SUNNY'S OPEN-FACED GRILLED BLT

One 13.8-ounce pop-tube pizza dough
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh rosemary
2 cloves garlic, grated on a rasp
Kosher salt and freshly ground black pepper
1 tablespoon light brown sugar
1/4 teaspoon cayenne pepper
Zest of 1 lemon
Freshly ground black pepper
4 slices thick-cut bacon
Two 1-inch slices beefsteak tomato
One 1-inch slice iceberg lettuce or 1 heart of romaine, sliced lengthwise
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
1 teaspoon honey
1 teaspoon lemon juice
1 teaspoon sriracha seasoning

Steps:

  • For the bread: Preheat the grill to 400 degrees F.
  • Lay out the dough on a work surface and sprinkle with the olive oil, parsley, rosemary, garlic, a pinch of salt and a few grinds of pepper. Fold it over itself and roll out or just press with your hands to make a square that could fit four slices of bread, because that's the goal. (You will eventually want to cut this into fourths to serve.) Place on the direct heat of the grill and cook until it releases from the grill and is slightly golden brown, 3 to 5 minutes. Flip and cook until done, 5 to 8 minutes.
  • For the bacon: Mix the brown sugar, cayenne pepper, zest and a few grinds of black pepper in a bowl. Press the bacon into this mixture and place on a piece of nonstick aluminum foil on the grill. Cook, without flipping, until the bacon is crispy, 18 to 20 minutes. Remove from the grill and roughly chop.
  • For the tomatoes and lettuce: Brush the tomato slices and lettuce with olive oil and sprinkle with a pinch of salt and pepper. Place the tomatoes and lettuce directly on the grill and cook, flipping halfway through, until the tomatoes and lettuce are slightly charred, 3 to 5 minutes.
  • Build the sandwiches: Mix the mayonnaise, honey, lemon juice and sriracha seasoning in a small bowl. Chop the grilled tomatoes and lettuce. Add the chopped tomatoes to the bread and press them slightly into the bread, then add the chopped bacon and piles of lettuce. Drizzle with the sriracha mayonnaise. Cut into four pieces and serve.

Barbecued Shrimp

1 teaspoon vegetable oil, plus 3 tablespoons
3 ounces (about 5 large) shallots, peeled and sliced
1/2 cup dry white wine
1 tablespoon Champagne vinegar
1/2 cup heavy cream
1/2 cup (4 ounces) unsalted butter, cut into small pieces
1/2 lemon, juiced
Salt
White pepper
1/2 pound (about 20 small) peeled shrimp
1/2 cup mayonnaise, preferably homemade
12 thin slices sourdough bread
2 cups baby lettuce or 8 nice pieces romaine or iceberg lettuce
1 (1/2 pound) tomato, cut into 12 thin slices
6 ounces (12 thick slices) bacon, cooked and drained
Black pepper

Steps:

  • Preheat the barbecue or grill.
  • In a medium saucepan, heat 1-teaspoon oil. Sweat the shallots for about 2 minutes. Do not brown. Deglaze the pan with the wine and vinegar and reduce slightly. Pour in the cream and reduce the sauce by half. Whisk in the butter and strain into a clean pan. Season with lemon juice, salt, and pepper, to taste. Keep warm.
  • Sprinkle the 3 tablespoons vegetable oil over the shrimp. Grill the shrimp, about 1-1/2 minutes on each side. Do not overcook. Drain and cut each shrimp in half lengthwise.
  • For each sandwich, spread a little mayonnaise on 1 slice of bread and arrange a little lettuce (or 1 piece) on the bread. Top with 3 slices of tomato, season lightly with salt and pepper, and arrange the bacon on the tomatoes. Top with the second slice of bread, a thin layer of mayonnaise, and a little lettuce. Heat the shrimp (10 halves) in the lemon butter and arrange on the lettuce. Top with the third slice of bread and cut in half. Serve immediately.

16 medium shrimp (about 12 ounces), peeled and deveined
Juice of 1/2 lemon
2 teaspoons Old Bay seasoning
1/3 cup sour cream
1/3 cup mayonnaise
2 dill pickle sandwich slices, chopped, plus more slices for serving
Kosher salt and freshly ground pepper
8 slices bacon
8 slices potato bread
4 inner Bibb lettuce leaves
2 large tomatoes, sliced
Potato chips, for serving

Steps:

  • Toss the shrimp with the lemon juice and 1 teaspoon Old Bay seasoning in a medium bowl. Whisk the sour cream, mayonnaise, chopped pickles, the remaining 1 teaspoon Old Bay and 1/4 teaspoon each salt and pepper in a small bowl. Set aside.
  • Cook the bacon in a large skillet over medium heat until crisp, about 7 minutes. Remove to a paper towel-lined plate and discard all but 1 teaspoon of the fat in the skillet. Return the skillet to medium-high heat. Add the shrimp in a single layer along with the liquid. Cook, flipping the shrimp halfway through, until opaque and cooked through, 3 to 4 minutes.
  • Lightly toast the potato bread and spread each slice with the sour cream mixture. Sandwich with the lettuce, tomatoes, shrimp, pickle slices and bacon. Serve with potato chips.

