GOOD OLD BREAD & BUTTER PUDDING WITH A MARMALADE GLAZE & CINNAMON & ORANGE BUTTER



Good old bread & butter pudding with a marmalade glaze & cinnamon & orange butter image

Everyone loves a classic bread and butter pudding and the marmalade gives this one zing.

FLAVOURED BUTTER
100 g unsalted butter, softened
1 large pinch ground nutmeg
1 large pinch ground cinnamon
1 large orange, zest of
PUDDING
8 x 1 cm slices good-quality bread
9 large free-range eggs
140 g caster sugar
500 ml semi-skimmed milk
565 ml single cream
1 vanilla pod, scored lengthways and seeds removed
4 tablespoons good-quality fine-cut marmalade

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • First make your flavoured butter by mixing the butter with the nutmeg, cinnamon and orange zest. Use a little of it to butter a medium-sized shallow, ovenproof dish.
  • Butter the bread using the flavoured butter, then cut each slice in half diagonally. Put the slices in your buttered dish.
  • Now separate the eggs, reserving all 9 yolks but just 1 egg white. Whisk together the egg yolks and egg white with the sugar, then gently heat the milk and cream in a saucepan with the vanilla seeds and pod. Pour into the eggs, stirring all the time. Remove the vanilla pod then pour the mixture over the bread and leave to soak for at least 20 minutes.
  • Put the dish in a roasting tray and pour in enough boiling water to come halfway up the side of the dish. Then put it in the preheated oven for about 45 minutes, or until the custard has just set.
  • Meanwhile, gently warm the marmalade in a saucepan, then remove the dish from the oven and brush the marmalade over the top of the bread. Pop the dish back into the oven for another 5 to 10 minutes. Allow it to cool and firm up slightly before serving.

1 cup apple butter
6 croissants, split
CUSTARD:
8 large eggs
3 cups 2% milk
1-1/2 cups sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
STREUSEL:
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon salt
1/4 cup cold butter

Steps:

  • Place raisins in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain and set aside., Combine apple butter and raisins. Spread over croissant bottoms; replace tops. Cut each croissant into 3 pieces; place in a greased 13x9-in. baking dish., In a large bowl, combine the eggs, milk, sugar, vanilla and salt. Pour over croissants; let stand for 30 minutes or until bread is softened., In a small bowl, combine the flour, brown sugar and salt. Cut in butter until mixture resembles coarse crumbs. Sprinkle over top., Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Serve warm. Refrigerate leftovers.

1 cup packed brown sugar
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup 2% milk
3 medium tart apples, peeled and chopped
2 tablespoons butter, cubed
2 cups boiling water
Vanilla ice cream, optional

Steps:

  • Preheat oven to 400°. In a large bowl, mix the first five ingredients. Add milk; stir just until blended. Fold in apples. Transfer to a greased 2-1/2-qt. deep baking dish. Dot with butter., Pour boiling water over top. Bake, uncovered, 40-45 minutes or until golden brown. Let stand 15 minutes before serving. If desired, serve with ice cream.

8 slices day-old crusty white bread , crusts removed
50g very soft butter
4 tbsp Seville orange marmalade , plus 4 tsp
300ml full-fat milk
248ml pot double cream
3 large eggs
seeds 1 vanilla pod
4 tbsp golden caster sugar
1 tbsp whisky
icing sugar , for dusting

Steps:

  • Butter each piece of bread on both sides, then spread 4 with the 1 tbsp marmalade each. Pop the remaining bread on top to make 4 marmalade sandwiches. Cut into triangles and nestle in rows in a large baking dish. Heat oven to 160C/140C fan/gas 3.
  • Beat the milk, cream, eggs, vanilla, sugar and whisky together, then pour over the bread. Leave to soak for 30 mins.
  • Dot the remaining marmalade all over the top of the pud and dust with the icing sugar. Bake for 45 mins-1 hr or until puffy and starting to caramelise where the bread breaks out of the custard. Serve hot or warm.

