75g French beans , finely sliced
200g fresh white crabmeat
1 red chilli , deseeded and finely chopped
1 garlic clove , crushed
4 spring onions , trimmed and finely chopped
1 tbsp freshly grated ginger
grated zest 1 lime
1 tbsp chopped coriander
75g fresh white breadcrumbs
1 tbsp mayonnaise
1 egg , beaten
sunflower oil , for frying
5 garlic cloves , roughly chopped
2 red chillies , roughly chopped
6cm piece ginger , peeled and roughly chopped
2 dried kaffir lime leaves
1 stalk lemongrass , trimmed and roughly chopped
2 tbsp chopped coriander
175g caster sugar
50ml rice wine vinegar
1 tbsp fish sauce or lime juice
1 tbsp soy sauce

Steps:

  • To make the dipping sauce, blend the garlic, chillies, ginger, lime leaves, lemongrass and coriander in a food processor until very finely chopped. Tip the sugar into a small saucepan, add 3 tbsp water and heat gently to dissolve. Continue to cook for another min or so until the syrup starts to thicken slightly.
  • Add the chilli and ginger mixture, and continue to cook for a further 2-3 mins. Then stir in the rice vinegar, fish sauce and soy sauce. Remove from the heat and leave to cool to room temperature.
  • Cook the beans in a small pan of boiling salted water for 1-2 mins until tender. Drain and refresh under cold running water, then leave to dry on kitchen paper. Mix the crab with the cooked beans and all the remaining ingredients, apart from the sunflower oil. Season with salt and freshly ground black pepper and shape into 8 small patties.
  • Heat 1-2 tbsp sunflower oil in a frying pan and cook 4 crab cakes at a time until golden brown on both sides. Remove from the pan and keep warm while you cook the remainder. Serve with the sweet chilli dipping sauce.

½ a bunch of fresh flat-leaf parsley
1 large free-range egg
750 g cooked crabmeat, from sustainable sources
300 g mashed potatoes
1 teaspoon ground white pepper
1 teaspoon cayenne pepper
plain flour, for dusting
olive oil
watercress
tartare sauce

Steps:

  • Trim and finely chop the spring onions, and pick and finely chop the parsley. Beat the egg.
  • Combine the crabmeat, potatoes, spring onion, parsley, white pepper, cayenne and egg in a bowl with a little sea salt.
  • Refrigerate for 30 minutes, then shape into 6cm cakes.
  • Dust with flour and shallow-fry in oil over a medium heat for about 5 minutes each side or until golden-brown.
  • Serve with pinches of watercress and a dollop of tartare sauce.

2 (6 oz can) lump crab meat (drained well)
5 medium shrimp (peeled and chopped finely)
2 green onion (chopped finely)
4 tbsp cilantro (chopped finely)
1 red chili (chopped finely)
1 tsp ginger paste
2 tsp fish sauce
1 tbsp lime juice
salt & pepper (to taste)
1 egg
1/2 cup panko breadcrumb
4 tbsp oil
1/2 cup flour
2 eggs
2/3 cup panko breadcrumb
1/2 cup mayonnaise
1 1/2 tbsp sriracha sauce
2 tsp lime juice
salt and pepper (to taste)
1/2 cup rice vinegar
6 tbsp water
1/2 cup sugar
3 cloves garlic (minced)
1/2 tsp red chili flakes
1/2 tsp salt
1 tbsp cornstarch + 2 tbsp water

Steps:

  • In a mixing bowl, combine crab meat, shrimp, green onion, cilantro, red chili, ginger puree, one egg, and 1/2 cup panko crumbs. Season with fish sauce, lime juice, salt and pepper.
  • Mix the ingredients gently, and press them to make 2 1/4-inch in diameter and 3/4 inch thick patties. (You will get about 8 patties)
  • Beat 2 remaining eggs in a shallow bowl. Prepare flour and the remaining panko crumbs in separate bowls. Coat the patties in the order of flour, egg, and then panko crumbs.
  • Heat a generous amount of oil in a pan over medium heat. Add patties and pan-fry them until they are golden and crisp, about 3-4 minutes. Flip to the other side and fry for another 3 minutes. Adjust the heat level if the surface browns too quickly.
  • Keep the first batch on a wired rack to prevent them from getting soggy on the bottom.
  • To make the sriracha mayo, combine all the ingredients in a small mixing bowl and mix well.
  • To make the sweet chili sauce, mix rice vinegar, water, sugar, garlic, red chili flakes, and salt in a saucepan and bring to boil. Mix the cornstarch and 2 tbsp water in a small mixing bowl and add to the sauce mixture. Continue to boil until the sauce thickens. Remove the pan from heat and let it cool down.
  • Sriracha mayo and sweet chili sauce can be stored in the refrigerator up to 1 month.

