SWEET AND TANGY SLOW-COOKER BBQ TURKEY THIGHS



Sweet and Tangy Slow-Cooker BBQ Turkey Thighs image

Cranberries lend a wonderful tartness to our sweet-and-sour barbecue sauce. Pair it with its seasonal best friend, turkey, and braise it in a slow cooker.

1 1/2 cups dried cranberries
1/2 cup plus 2 tablespoons cider vinegar
1/4 cup honey
1/4 cup ketchup
2 tablespoons tomato paste
4 teaspoons paprika
4 teaspoons ground mustard
1 teaspoon granulated garlic
1 teaspoon onion powder
Kosher salt and freshly ground black pepper
4 turkey thighs (about 4 pounds 12 ounces)
Mini potato buns, for serving

Steps:

  • Heat the cranberries and 1/2 cup vinegar, covered, in a microwave-safe bowl until the cranberries are softened, 45 to 60 seconds, then transfer to a blender. Add the honey, ketchup, tomato paste, paprika, mustard, garlic, onion powder and 1/2 teaspoon salt, and blend until the cranberries are finely pureed. You should have about 1 1/2 cups of sauce. Reserve and refrigerate 1/4 cup. Pour the remaining 1 1/4 cups into a 6-quart slow cooker.
  • Stir together 1 tablespoon salt and a few grinds of pepper in a small bowl to combine.
  • Remove the skin from the turkey thighs, and discard. Place the thighs on a large plate, dry well with paper towels and season both sides with the salt-and-pepper mixture. Place the thighs in the slow cooker, and turn to coat in the sauce. Cover with the lid, and turn the heat to high for 4 hours, until the meat is falling off the bone.
  • Transfer the thighs to a plate, and let cool for about 10 minutes. Stir the reserved sauce and the remaining 2 tablespoons vinegar back into the pot. When the thighs are cool enough to handle, shred the meat into 1/2-inch strips. Return the meat to the sauce, and stir to coat. Make sandwiches with the meat and potato buns, and serve. Or let the meat cool, and refrigerate up to 2 days.

2 cups butter, divided
1 (15 pound) whole turkey, neck and giblets removed
¼ cup chicken soup base
3 sweet onions, peeled and cut into wedges
5 apples, cored and cut into wedges
2 tablespoons minced garlic, or to taste
1 (750 milliliter) bottle dry white wine

Steps:

  • Preheat a gas grill for low heat.
  • Rub some of the butter all over the turkey, inside and out, then rub all over with chicken base. Cut remaining butter into cubes and toss with onions, apples, and garlic in a large bowl. Stuff the bird with this mixture and place in a disposable aluminum roasting pan. Fold the turkey skin around the neck area to cover the hole and then turn the turkey over and pour wine into the opening at the other end until the turkey is full or the bottle is empty. Set the turkey breast side up.
  • Place the roasting pan on the grill and cover loosely with aluminum foil. If you have a pop up timer or heat safe meat thermometer, insert it into the turkey breast. Close the lid.
  • Roast until the temperature in the breast reads 170 degrees F (75 degrees C) and the temperature in the thickest part of the thigh reads 180 degrees C (80 degrees C), about 4 hours depending on the temperature of your grill. When the temperature is getting close, remove the aluminum foil covering the turkey and allow it to brown during the final minutes of cooking. If it starts to brown too much, just cover it back up. Allow the turkey to rest for at least 20 minutes before carving.

2 teaspoons coarse-ground pepper
salt (to season)
1 teaspoon chili powder
1/4 teaspoon garlic powder

5 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
3 tablespoons orange juice
1 orange, zest of
1 tablespoon cooking oil

Steps:

  • Heat one side of grill medium heat.
  • Brush drumsticks with cooking oil.
  • Sprinkle with coarse-ground pepper, Salt, chili powder, garlic powder.
  • Place the drumsticks on grill not directly over flame.
  • For Glaze- In a small bowl, mix brown sugar, Worcestershire sauce, Dijon mustard, orange juice and zest.
  • Brush a little on turkey.
  • And continue to baste till done.
  • Lower grill hood and grill for 45 minutes to 1 hour or until tender but no longer pink, turning once.
  • Place on foil if turkey gets to brown.

