CRISPY SPICY FRENCH FRIES
I found the recipe on the internet. It's amazing. I have also used frozen french fries instead of fresh potatoes and it came out great.

Steps:
- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat.
- While the oil is heating, sift the flour and spices into a large bowl.
- Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first.
- The fries must be placed into the skillet one at a time, or they will clump together.
- Fry until golden brown and crispy.
- Remove and drain on paper towels.
BBQ SPICE RUB

- Whisk garlic salt, onion salt, salt, and paprika together in a bowl. Transfer to a sealable container for storage.

SWEET LOU'S BBQ FRIES
Steps:
- Preheat a deep-fryer to 375 degrees F.
- Fry the waffle fries until crispy; transfer to a serving plate.
- Fry the bacon and transfer to a saute pan. Add the Braised Beef Rib and barbecue sauce; heat until hot and well combined. Place the beef-bacon mixture on the fries. Drizzle a little barbecue sauce over the meat. Top with a generous portion of Coleslaw.
- Preheat the oven to 500 degrees F.
- Place the beef in large roasting pan; rub with the oil and sprinkle with 1 tablespoon salt. Roast for 12 minutes.
- Meanwhile, place 1/2 cup of the stock and the onions, carrots, celery and garlic in a blender; blend until almost smooth.
- Remove the beef from the oven and reduce the heat to 325 degrees F. Deglaze the pan with the vegetable mixture. Add the remaining stock until it comes halfway up the sides of the meat. Double wrap the roasting pan with plastic wrap, and then foil. Return to the oven and braise for 5 hours.
- Let cool before shredding into bite-size pieces.
- Whisk together the mayonnaise, vinegar, Dijon, honey, celery seed and a pinch of salt in a bowl.
- In a second bowl, mix together the green cabbage, red cabbage and carrots. Pour the dressing over the cabbage mixture; mix well. Let sit in the refrigerator for 1 hour.
SWEET-HOT BBQ TATER FRIES
A brown sugar-rosemary rub spiked with cayenne, plus a round of cooking on the grill, gives these sweet potato fries tons of summery flavor.

- Prepare barbecue (medium heat). Place potatoes in 13x9x2-inch baking dish. Add 1/4 cup oil, chopped fresh rosemary, brown sugar, garlic powder, and cayenne pepper to potatoes. Sprinkle potatoes with salt and pepper; toss to coat. Brush grill lightly with oil. Place potatoes on grill, spacing about 1 inch apart. Grill until potatoes are tender and slightly charred, turning occasionally, about 10 minutes total. Transfer potatoes to bowl, season to taste with salt and pepper, and serve.

Steps:
- Sprinkle cornstarch on the raw french fries.
- Toss to coat.
- Heat oil in a wok/frypan.
- Fry the cornstarch coated french fries till nice and crisp.
- Keep aside.
- In a bowl, mix together the chilli sauce, honey, vinegar, soya sauce and salt.
- Keep aside.
- Reomve all, but 2 tblsps, of the oil from the wok/frypan and put it back on the burner.
- Heat the oil.
- Add spring onions and green pepper and cook them for barely 30 secs.
- Pour in the chilli sauce mixture.
- Give it a few turns and add the cornstarch coated french fries.
- Toss to coat the fries with the sauce.
- Remove from fire.
- Serve immediately.
