Gingered Gin And Tonic Food

Steps:
- Add ice to 4 stemless white wine glasses.
- Divide the gin, tonic, club soda and lime juice evenly among the glasses and stir. Garnish each with a lime twist.

Steps:
- Combine first 3 ingredients in heavy small saucepan over medium heat. Stir until sugar dissolves. Increase heat and boil until reduced to 1 1/3 cups, about 3 minutes. Cool syrup; then strain. (Can be made 1 week ahead. Cover; chill.)
- Mix tonic water, gin, lime juice and 1/2 cup ginger syrup in glass measuring cup. Taste, adding more syrup, if desired (reserve remaining syrup for another use). Divide ice among 4 tall glasses. Pour gin-and-tonic mixture over. Garnish with fresh ginger slices and lime wedges, if desired.

The best gin and tonic is all in the technique, because the most important ingredient in a G&T is not really the gin, or even the tonic. It's carbonation.

- Fill a highball or Collins glass about two-thirds full with ice, then add about 2 oz. tonic, followed by 2 oz. gin and the remaining tonic. Garnish with a grapefruit slice, lime wedge, cucumber slice, or fresh herbs if desired.