1/2 cup granulated sugar*
12 sprigs fresh thyme
3 bay leaves
6 bone-in turkey thighs with skin (about 4 lb/2 kg)
1 tsp sage, crumbled
1/2 tsp dry mustard
1/2 tsp garlic powder
1/2 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp freshly ground pepper
Mustard Barbecue Sauce*

Steps:

  • To prepare brine, combine water, salt, sugar, thyme and bay leaves in a medium saucepan. Bring to a boil.
  • Reduce heat and simmer, stirring, until salt and sugar are dissolved. Remove from heat and cool slightly.
  • Pour brine into a heatproof bowl and cool to room temperature, stirring occasionally. Refrigerate until cold.
  • Pour brine into an extra-large heavy zip-lock plastic bag. Submerge turkey thighs in brine, adding cold water if necessary to cover turkey. Seal bag and place in a large food-safe container. Refrigerate for 4 hours.
  • Remove turkey from brine; discard brine, thyme and bay leaves. Rinse turkey under cold running water and pat dry. Combine sage, mustard, garlic powder, coriander, cumin and pepper; spread mixture over both sides of turkey thighs.
  • Grill turkey over medium heat on natural gas barbecue until a meat thermometer inserted into thickest part of thighs registers 180 - 185ºF, about 15 - 20 minutes per side.
  • Serve with Mustard Barbecue Sauce.

2 turkey thighs

2 Tablespoons butter

Steps:

  • Preheat the oven to 400 degrees.
  • Lightly drizzle a small amount of oil on the bottom of the pan.
  • Spread the sliced onions into a layer on the bottom of the pan.
  • Season the turkey thighs on each side with salt, pepper and poultry seasoning to taste (the poultry seasoning is strong so use a light hand with this).
  • Cut each pat of butter into smaller cubes and place them on various spots all over the skin on each turkey thigh.
  • Place the turkey thighs, skin side up, on top of the onions.
  • Roast for 50 minutes-1 hour until they reach an internal temperature of 165 degrees.

4 turkey thighs (about 4 pounds)
1 tablespoon chili powder

1/2 cup ketchup
1/4 cup packed light brown sugar
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar

Steps:

  • Spread the onions in the bottom of a 6- to 8-quart slow cooker. Rub the turkey thighs with the chili powder, cumin, 1 teaspoon salt and 1/2 teaspoon pepper and place over the onions. Stir together the ketchup, sugar and mustard and pour over the turkey. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours. The turkey should be very tender with the meat falling off the bones.
  • Uncover and stir. Let cool for 10 minutes. Using two forks, shred the turkey meat, discarding the bones. Stir in the vinegar and season to taste with salt and pepper. Serve on hamburger buns with pickles and/or coleslaw if desired.

  • Whisk together brown sugar, barbecue sauce, ketchup, honey, and soy sauce in a large glass or ceramic bowl. Set aside 1/2 cup of the mixture and refrigerate for basting. 2 1/2 to 3 pounds turkey thighs with skin and bones
4 large garlic cloves
Salt
1 tablespoon chili powder

Steps:

  • Pull off turkey skin and freeze in a small resealable plastic bag. (You can use the skin to make cracklings for our Shredded Kale Salad with Turkey Skin Cracklings. )
  • Cut out the thigh bone from each thigh and save in another resealable plastic bag in the freezer for a future stock.
  • Mash garlic to a paste with 2 teaspoons salt in a mortar and pestle or mince and mash to a paste with a heavy knife.

  • Grilling Procedure:
  • Charcoal Grilling Instructions: Open vents on bottom of grill. Light a large chimney starter full of charcoal (preferably hardwood).
  • For Direct-Heat Instructions: When coals are lit, dump them out across bottom rack, leaving a space free of coals on one side of grill equal to the size of the food to be grilled where food can be moved in case of any flare-ups.
  • When charcoal turns grayish white (start checking coals after 15 minutes), the grill will be at its hottest and will then begin to cool off. It will be at the proper medium-hot temperature when you can hold your hand 5 inches above the grill rack (directly over the coals) for 3 to 4 seconds.

Steps:

  • Gather the ingredients and heat the oven to 350 F.
  • Pat the turkey dry with paper towels. Never rinse the turkey before cooking it because the bacteria on the meat's surface will aerosolize and spread around your kitchen. A good pat dry is a reliable procedure and enough for the seasonings to adhere to the skin.
  • In a small bowl, combine the softened butter, salt, pepper, garlic, thyme, and sage and mix well.

  • Get your grill ready as described above. Coat the turkey thighs in the vegetable oil and salt well. Lay them skin side down on the cooler side of of the grill. Cover and cook until the meat is just starting to fall off the bone, flipping every 30 minutes or so to paint with the maple-bourbon BBQ sauce. Let the turkey cook without sauce while you make it.
  • Once the turkey is on the grill, make the sauce by sauteing the grated onion in the butter for a few minutes. You don't want the onion to brown, but you do want it to cook enough to lose that raw onion smell and flavor. This should take 5 minutes or so on medium heat.
