BBQ JACKFRUIT RECIPE

Jackfruit is seasoned with a bbq rub and simmered in flavorful barbeque. Place this tasty bbq Jackfruit on a hamburger bun, and you will have yourself a vegan pulled pork sandwich.

2 20oz cans green jackfruit in water
2 tbsp brown sugar
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp cayenne powder
1 tbsp mustard powder
½ tsp chili powder
2 tbsp olive oil
2 tsp lemon juice
2 tbsp water
¾ cup BBQ sauce
6 vegan buns

Steps:

  • Place the jackfruit into a colander and rinse it under cold water. Pat the jackfruit dry with paper towels and slice the cores of the jackfruit.
  • Whisk the brown sugar, paprika, garlic powder, onion powder, salt, cayenne pepper, chili powder in a bowl.
  • Sprinkle the seasoning over the jackfruit and toss to coat it.
  • Place the olive oil into a skillet, heat it over medium-high heat, and add the jack fruit once it is hot.
  • Cook the seasoned jackfruit for 2-3 minutes until the jackfruit develops a slightly browned color.
  • Add the bbq sauce, lemon juice, and water, place the lid on the pot, and cook for 20 minutes, periodically stirring.
  • Use two forks to shred the jackfruit, cover the pot and cook it for an additional 15 minutes.
  • Place the jackfruit onto the bottom buns and add the top bun.
  • Serve and enjoy!

Use jackfruit to make this clever vegan 'pulled' meat substitute, perfect for stuffing into bread rolls and enjoying with all the barbecue trimmings

1 tbsp vegetable oil
1 red onion, finely chopped
1 tsp ground cinnamon
1 tsp cumin seeds
2 tsp smoked paprika
2 tsp chipotle Tabasco
1 tbsp apple cider vinegar
4 tbsp BBQ sauce
200g can chopped tomato
2 x 400g cans young jackfruit in salted water

Steps:

  • Heat the oil in a frying pan and cook the onion until very soft, for around 10-12 mins. Add the cinnamon, cumin and paprika to the onions and cook for a further 2-3 mins. Next add the Tabasco, vinegar and bbq sauce and mix well before adding in the tomato, the drained jackfruit and 200ml water. Leave to simmer gently, covered, for 30 mins stirring every 5-10 mins to help break down the jackfruit, then take the lid off and cook a further 10 minutes.
  • Once cooked, use a fork to make sure all of the jackfruit is well shredded. Check seasoning and add another tbsp of bbq sauce if necessary for extra stickiness.

4 tablespoons pure maple syrup
2 teaspoons apple cider vinegar
1 tablespoon vegan worcestershire sauce
1 1/4 tablespoons molasses
1 teaspoon Dijon mustard
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon pepper

Steps:

  • Slice onions into thin slivers.
  • Saute sliced onions and garlic ina non-stick skillet.
  • Use vegetable broth to avoid sticking.
  • Drain and rinse canned jackfruit.
  • Put all the jackfruit into a food processor with a large blade and pulse until shredded.
  • When onions and garlic are browned, add shredded jackfruit the skillet.
  • Cook, on medium, stirring until jackfruit is completely dried out.
  • Add vegetable broth while cooking to avoid sticking.
  • All fluid should be dissipated before adding BBQ sauce.
  • Then add as much BBQ sauce as you like until jackfruit is coated.
  • You may serve now on buns, in a wrap, or even as a salad topping, or you can store and reheat when ready to use.
  • HEALTHY HOMEMADE BBQ SAUCE.
  • Sauté the onions and garlic in a medium-sized saucepan until translucent.
  • Combine all other ingredients.
  • Bring to a boil.
  • Reduce to simmer.
  • Cook 20 minutes on simmer until sauce thickens.