Adapted from a recipe in Redbook. The original recipe used Artic Char -- which I am not able to buy where I live -- subbed catfish and thick bread (challah, toasted) -- buns worked fine for us.

7 slices bacon (I used peppered bacon)
1/3 cup fat-free mayonnaise
1 orange, grated zest and juice
1/2 teaspoon Dijon mustard
1/2 teaspoon pressed garlic (original recipe used garlic paste)
1/4 teaspoon pepper
4 sandwich buns, toasted if desired
1 lb catfish, cut into 4 pieces
salt and pepper
lettuce leaf
1 tomatoes, sliced

Steps:

  • Heat a grill pan over medium heat and cook bacon (I use thick peppered bacon which takes longer to cook -- about 10-20 minutes). Drain on paper towels.
  • Drain excess grease from pan and after salt and peppering fish cook fish in same pan (5-10 minutes per side depending on thickness of fish).
  • In a small bowl mix together dressing (mayo - salt and pepper).
  • Toast buns and spread mayo mixure on bottom of bun, add lettuce tomato slice, bacon and 1 piece fish top with lettuce and tomato and top bun (spead with mayo mixture) mayo side down.
  • Repeat for rest of the sandwiches.

A delicious BLT sandwich prepared either with bacon or vegetarian bacon. I came up with this recipe after having just come home from the farmers' market with a large bag of fresh produce, a rumbly tummy, and determination on my face. If you're taking the vegetarian route, you can use Morning Star Farms' brand fake bacon ("facon") or we prefer to use tempeh bacon because the slices are thick. For regular bacon, if you're a black pepper lover, try pepper bacon from the deli! My brother suggested the optional avocado and sprouts.

1 loaf of your favorite artisan style bread such as olive bread, multi grain or 1 loaf seeded bread, etc
4 slices bacon or 4 slices vegetarian bacon
baby spinach leaves or both mixed greens and spinach, rinsed and patted dry
2 small firm roma tomatoes, sliced or 2 small yellow tomatoes
1 small red onion, sliced
mayonnaise, for spreading
salt or fresh ground pepper
fresh basil leaf (not dried)
avocado, sliced (optional)
alfalfa sprout (optional)

Steps:

  • Cook bacon until crisp and set aside on a paper towel to soak up the grease, if necessary.
  • You can toast or leave untoasted the bread. Cut bread into sandwich slices.
  • Spread a little bit of mayonnaise or pesto onto one side of each slice of bread.
  • Layer the bacon, the salad greens, the tomatoes, the red onion, and basil leaves, the avocado and alfalfa sprouts if using onto one slice of bread. I use about four basil leaves for each sandwich. Season sandwich with salt and pepper if desired.
  • Place the other slice of bread on top and very gently push down on the sandwich.
  • Cut in half or in quarters.
  • Serve with a smile on your face.

1 French bread, cut crosswise into thirty 1/4 inch slices
1 tablespoon olive oil
1/4 lb bacon or 1/4 lb pancetta
3/4 lb shrimp, cooked and coarsely chopped
1/2 cup light mayonnaise, plus more for spreading
2 tablespoons basil, fresh chopped
1 1/2 tablespoons fresh lemon juice
salt & freshly ground black pepper
Old Bay Seasoning (optional)
3 ounces baby arugula
4 small plum tomatoes, thinly sliced crosswise

Steps:

  • 1. Preheat the oven to 350°. Spread the baguette slices on a large rimmed baking sheet and bake for about 8 minutes, or until just crisp. Let cool.
  • 2. In a large skillet, heat the olive oil. Add the pancetta slices or bacon in an even layer and cook over moderate heat until crisp, about 2 minutes per side. Drain on paper towels and crumble.
  • 3. In a medium bowl, mix the shrimp with the mayonnaise, basil and lemon juice and season with salt and pepper.
  • 4. Spread a thin layer of mayonnaise on each of the baguette slices. Top with an arugula leaf, a slice of tomato and a scant tablespoon of the shrimp salad. Sprinkle with the crumbled pancetta and serve.
  • Make Ahead The shrimp salad can be refrigerated for up to 2 days.
