Steps:
- Heat the oil and butter in a skillet over medium-high heat. Add the rice, orzo and nuts and saute, stirring frequently, until half of the rice and orzo is browned.
- Add the onion and cook for another two minutes.
- Add the chicken stock, salt and herbs and stir to combine.
- Bring it to a boil, reduce the heat to low, cover and cook as you would normally cook rice, about 15-20 minutes (if using white rice, longer if using brown) or until the rice is done.
- Fluff with a fork and serve immediately.

MAMA'S BEEF-A-RONI
When my kids were little that's what they called this. When the week was long and the money short, this made a little meat go a long way. I served this with garlic bread. This looks like it takes a long time to make, but it's really easy. I had to guess on the times, so if you try this please let me know how long it takes and i'll adjust it.

Steps:
- Cook pasta according to package directions; drain.
- While pasta is cooking, on medium heat brown ground beef in large skillet.
- Add onions, peppers, celery, Italian seasoning and garlic powder, stirring until vegetables are tender.
- Drain and return to skillet.
- Stir in pasta sauce; add pasta and mix thoroughly.
- Sprinkle cheese over top; cover with lid and let cheese melt.
- Let sit for about 5 minutes then serve and enjoy.

- Cook the macaroni following pack instructions, adding the peas for the final 3 mins. Drain, reserving a mug of cooking water, then tip the macaroni and peas back into the pan.
- Heat grill to medium. Put the pan back on the heat and tip in the mascarpone, mustard and most of cheese. Mix well and add enough of the reserved cooking water to make a creamy sauce that coats the pasta without it looking dry. Stir in the ham and season to taste.
- Tip into an ovenproof dish and scatter over the breadcrumbs and remaining cheese, then grill for 5 mins until golden.

MOCK-A-RONI
This recipe was created when my baked macaroni and cheese loving husband asked for something more individualized to minimize leftovers. It has been a weekly staple for several years now and our 6 year old now prefers this to traditional baked macaroni.

- Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 10 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a saucepan over low heat; stir Cheddar cheese into melted butter until cheese starts to melt, 2 to 3 minutes. Add milk, egg, Italian seasoning, and black pepper to cheese mixture; cook, stirring constantly, until cheese sauce is smooth and thickened, about 5 minutes. Stir orzo into cheese sauce until evenly coated.
- Spoon orzo mixture into ramekins and top each serving with bread crumbs. Place ramekins in a shallow baking dish.
- Bake in the preheated oven until topping begins to brown, about 30 minutes. Allow 'mock-a-roni' to cool enough to handle ramekins without potholders, about 5 minutes.

- In a large saute pan, heat butter over medium heat. Add broken spaghetti and rice. Stir well to coat with butter. Cook, until pasta is just brown, stirring often (3-5 min).
- Add salt, pepper, onion powder, garlic powder, parsley and stock. Stir well to combine. Bring to a bubble, cover and reduce to a simmer.
- Simmer until rice is cooked through and stock is absorbed, about 20 minutes. Taste for salt and pepper and adjust if necessary.
