GRILLED BBQ SPLIT CHICKEN BREASTS
Bone-in skin-on chicken breasts are hard for most people to grill correctly, but with just a few easy tips, you can master grilling split chicken breasts for a wonderfully moist and tasty meal.

- Preheat a gas grill to a surface temperature of 425°-450°. That is medium to medium-high on most grills. Clean and oil the grill grates.
- Pat dry chicken. Trim loose fat and rib section.
- Cut the split chicken breasts into 2-3 equal pieces each.
- A light brushing with oil, and you're good to go.
- Place the chicken pieces skin side up and grill for 5 minutes. Flip over with skin down for 4 minutes. Continue cycles of 5 minutes when skin is up and 4 minutes when skin is down. You can also grill some with the cut sides down.If you only have two burners, turn one burner down at about 10-15 minutes into the cooking. If you have 3 or more burners, turn one end burner down at the beginning of cooking.
- With smaller pieces and pieces browning too fast, move them to the lower temperature area as needed.When the chicken is near done, brush with BBQ sauce about 5 minutes before the end of cooking and then again the last few minutes. Grill until internal temp of 165°. The total cooking time is about 30 minutes.

BARBECUE CHICKEN

- Rinse chicken halves in cold water and pat dry with paper towels. Place chicken in a large bowl or baking dish, coat with Italian dressing and evenly season with Neely's Barbecue Seasoning. For best results, allow the chicken to marinate in the refrigerator overnight.
- If cooking inside: Take the chicken out of the refrigerator and brush chicken with Neely's Barbecue Sauce.
- Place into a preheated 350 degree F oven for 45 minutes.
- If grilling outside: Thirty minutes before you're ready to cook, take the chicken out of the refrigerator and allow it to come to room temperature. Preheat the grill to a medium temperature, about 275 degrees F preferably over hickory and charcoal.
- Place the chicken halves on grill, meat side down. Cover grill and cook for about 50 minutes. Flip chicken over and let it brown until the chicken becomes golden, about 15 to 20 minutes. The wing and the drumstick should become very tender and will easily pull away at the joints. Brush the chicken with Neely's Barbecue Sauce during the last 5 minutes of cooking.
- Mix all the ingredients together in a bowl, except the oil and salt and pepper. Slowly whisk in the oil and season with salt and pepper, to taste.
- Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
- In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
BBQ SPLIT CHICKEN BREASTS RECIPE

- For the Marinade: Combine all of the Marinade ingredients in a medium bowl, and whisk together until well mixed. Place Marinade in a large re-sealable plastic bag. (If necessary, split the marinade and chicken into two bags.) Add the split chicken breasts and squeeze any air out of the bag. Refrigerate at least 3 hours or overnight. For the BBQ Basting Sauce: Combine all of the BBQ Basting Sauce ingredients in a small bowl. Whisk together until well mixed; set aside. For the Chicken: Preheat a gas or charcoal grill to medium heat. Meanwhile, remove the chicken from the marinade and shake off any excess liquid. Place the split chicken breasts on the grill bone side down, and cook for 13-15 minutes. Flip chicken breasts and cook skin side down for 5-7 more minutes. Flip chicken breasts over and brush generously with the BBQ Basting Sauce. (Discard any remaining Basting Sauce.) Continue cooking bone side down for another 5-7 minutes, or until internal temperature of the chicken reaches 165°F.

EASIEST BAKED BBQ SPLIT CHICKEN BREASTS
With just two ingredients, you can have a moist and tasty dinner with this simple method for a great baked BBQ split chicken breast. This requires a cooking skill level of 2/10. You can do it.

- Start with preheating the oven to 400° convection or 425° conventional. I started my Memphis sauce at the same time. You may leave the ribs or remove them, your choice. Trim and split your split skin-on bone-in chicken breasts. Pat dry.
- Prepare a smaller baking pan with aluminum foil (to help clean up) and a cooking rack sprayed with PAM. If you don't have a rack, you can skip it.
- Arrange the breast with the thicker parts of each piece to the outside of the pan.
- Bake until internal temp of 160°. That will be about 40 minutes depending on your oven and the size of the breasts. Remove from oven and brush on a coat of sauce. Place back in for another 5 minutes. Double-check that the internal temperature of the chicken is now at least 165° before removing.
- Remove from oven and apply another coat of sauce.

Steps:
- Preheat oven to 400 degrees.
- Sautee onions in butter, margarine or oil over medium heat, until soft.
- Place chicken breasts in casserole dish and season with salt (or seasoning salt), pepper and garlic.
- Pour mushrooms and sauteed onions over chicken. Cover with BBQ sauce.
- Cover dish with lid or aluminum foil. Bake for 1 hour (2 hours if breasts are frozen).
