NANNIE RUBY'S DAGO BREAD
My mother-in-law showed me how to make this bread before her son and I were married. She learned it from her mother-in-law who was an immigrant from Sicily. Our family tradition is to have this bread on Christmas Eve. We take a slice of bread and put olive oil, salt and pepper on it and eat it. We also cook homemade Italian sausage and wrap it in a slice of Nannie's bread.

Steps:
- Mix flour, yeast and salt.
- Dissolve honey in one cup warm water.
- Add two cups warm water and olive oil to honey mixture.
- Add liquid to dry ingredients and mix by hand or KitchenAid mixer using dough hook.
- Knead dough about 5 minutes. Place in bowl with a little olive oil in the bottom. Turn dough to coat with oil. Place in warm, draft free area to rise(about 50 min).
- Take dough out of bowl and knead a second time about 2 min on a floured surface. Place back in bowl, turning dough to coat with oil. Let rise a second time(about 30 min).
- Knead third time - gently about 2 minute
- Divide dough into four parts. Smear butter on work surface. Knead each dough ball with fingertips on buttered surface. Each ball of dough should be rolled up like a jellyroll. I add butter to the work surface as needed.
- Place dough into greased pans. We use PAM to grease the pans.
- Let dough rise again about 30 minutes. I always cover the loaves with a dish cloth while they rise.
- Bake at 350 degrees for 20 minute Lower to 300 degrees and bake 10 minute longer.
- Brush tops of loaves with slightly beaten egg whites.

DAGO BREAD
This recipe was given to me by a dear friend who has passed away. So it is very precious to me. It is also very versatile. You can substitute many of the ingredients and totally change the recipe depending what kind of sandwich you want.So have fun experimenting.

- Let frozen bread thaw and double in size.Pat each loaf out in 9x13 pyrex dishes. Spread 1/2 jar mexican cheese whiz on each loaf.[you may have to heat cheese so it will spread easily] Brown ground beef,onions,and chopped green pepper. Drain, Put meat mixture 1/2 on each loaf. Top with pepperoni and mozarella cheese. Fold bread dough over the filled side and press edeges to seal. Bake til brown 400 degrees 15 to 20 minutes

- Boil potatoes until done but not mushy.
- Before potatoes are done add green beans to potato pot until blanched.
- Drain For Dressing combine all ingredients and let sit.
- The longer you let the ingredients for the dressing sit the better the taste.

Steps:
- Soak dried chilis in warm water to cover until just softened.
- Drain and discard water.
- Finely shred chilis and set aside.
- strain tamarind pulp save juice.
- In a small sauce pan large enough to fit the eggs, heat oil over medium-high heat.carefully add eggs and fry 1-2 minutes turning carefully, until golden brown.
- Remove with slotted spoon to paper towels to drain.
- Remove all but 2 tablespoons of oil from pan.
- Add 2/3 of the shallots and stir-fry for 1-2 minutes or until crispy.
- Remove with slotted spoon to paper towel to drain.
- Add chilis and stir-fry 30 seconds or until crispy.
- Remove with slotted spoon to paper towel to drain.
- Remove all but 1 tablespoon from pan.
- Add remaining shallot and stir-fry 1 minute.
- Add tamarind juice and salt, bring to a boil.
- Add sugar and cook stirring constantly until just combined.
- Add corn starch mixture and cook 1 minute or until slightly thickened.
- Halve eggs and place on a small platter. sprinkle with fried shallots and chilis.
- Drizzle the sauce over eggs and garnish with fresh chili and coriander sprigs.

NANNY'S BROWN BREAD
My grandmother used to make this often and send it to her brother who is/was a monk at Weston Priory, VT. The traditional method of baking is in cans. Coffee cans, vegetable cans. whatever. I'm sure you can use a loaf pan. It's important to let the raisins soak- because that is what gives the bread it's color.

- Preheat oven to 350 degrees. grease 3-4 vegetable cans or 2-3 coffee cans.
- In a medium bowl add raisins, baking soda, and butter.add in boiling water. Stir a little, and let cool.
- In a large bowl mix together flour and sugar. Mix in vanilla, egg, walnuts, and the raisin mixture. Stir unil well blended.

FRENCH SPAGHETTI
My mother in law lived in the city while my father in law was in the war. She did not have a lot of money, so a little French lady taught her to make this spaghetti. She passed it down to all of our familes as we all loved it--hope you do too.

Steps:
- Fry salt pork until brown and crisp--not burned.
- Put on paper towel to drain and cool.
- Drain oil from frying pan; save about 2 tablespoons full.
- Put hamburger in pan; don't break it in little pieces, but put it in a circle on the outer edges of the pan.
- Add the oil from pork to the center of hamburger; add diced onion to oil.
- Do not mix onions and hamburger yet, cook hamburger til it is brown turning pieces toward ouside of pan.
- After hamburger is browned and onion is tender, add soup and water. Gently stir and simmer.
- While sauce is simmering, cook spaghetti and drain.
- Add sauce to spaghetti; break up cooked salt pork into spaghetti and stir gently.
- Put cover on pan and let set for at least 10 minutes.
- ENJOY.
