CREAMY AVOCADO DRESSING
Recipe video above. This is a dressing that uses avocado to make it creamy, rather than mayonnaise or loads of oil. It doesn't taste very avocado-ey because avocados are dense so it needs to be thinned out to make it pourable as a dressing. Rather, think of the avocado as the better-for-you means to get a creamy dressing fix!Excellent use for avocados that are a bit overripe or with brown spotty bits. Use as dressing for all your favourite salads. Particularly good salads that call for Ranch, Caesar or other mayo-rich dressings.Makes 1 1/4 cups - enough for a side salad for 6 to 8 (depending on how much you use!)

Steps:
- Place all ingredients into a Nutribullet or small food processor and blitz until smooth. (Inc Extra Flavouring Options)
- Use water to thin to just pourable consistency (so it's not super gloopy and thick).
- Taste and add the following to taste: salt, pepper, lemon, oil. Use as salad dressing!
- Keeps 3 days in the fridge without going brown. See Note 3 for how to keep even longer!

- Combine the green beans, wax beans, garbanzo beans, kidney beans, green pepper, onion, and celery in a large bowl; toss to mix.
- Whisk together the oil, vinegar, salt, pepper, and sugar in a separate bowl until the sugar is dissolved; pour over the bean mixture. Refrigerate 8 hours or overnight before serving.

QUINOA, SWEET POTATO AND BLACK BEAN BOWLS WITH YOGURT DRESSING

- Preheat the oven to 450 degrees F.
- Put the quinoa in a sieve and rinse very well with cold water; shake gently to drain the excess water. Transfer the quinoa to a medium saucepan and add 1 1/2 cups water and 1/2 teaspoon salt. Bring to a simmer over medium-high heat, then cover, reduce the heat to low, and cook until all of the water is absorbed, about 16 minutes. Keep covered, off the heat, for 5 minutes then uncover and cool slightly.
- Meanwhile, toss the sweet potatoes with the oil, coriander and 1/2 teaspoon salt and spread on a rimmed baking pan in a single layer. Bake until just tender and browned in spots, about 20 minutes. Add the beans, soy sauce and hot sauce to the pan and stir to mix.
- Spoon the quinoa into bowls and top with the sweet potato-black bean mixture. Top with avocado and pumpkin seeds and drizzle with the dressing.
- Whisk the yogurt, parsley, lime juice and garlic together in a medium bowl and season with salt and pepper to taste.
BEAN AND YOGURT CAESAR SALAD DRESSING
Lisa Feldman's bean and yogurt base is a great solution for a creamy Caesar salad dressing if you don't like the idea of using a raw egg. Parmesan is added to the mix, and I also use an anchovy fillet, which you can omit if you wish. But the anchovy and the Parmesan are what make this resemble a Caesar dressing.

- Soak the quinoa in plenty of water for about 15 minutes, and then rinse several times. Bring 1 cup of water to boil, add quinoa, and simmer covered for 20 minutes, until water is absorbed and quinoa is fluffy. Set quinoa aside to cool.
- In a large bowl, thoroughly mash avocado flesh with juice from 1/2 of the lime. Add sour cream, chili powder, and garlic salt and mix well. chili powder and garlic salt amounts can be adjusted according to your preference.
- Rinse beans and add to avocado mixture, along with corn (rinse first if using canned or frozen). Cut tomatoes in half and add to avocado, bean, and corn mixture.
- Cut bell pepper into thin slices about 1 inch long. Trim woody ends from asparagus and cut spears into pieces 1/2 to 1 inch long. Heat a large frying pan over medium heat and add olive oil. when oil is hot add peppers and asparagus. Sprinkle vegetables with juice from remaining lime half and with sea salt. Cook vegetables for just a few minutes, until they are slightly softened but still bright green. Stir vegetables occasionally as they cook. Remove pan from heat.
- Add quinoa to avocado mixture and mix well. Then add peppers and asparagus and again mix well. At this time the taste may be adjusted by the addition of more salt. Chill in fridge before serving.
- Serve with hot sauce on the side (such as tabasco) for those who like more heat.

- Pour the canned beans in a sieve or colander and rinse them well. Let the beans drain for a couple of minutes and then transfer them to a large mixing bowl. Chop up the ripe tomato and the cucumber and then add this to the beans in the bowl.

- Heat grill to high. Spread the pitta triangles out in a shallow baking tray. Toast for a couple of mins to crisp, turning once. Keep a close eye on them otherwise they will burn. Once toasted, remove and place to one side. Next, pop the broad beans in boiling water and cook for 2-3 mins, then drain and remove the bright green pod from the hard outer shell.
