and lightly browned. Keep an eye on the crust - halfway through baking (or even earlier) you'll need to use a pie-guard or tin foil to cover the crust so it doesn't get too brown. Allow the quiche to cool a bit before serving. It is best slightly warm, but not hot.
LEEK AND GOAT CHEESE QUICHE
The recipe is from America's Test Kitchen, with some minor modifications made by me (highlighted in italics). Goat cheese should be fairly easy to find in any decent supermarket. I found the best value for it at a warehouse club, where they were charging less for a pound of it than a normal grocery store charged for half the amount. Make sure to wash leeks thoroughly, as they can be gritty.

- Adjust oven rack to center position and heat oven to 375 degrees.
- Sauté white parts leeks in butter over medium heat until soft, 10-15 minutes.
- Meanwhile, whisk all remaining ingredients except goat cheese in medium bowl.
- Spread goat cheese and leeks evenly over bottom of warm pie shell and set shell on oven rack.
- Pour in custard mixture to 1/2-inch below crust rim.
- Bake until lightly golden brown and a knife blade inserted about one inch from the edge comes out clean, and center feels set but soft like gelatin, 32 to 35 minutes.
- Transfer quiche to rack to cool. Serve warm or at room temperature.

- Preheat oven to 425 degrees. Spray deep dish pie plate generously with Pam or any other non-stick cooking spray.
- Toss Simply Potatoes® Shredded Hash Browns with the melted butter, 1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper.
- Press buttered potatoes onto the bottom and up the sides of the pie plate.
- Bake in the preheated 425 degree oven for 30 minutes.
- Remove from oven, reduce heat to 350 degrees.
- Top Simply Potatoes® Shredded Hash Browns with spinach.
- Top potatoes and spinach with sun-dried tomatoes.

- For shortcrust pastry, sift flour and salt onto a work surface, scatter butter over and toss with a pastry scraper or cook's knife. Sprinkle with the 60ml ice-cold water and toss again.
- Gather the mass close to you and, using the heel of your hand, smear the ingredients away from you in a quick, smooth sliding action. Gather the emerging dough back to the starting point and repeat. Don't be concerned when streaks of butter appear on the surface of the dough; this shows it hasn't been overworked. Lightly knead it into a flattened disc, wrap in two layers of greaseproof paper and refrigerate to rest until firm but not hard (20-30 minutes; it should be a tiny bit soft when pressed with your fingertip).
- Preheat oven to 190C. Roll pastry on a lightly floured surface, flouring the pastry and the rolling pin, too, to about 37cm in diameter, lifting and dusting under the pastry as you go to prevent it sticking. Dust off excess flour with a pastry brush, roll pastry over the pin and unroll it over a 3.5cm-deep, 28cm-diameter loose-based fluted tart tin. Carefully loosen the pastry so it sits inside the tin. If there seems to be too much pastry, trim a little off, then fold excess pastry in and over, so it sits just above the top of the tart tin. Use flour-dusted knuckles to press the pastry into the side of the tin to form a thin, compacted wall all the way around that extends above the edge of the tin by about 5mm. Dust out any flour with a pastry brush, prick all over the base with a fork, line with foil and place in the freezer for 20 minutes.
- Fill case with pastry weights and bake until wall appears set (10-12 minutes), then remove foil and weights and bake until base looks set (5-7 minutes). Reduce oven to 170C and bake until crust is very dry and slightly caramelised (10-12 minutes). The pastry case may be made a few hours in advance; reheat it in a 150C oven for 5-7 minutes before adding the filling.