This is a formidable crab cake in a style that mimics tod mun, the Thai fish cake that, when made right, packs astonishing flavor. These cakes require shrimp purée as a binder; scallops will also work in place of the shrimp. Just stick a few in a small food processor and whiz for a few seconds, or chop and mash by hand.

6 medium raw shrimp, shelled, washed and deveined
1 teaspoon nam pla (fish sauce)
1 pound fresh lump crab meat, picked over for cartilage
1 egg
1/4 cup chopped scallion
1/4 cup chopped cilantro
1 fresh chili, preferably Thai, minced
1 teaspoon minced fresh ginger
Salt
freshly ground black pepper
2 to 3 tablespoons bread crumbs, preferably fresh
About 1/2 cup all-purpose flour for dredging
Peanut or vegetable oil as needed
Lime wedges for serving

Steps:

  • Purée shrimp in a food processor (smaller is better) until you have a smooth paste, or chop and mash by hand. Add fish sauce. In a bowl, mix the shrimp purée, crab meat, egg, scallion, cilantro, chili, ginger and salt and pepper; add just enough bread crumbs to stiffen mixture a bit. Refrigerate mixture until you are ready to cook; it will be easier to shape into cakes if you refrigerate it for 30 minutes or more.
  • Season flour with salt and pepper. Film bottom of a large skillet with oil and place over medium-high heat. Shape crab meat mixture into cakes 1 inch thick and as wide as you want. Dredge each in flour, and cook, adjusting heat as necessary and turning once (very gently), until golden brown on both sides, about 5 minutes a side. Serve with lime wedges.

8 ounces (240 grams) fresh or canned crabmeat, drained
3 spring onions, finely sliced
3 makrut lime leaves, stem removed, snipped into slivers with scissors, or zest of 1 lime)
1 fresh red chili pepper, minced
1 tablespoon freshly squeezed lime juice
1 tablespoon fish sauce
1 tablespoon oyster sauce
2 to 3 eggs
2 teaspoons mayonnaise, optional
1 3/4 cups panko breadcrumbs, divided
1/2 teaspoon garlic salt
1 cup oil, for frying
Thai sweet chili sauce , for serving

Steps:

  • Gather the ingredients.
  • Place crabmeat , onions, lime leaf slivers (or zest), chili, lime juice, fish sauce, oyster sauce, 1 egg, mayonnaise (if using) and 3/4 cup panko together in a food processor or chopper. Process to combine ingredients.
  • Add up to 1/4 cup more panko and briefly process or stir to combine. You want the mixture to be moist enough to form cakes, but not so moist that it falls apart. Add more panko until you can form cakes easily in your hands.
  • Pat mixture into cakes (we usually make them 2 to 3 inches in diameter). Place on a clean plate.
  • In a separate, smaller bowl, break 1 large or 2 small eggs and briefly whisk. Pour 3/4 cup panko into a mixing bowl and add the garlic salt, stirring to mix.
  • Dip the crab cakes first into the egg, then roll in the panko mixture to cover. Set on a clean surface.
  • Pour oil into a small frying pan or wok set over medium-high heat (oil should be 1-inch deep). Heat for 1 minute or longer. To test if oil is hot enough, drop in a few panko crumbs - if they begin to sizzle right away, the oil is ready.
  • Carefully place crab cakes in the hot oil. Reduce heat slightly to prevent overheating and splattering. Fry crab cakes 1 to 2 minutes per side, or until golden brown.
  • Serve with Thai sweet chili sauce. You can also serve with a dollop of mayonnaise alongside the sweet chili sauce - take a little of both on your crab cake at once for a wonderful combination of flavors.

Crab cakes are quick to put together and make great party food or starters, plus this chilli jam will keep for a couple of weeks in the fridge.

225g/8oz jam sugar with added pectin
3 tbsp red wine vinegar
2-3 long red chillies, seeds removed, finely chopped
2 garlic cloves, finely chopped
15g/½oz chunk fresh root ginger, finely chopped
100g/3½oz white crabmeat
100g/3½oz brown crabmeat
200g/7oz raw peeled king prawns (or other peeled raw prawns)
1 tbsp Thai green curry paste
1 tbsp cornflour, plus 1 tbsp extra for dusting
6 spring onions, finely sliced
25g/1oz fresh coriander, leaves finely chopped
6 tbsp sunflower oil, for frying
flaked sea salt
freshly ground black pepper
lime wedges and fresh coriander, to serve

Steps:

  • For the chilli jam dipping sauce, put the sugar, vinegar and 100ml/3½fl oz water in a small saucepan and gently heat until the sugar dissolves, stirring constantly. Add the chilli, garlic and ginger and bring to the boil. Cook for three minutes. Remove from the heat and pour into two heatproof serving bowls. It will thicken as it cools. (Any leftover chilli jam can be covered and kept in the fridge for up to two weeks.)
  • To make the crab cakes, put the crab meat, prawns, curry paste, cornflour and a couple of really good pinches of flaked sea salt and a few twists of ground black pepper into a food processor. Blend until well combined. You may need to remove the lid and push the mixture down a couple of times with a rubber spatula. Don't allow the mixture to become too thin or smooth or it will be difficult to shape into crab cakes.
  • Remove the blade and transfer the mixture to a large bowl. Stir in the spring onions and coriander until evenly mixed. Sprinkle a small tray or platter with the extra tablespoon of cornflour.
  • Wet your hands under the cold tap to stop the crab cakes from sticking. Take a small handful of the mixture - about the size of a golfball. Roll into a neat ball then flatten until around 1.5cm/¾in thick and 6cm/2½in in diameter. Place on the cornflour-dusted tray. Continue rolling and flattening the mixture until you have made 12 crab cakes.
  • Pour the oil into a large non-stick frying pan and place over a medium heat. When the oil is hot, add six of the crab cakes and cook for two minutes on each side or until lightly browned and cooked throughout. Transfer to a warmed plate while the rest are cooked.
  • Divide the crab cakes between two large plates or small platters. Add a dish of the chilli jam to each one and garnish with lime wedges and sprigs of fresh coriander to serve.

250 g small peeled cooked prawns, roughly chopped (shrimp)
3 green onions, finely sliced
1/2 cup breadcrumbs
2 eggs

2 tablespoons chopped fresh coriander
fresh ground black pepper
2 tablespoons oil (or maybe a little more)

Steps:

  • Mix all ingredients together well.
  • Shape into 8 cakes.
  • Heat the oil over medium heat and fry the cakes until cooked and golden on one side (about 5 minutes).
  • Turn over and cook for another couple of minutes or until cooked right through.

2 cups cooked basmati rice, cold
2 jalapeno peppers, seeded and minced
1 tablespoon grated lemon zest
1/4 cup chopped fresh basil
3 tablespoons chopped fresh mint
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 eggs, beaten
1/4 cup dry bread crumbs
2 tablespoons olive oil

Steps:

  • In a large bowl, gently combine the crab meat, rice, jalapenos, lemon zest, basil and mint. Carefully stir in the salt, the pepper, the eggs and the bread crumbs, leaving the crab in fairly large lumps. Using 1 tablespoon of the mixture for each cake, press into croquettes that are about 2 inches in diameter.
  • Heat 1 tablespoon of oil in a large nonstick skillet over medium heat. Working in batches, cook the cakes until nicely browned and firm, about 1 1/2 minutes per side. Add more oil to the skillet as needed between batches. Serve hot.

Crab Cakes
1 lb lump crab meat (picked over)
4 scallions (finely sliced, white and pale green parts only)
1/3 cup mayonnaise
1 Tbsp lime juice
2 tsp lime zest
1 Tbsp fish sauce
2 Tbsp cilantro (minced)
1 Tbsp (grated ginger)
dash red pepper flakes
1/3 cup all purpose flour
1 egg (beaten with 1 Tbsp water)
1 cup panko breadcrumbs
Canola oil for frying
Kosher salt to taste
Sweet Chili Sauce
2 tsp canola oil
2 cloves garlic (minced)
1/2 cup sugar
1/2 cup unseasoned rice vinegar
2 Tbsp chili paste (sambal oelek)
1 Tbsp lime juice
1 Tbsp fish sauce
2 tsp corn starch
2 tsp water
*ice cream scoop

Steps:

  • Crab Cakes: Mix together the crab, scallions, mayo, lime juice, lime zest, fish sauce, cilantro, ginger and red pepper flakes.
  • Using an ice cream scoop, lightly pack the crab mixture into the scoop and scoop out 10 mounds on to a wax paper-lined sheet tray. Freeze, 15-20 minutes, or until slightly firm.
  • Remove from freezer and roll each ball first in flour, shaking off excess, dip in egg, then in panko and place back on the sheet tray, flattening slightly.
  • Pour enough oil to cover the bottom of a large nonstick pan and heat over med/high heat until hot but not smoking.
  • Cook the crab cakes in two batches (adding more oil if needed), about 3-4 mins per side, turning once. Remove to a paper towel-lined plate to drain. Serve with dipping sauce
  • Sweet Chili Sauce: Heat oil in a small saucepan over medium heat until hot and add garlic.
  • Cook garlic until golden, about 2 mins and then stir sugar, vinegar, chili paste, lime juice and fish sauce. Bring to a boil and cook until sugar is dissolved, about 3 mins.
  • Stir corn starch and water together in a small bowl and whisk into chili sauce. Cook about 2 mins and remove from heat. Serve sauce hot or at room temperature.
  • *Crab cakes can be held in a 250 degree oven to keep warm.