4 cups soft bread cubes
¼ cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1 ¾ cups milk
¼ cup margarine
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
2 eggs, beaten
¼ cup white sugar
¼ cup brown sugar
½ cup milk
½ cup margarine
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
  • In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
  • Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
  • While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

6 slices brown bread
1 1/2 tablespoons butter
1 1/2 tablespoons orange marmalade
1 tablespoon almonds
1 tablespoon walnuts
1 tablespoon raisins
1 lemon zest
3 tablespoons powdered jaggery
3 cups skim milk
2 eggs

Steps:

  • remove the crust from bread slices.
  • spread 3 slices with butter n remaining 3 slices with marmalade.
  • cut each slice of bread diagonally into half to get 12 pieces.
  • lightly butter a glass ovenproof dish and arrange the butter slices with the buttered side down at the bottom of the dish.
  • sprinkle half the nuts, raisins , jagerry and lemon zest over the slices in the dish.
  • spread the marmalade spread triangular pieces of bread over the dry fruit layer with the marmalade side up
  • sprinkle remaining nuts n raisins jaggery n zest.
  • beat together milk n eggs n pour over the bread layers
  • leave in the refrigerator for 1 hr so that the liquid can be soaked by the bread
  • bake in a preheated oven at 180*c for 40 min until the bread turns golden brown n the custard mixture has set completely.
  • serve warm.

2 Granny Smith apples, unpeeled and cut into matchsticks
Juice of 1 lemon
1 tablespoon unsalted butter, room temperature
1 day-old, 8-ounce loaf brioche
1 1/4 cups heavy cream
3 large eggs
1/2 cup sugar
1/2 teaspoon salt
2 teaspoons pure vanilla extract
1/4 teaspoon ground nutmeg
Caramel Bourbon Vanilla Sauce

Steps:

  • Heat oven to 325 degrees. Place apples in a small bowl, and toss with lemon juice; set aside. Butter six 8-ounce ramekins or custard cups; place in a roasting pan. Cut brioche into 8 slices, then quarter each slice; set brioche aside.
  • In a large bowl, whisk together cream, eggs, sugar, salt, vanilla, and nutmeg. Add brioche, and toss to coat.
  • Place 1 tablespoon sauce into each ramekin. Add approximately 1/3 cup apple mixture, then 1/3 cup bread mixture. Add a second layer of sauce, apple, and bread.
  • Fill roasting pan with hot water to within 1/2 inch of ramekin tops. Cover pan with foil.
  • Carefully place the roasting pan on the center oven rack. Fill roasting pan with hot water to within 1/2 inch of ramekin tops. Cover pan with aluminum foil. Cook 20 minutes. Remove foil; cook 20 minutes more. Remove roasting pan from the oven, and transfer ramekins to a wire rack to cool 5 minutes. Using a towel, invert ramekins onto serving platter. Serve warm with remaining caramel sauce on the side.

TOFFEE APPLE BREAD & BUTTER PUDDING

Bonfire night treat meets classic comfort food in this doubly delicious dessert that your family won't be able to resist

3 red dessert apples
juice 1/2 lemon
4 tbsp golden caster sugar
397g can caramel (we used Carnation)
6 brioche finger rolls, sliced into rounds
3 eggs
400ml full-fat milk
200ml double cream
1 tsp vanilla extract
ice cream , to serve (optional)

Steps:

  • Core the apples, then slice into rings about as thick as a 50p piece. Toss through the lemon juice and 2 tbsp sugar. Spread about 2 /3 of the caramel over the base of a large baking dish (ours was 20 x 30cm).
  • Layer the brioche and apple rings in the dish in overlapping lines. Dot spoonfuls of the leftover caramel here and there, leaving bits of apple poking out.In a jug, whisk the eggs, milk, cream, vanilla extract and 1 tbsp sugar. Pour the mixture over the brioche and apples, making sure it's all well covered, then wrap in cling film. Set aside for at least 30 mins, or overnight, in the fridge.
  • Heat oven to 170C/150C fan/gas 3. Uncover the pudding and scatter with the remaining 1 tbsp sugar. Bake for 45-50 mins until the top is golden and the custard has set. The caramel should be bubbling around the edges and the pudding puffed up. Serve with vanilla ice cream, if you like.

4 tablespoons thick cut orange marmalade
7 -8 slices brown bread or 7 -8 slices white bread, buttered
75 g raisins or 75 g sultanas, divided
75 g demerara sugar, divided
2 eggs
450 ml milk
1 pinch cinnamon, ground

Steps:

  • Place half the apples in a buttered shallow dish.
  • Spread marmalade on buttered bread; use half to cover the apples.
  • Sprinkle with half the raisins/sultanas and 2 tablespoons of the sugar.
  • Beat eggs and milk together; pour into dish.
  • Let stand for 40 minutes.
  • Sprinkle with cinnamon and remaining sugar.
