TEXAS-STYLE CROCK POT BRISKET AND BEANS

Texas-Style Crock Pot Brisket and Beans image

An easy way to make a nice brisket. The beans in this recipe are wonderful - sometimes I just make a big pot of the beans alone. Even though I love the convenience of my crock pot, I feel that cooking in the crock pot generally overcooks any meat. However, in this case, with brisket, it is pretty darn good, especially with the delicious beans on the side! I sometimes find that the liquid gets a little low, when it is cooking. If this occurs, you can do any of the following, as needed: double the sauce recipe to add later, add some bottled barbecue sauce, or add a can of beer. Enjoy!

Categories     Meat

Time 8h15m

Yield 6 serving(s)

Number Of Ingredients 11

16 ounces dried pinto beans, rinsed, drained, and picked through
3 lbs boneless beef brisket
1 large onion, chopped finely
1/2 teaspoon seasoning salt
1 teaspoon hickory-flavored liquid smoke
1 1/2 cups ketchup
3 tablespoons Worcestershire sauce
1 tablespoon prepared yellow mustard
1/4 cup red wine vinegar
1/4 cup brown sugar
2 cups hot water

Steps:

  • Combine water, onion, and pinto beans in crock pot.
  • Mix together ketchup, Worcestershire Sauce, vinegar, mustard, seasoned salt, Liquid Smoke, and brown sugar in separate bowl.
  • Stir half of this mixture into beans in crock pot.
  • Place brisket on top of beans (cut into two pieces, if needed).
  • Spread the remaining mixture over brisket.
  • Cook on low for 8-10 hours, stirring twice, if possible.
  • Slice meat across the grain and serve with sauce and with beans on the side.

SLOW COOKER BARBECUE PORK AND BEANS

Slow Cooker Barbecue Pork and Beans image

Pork and beans are cooked together in a slow cooker for mutually beneficial results (If you don't have a slow cooker, you can do it in a pot in the oven.) As the pork shoulder and barbecue sauce braise in the oven, the sauce soaks up the pork juices while the pork tenderizes. Then, beans are added to soak up the deeply concentrated sauce. The recipe uses store-bought barbecue sauce enhanced with the smoky heat of canned chipotles in adobo and brown sugar, which helps glaze the pork. Because every barbecue sauce is different, taste and adjust yours as needed. (For a more acidic sauce, add apple cider vinegar with the beans, or you can increase the sweetness with added sugar.) To serve, slice the pork or shred it into pulled pork.

Time 2h

Yield 4 to 6 servings

Number Of Ingredients 8

3 to 3 1/2 pounds boneless pork shoulder, trimmed of more than 1/4-inch fat
Kosher salt and black pepper
1 tablespoon extra-virgin olive oil
1 cup store-bought or homemade barbecue sauce
1 chipotle in adobo, finely chopped, plus more to taste
3 tablespoons light brown sugar, plus more to taste
2 (14-ounce) cans pinto beans, rinsed
6 garlic cloves, peeled and thinly sliced

Steps:

  • Season the pork all over with 1 tablespoon salt and and 3/4 teaspoon pepper. In a large Dutch oven or skillet, heat the olive oil over medium-high. Add the pork shoulder and sear until browned on all sides, 8 to 10 minutes.
  • Meanwhile, in your slow cooker, stir together the barbecue sauce, chipotle and brown sugar. Taste the mixture and adjust sweetness with brown sugar and spice with chipotle.
  • Add browned pork to the barbecue sauce and turn to coat in the sauce. Add the beans and garlic to the sauce around the pork. Cover and cook on low until the meat falls apart when prodded with a fork, 8 to 10 hours.
  • Transfer the pork to a cutting board. Skim excess fat from the top if desired, then season the beans to taste with salt and pepper. Slice the pork against the grain into 1/2-inch thick slices, or shred the pork with two forks. Serve the pork with the beans.

CROCK POT BBQ BRISKET

Crock Pot BBQ Brisket image

This easy slow cooker beef BBQ Brisket is tender, juicy, and full of flavor. It is cooked slowly over the day as the flavor from the brisket rub infuses into the meat making an amazingly delicious brisket with very little effort!

Provided by Kimber

Categories     Dinner

Time 6h10m

Number Of Ingredients 11

4 lb Brisket (see note)
1 cup bbq sauce ((I used Sweet Baby Rays here))
1/2 cup beef broth
1 tbsp brown sugar
1 tbsp paprika
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1/4 tsp cayenne pepper

Steps:

  • Combine all ingredients in the rub and mix to combine.
  • Rub the brisket on all sides thoroughly with the brisket rub.
  • Combine the barbecue sauce and broth in the bottom of the crock pot and mix. Lay the brisket on top of the BBQ sauce.
  • Cover and cook on low for 6-8 hours or until the meat is tender and cooked through.
  • Remove brisket and slice, or shred, and return to sauce mixture.
  • Serve hot with your favorite sides, on a bun, or on a baked potato.
  • Once the brisket is done in the slow cooker, remove the brisket (in one piece) and place it on a baking sheet. Line the baking sheet with foil for easy clean up.
  • Bake for 15 minutes at 450˚F to get the smoked BBQ brisket color and texture on the outside of the brisket. The outside of the brisket will darken in color and the edges will begin to crisp as the inside stays tender and juicy.

SLOW COOKER BBQ BEEF BRISKET

Slow Cooker BBQ Beef Brisket image

Very easy, tender, and tasty brisket. For a small brisket, use 1 jar pickles. Be sure to trim brisket well. Dump in the dill pickle spears, juice and all! Just trust me on this one; the pickles cook down to almost nothing and the juice makes the meat super-tender!