CRAB CAKES

Whip up delicious ginger and coriander-tinged crab cakes when you're pressed for time.

2cm/1in piece fresh root ginger, peeled
2 red chillies, seeds removed
250g/9oz white crabmeat
1 tbsp roughly chopped fresh coriander
2 spring onions, finely sliced
2 free-range eggs
7-8 tbsp breadcrumbs
plain flour, for dusting
25ml/1fl oz olive oil
sweet chilli jam
few handfuls salad leaves
olive oil, for drizzling
salt and freshly ground black pepper

Steps:

  • Place the ginger and chilli into a mini food processor and pulse until finely chopped.
  • In a bowl combine the chilli and ginger with the white crabmeat, coriander and spring onions. Crack in one egg and mix well, then stir in 4 tablespoons of the breadcrumbs.
  • Divide the crab cake mixture into 6 equal portions and mould into patties. Place on a tray and chill in the fridge for about 20 minutes before cooking.
  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Beat the remaining egg in a small bowl with one tablespoon of water to make an eggwash. Place some plain flour and the remaining breadcrumbs in separate shallow dishes.
  • Dredge a crab cake in the flour, then dip into the egg and coat in the breadcrumbs. Shake gently to remove any excess breadcrumbs. Repeat with the remaining crab cakes.
  • Heat the olive oil in a frying pan and fry the crab cakes for 2-3 minutes on each side, or until crisp and golden-brown all over. Transfer the crab cakes to a baking tray and bake for 5-10 minutes, or until piping hot all the way through.
  • Serve the crab cakes with sweet chilli jam and a mixed leaf salad, lightly dressed with olive oil, salt and freshly ground black pepper.

Juicy fat little nuggets of crabby goodness! I developed this because of a craving for a sweet-hot crab dish I'd enjoyed at a Thai restaurant. I love crabmeat (jumbo lump, please, none of the frozen/canned yuck for *moi*) but dislike most crab-cake recipes because they are either too bready, or somehow involve cheese. Just me personally: I don't like pairing fish with cheese. These succulent cakes will be our dinner entree for New Year's Eve 2011!

1 lb premium lump crabmeat, drained
1 tablespoon freshly-squeezed lemon juice
1 tablespoon ginger, finely minced
5 green onions, chopped
1/2 red bell pepper, finely minced

1 tablespoon vegetable oil
1 teaspoon crushed red pepper flakes
2 tablespoons fresh parsley, chopped

Steps:

  • Gently toss the crabmeat with lemon juice and ginger. Set aside.
  • In oil, saute' onions, pepper, and garlic until it is all soft. Let cool and toss with crabmeat. Add remaining ingredients, except for breadcrumbs.
  • Form into small patties, about 2.5" in diameter. Place on wax paper in freezer for 30 minutes.
  • Remove from freezer and pat with bread crumbs on both sides.
  • Palace on parchment-covered baking sheet and bake for 2 minutes at 350, or until browned.
  • Top with 1 T sweet chili sauce and serve.

1 lb. fish fillets (white-fleshed, such as cod)
3 tbsp. coconut milk
2 1/2 tbsp. fish sauce
1/2 tbsp. chili powder
1/3 tsp. cumin (ground)
1/4 tsp. coriander (ground)
1/2 tsp. brown sugar
1/2 cup bread crumbs
6 makrut lime leaves (cut into thin strips, or 1/2 tsp. grated lime zest )
2 green onions (thinly sliced)
1 inch-sized knob galangal (or ginger, grated)
3 garlic cloves
1 red chili (minced, or 1/8 to 1/4 tsp. dried crushed chili)
1 to 2 tbsp. oil for high-temperature frying (such as peanut oil )

Steps:

  • Rinse fish and pat dry thoroughly. Cut into chunks and place in food processor or large chopper.
  • In a small bowl or measuring cup, combine the coconut milk , fish sauce, chili powder, cumin , coriander, and brown sugar. Stir with a fork to combine, then pour into the processor over the fish.
  • Add 1/2 cup bread crumbs , makrut lime leaf strips, green onion, galangal or ginger, garlic, and chili pepper. Pulse to combine. You should be able to pick this mixture up in your hand and form it into cakes. If you find it too wet, add more breadcrumbs and pulse again until you get a good consistency. (Much of this will depend on the fish you're using and how much moisture it contains).
  • Scoop up a small amount in your hand (about the size of a golf ball), pat into a small cake and set on a clean plate. Note that traditional ​Thai fish cakes are small and not too thick (about 2 inches in diameter and 3/4- to 1-inch thick). It helps to rinse your hands every so often with cool water to prevent the mixture from sticking.
