EASY WHITE BEAN SALAD
Simple white bean salad loaded with bright Mediterranean flavors! Canned beans, chopped veggies, and fresh herbs tossed together in one big bowl. No fancy dressing here, a squeeze of lemon juice and extra virgin olive oil is all you need. Prepare it ahead for best flavor (see notes).

- Add white beans, cucumbers, tomatoes, green onions, parsley and mint to a large mixing bowl.
- Add lemon zest. Season with salt and pepper, then add za'atar, sumac and Aleppo pepper.
- Finish with lemon juice and a generous drizzle of extra virgin olive oil (2 to 3 tablespoons).Give the salad a good toss to combine. Taste and adjust seasoning. Add feta cheese, if you like. (For best flavor, let the salad sit in the dressing for 30 minutes or so before serving. See notes).

- Preheat the oven to 400 degrees F.
- Toss the bread, olive oil, a pinch of salt and several grinds of pepper on a rimmed baking sheet until combined, then spread into an even layer. Bake until the croutons are golden brown and well toasted, tossing halfway through, 10 to 12 minutes.
- Meanwhile, add the bacon to a medium skillet and cook over medium heat, stirring occasionally, until crisp and well browned, about 5 minutes. Transfer to a paper towel-lined plate with a slotted spoon to drain.
- For the dressing, puree the basil, parsley, dill, mayonnaise, yogurt, lemon juice, 2 teaspoons water, 1/4 teaspoon salt and several grinds of pepper in a food processor until the herbs are finely chopped and dressing is bright green. Taste and adjust the seasoning with more salt and pepper.
- To assemble, add the beans, romaine, tomatoes, half the croutons and half the bacon to a large bowl. Add half of the herb-mayo dressing, then toss to combine. Transfer to a large serving bowl or platter, top with the remaining croutons and bacon and drizzle with the remaining dressing.
RIDICULOUSLY EASY BEAN SALAD
The beans you choose to use for this simple bean salad is up to you. Both canned or home cooked beans will work. When using canned, drain and rinse the beans first before adding to the salad.

- Add chopped onions to a small bowl and cover with cold water. Set aside for 5 minutes, drain, and then rinse. This step helps to remove some of the 'raw' flavor of the onion so that it does not overpower the salad.
- Meanwhile, in the bottom of a large bowl, whisk together the vinegar, olive oil, mustard, salt and pepper. Taste the dressing and then adjust with more salt/pepper. If the dressing tastes too abrasive, whisk in 1 to 2 teaspoons of honey or maple syrup to balance out the vinegar.
- Add the beans, drained onion, cucumber, parsley, capers and dried oregano. Toss well, cover and chill in the refrigerator at least 1 hour to allow the beans to marinate in the dressing.
- The salad will keep stored in an airtight container in the fridge up to 4 days.

GARBANZO BEAN AND SWEET PEPPER SALAD
I tasted this delicious salad last year at a summer potluck and convinced the chef to part with the recipe. Sometimes I'll boil one cup gemelli pasta (corkscrew) and toss it in with the other ingredients to "stretch" the salad for potlucks, picnics, etc. Marinating is necessary to allow the flavors to mingle.

- Fill a pot with water, season with salt and bring to a boil. (If making the pasta, you can use the same water after you've cooked the vegetables.) Add the asparagus and cook until tender but still firm, about 2 to 3 minutes. Transfer to a bowl of ice water to stop the cooking. When the water comes back to a boil, cook and chill the haricots verts the same way. Drain the asparagus and beans and lay out on a towel to dry. Slice asparagus into 1 1/2-inch-long pieces.
- In a small bowl, whisk together the vinegars and mustard. Season with salt and pepper. Gradually whisk in the olive oil and walnut oil until smooth and emulsified. Set aside. In a large serving bowl, combine the mixed greens, watercress, fennel, asparagus, beans and tarragon. Pour over half the dressing and toss until the leaves are thinly coated. Taste and add more dressing or salt, if needed. Serve.
