BEEF TIPS & GRAVY



Beef Tips & Gravy image

Tender chunks of beef in a rich brown gravy. This meal is perfect over mashed potatoes.

Number Of Ingredients 10

2 tablespoons olive oil
1 onion (chopped)
2 pounds cubed chuck (or stew meat)
10 ½ ounces beef broth
10 ½ ounces French onion soup (condensed)
1 tablespoon Worcestershire sauce
1 bay leaf
salt & pepper (to taste)
3 tablespoons cornstarch
1/3 cup water

Steps:

  • In a large pot or dutch oven, heat 1 tablespoon olive oil over medium-high heat. Season beef with salt and pepper and brown in small batches. Remove beef from the pot and set aside.
  • Turn heat down to medium, add remaining oil and onion. Cook until softened, about 10 minutes.
  • Add beef, broth, soup, Worcestershire sauce and bay leaf to the pot. Bring to a boil, cover and reduce heat to simmer 1 1/2 to 2 hours or until beef is fork tender.
  • To thicken gravy, combine cornstarch with 1/3 cup cold water. Pour into the beef a little at a time while stirring until it reaches desired consistency.
  • Taste and season with salt and pepper. Discard bay leaf and serve over mashed potatoes.

Crockpot Beef Tips are a set and forget it kind of meal. So easy to pull together and yet so incredibly delicious. Dripping with delicious BBQ gravy, when you serve these over mashed potatoes or noodles, your entire family will literally be begging for more.

Number Of Ingredients 7

2 pounds Beef Sirloin Tip Steak, cut into 1 inch pieces , can also use stew meat.
1/2 cup Worcestershire Sauce
1 cup Italian Dressing (not creamy)
2 teaspoons Garlic Pepper Seasoning
1 cup Barbecue Sauce
3 teaspoons water
3 teaspoons corn starch

Steps:

  • In a crock pot on low, place steak pieces on the bottom.
  • Add Worcestershire Sauce, Italian Dressing, Garlic Pepper Seasoning & Barbecue Sauce. Stir to mix.
  • Cook on low for 3 - 4 hours or until internal temperature of beef comes to 160*F (Medium).
  • Once beef comes to 160*F, in a small bowl, mix together the water & corn starch. Add to steak mixture and mix.
  • Cook until sauce has thickened..
  • Serve over mashed potatoes or noodles.

Skirt Steak with Cheesy Mashed Potatoes image

1 1/4 pounds Yukon Gold potatoes, cut into chunks
Kosher salt
1 pound skirt steak, cut in half
Freshly ground pepper
1/2 teaspoon seasoned salt
1 tablespoon vegetable oil
1/2 cup 2% milk
3 slices American cheese, torn into pieces
2 tablespoons unsalted butter
2 scallions, thinly sliced (light and dark green parts separated)
1 cup frozen peas, thawed
Steak sauce, for serving

Steps:

  • Put the potatoes in a medium saucepan and add enough water to cover; season with salt. Bring to a boil, then reduce the heat to a simmer and cook until the potatoes are tender, 12 to 15 minutes. Reserve 1/2 cup cooking water, then drain the potatoes and return to the pan.
  • Meanwhile, season the steak generously with pepper and the seasoned salt. Heat the vegetable oil in a large skillet over medium-high heat. Add the steak and cook until well browned, about 4 minutes per side for medium rare (reduce the heat if necessary). Transfer the steak to a cutting board.
  • Combine the milk, cheese and butter in a small saucepan over medium heat. Cook, stirring, until melted and smooth. Pour into the potatoes and mash, adding some of the reserved cooking water as needed to loosen. Stir in the white and light green parts of the scallions and season with salt and pepper. Cover to keep warm.
  • Heat the peas as the label directs. Slice the steak and divide among plates along with the mashed potatoes. Top the potatoes with the peas and scallion greens. Serve with steak sauce.

7 cloves garlic
½ cup olive oil
½ cup vinegar
½ cup soy sauce
2 tablespoons chopped fresh rosemary
2 tablespoons Dijon-style prepared mustard

1 (2 pound) tri-tip steak

Steps:

  • Place onion, garlic, olive oil, vinegar, soy sauce, rosemary, mustard, salt, and pepper into the bowl of a food processor. Process until smooth. Place steak in a large resealable plastic bag. Pour marinade over steaks, seal, and refrigerate for about 3 hours.
  • Preheat the grill for high heat.
  • Brush grill grate with oil. Discard marinade, and place steak on the prepared grill. Cook for 7 minutes per side, or to desired doneness.

I'm going to show you this very old-school method of making beef tips, which, once made, can be used to top lots of things--but my favorite thing to top with tips is probably Tater Tots®. And if you're looking for new ways to prepare lean, cheap, tough cuts of beef, this is one of my all-time favorite methods. You can give this an upgrade by topping with diced red onion, grated Cheddar cheese, and freshly sliced green onions, or you can serve the beef tips over hot mashed potatoes instead of tots, if you like.

1 ½ pounds beef round steak
1 teaspoon kosher salt, or to taste
½ teaspoon freshly ground black pepper
1 tablespoon vegetable oil
2 teaspoons tomato paste
2 cloves garlic, minced
4 tablespoons butter
2 tablespoons all-purpose flour
2 ¼ cups low-sodium beef broth
1 (28 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)

Steps:

  • Slice beef into 3/4-inch strips; then slice these pieces, at an angle, into smaller "tips." Season beef with salt and pepper.
  • Heat oil in a large skillet over high heat until shimmering. Transfer in beef, arranging in a single layer. Let the meat sear until browned, 3 to 5 minutes, before turning over and browning the other side.
  • Reduce heat to medium and add tomato paste, garlic, and butter. Stir everything until the butter melts, and then stir in the flour. Cook and stir for 1 minute.
  • Stir in broth. Raise heat to high and bring to a simmer. Reduce to low, cover, and cook until beef is starting to get tender, about 1 hour and 15 minutes.
  • Meanwhile, preheat the oven to 425 degrees F (220 degrees C).
  • Uncover, turn heat to medium, and simmer, stirring occasionally, until the sauce has thickened, and the meat is tender, about 30 minutes.
  • While meat simmers, bake potato nuggets in the preheated oven until crispy and heated through, 20 to 25 minutes.
  • Taste beef tips and adjust the seasoning. Serve immediately over hot potato nuggets.
