CHICKEN WINGS IN GARLIC SAUCE
Steps:
- Rinse the chicken wings in cold water and pat dry with paper towels. Place flour in a shallow platter and season it by adding paprika, salt and pepper. Toss to incorporate, then dredge the wings in the flour.
- Heat oil in a skillet and brown the chicken wings on all sides. Remove the chicken from the pan and set aside on a platter. Add the pepper flakes, bay leaf, lemons, garlic, oregano, sherry, and chicken broth to the pan.
- Cook for 2 minutes to evaporate the alcohol. Return the chicken to the pan. Cover the pan and simmer for 15 minutes, or braise in a preheated 375 degree oven for 20 minutes.
CRISPY BAKED WINGS WITH BERBERE HONEY GLAZE AND FRIED GARLIC

- Preheat the oven to 450˚ F. Pat the wings very dry with paper towels and place in a large bowl. Stir together the baking powder, garlic powder, paprika, coriander and 1 tablespoon salt in a small bowl. Sprinkle the mixture over the wings and toss well to coat. Arrange the wings, fatty-side down, in a single layer on a foil-lined rimmed baking sheet. Bake 30 minutes, then turn the wings over and bake until golden brown and crispy, 15 to 20 more minutes. Remove the baking sheet from the oven. Drain the wings on paper towels and allow to cool for 5 minutes.
- Meanwhile, make the fried garlic: Smash each clove of garlic, then peel and finely chop. Add the vegetable oil and garlic to a small skillet. Turn the heat to medium and cook until the garlic is lightly golden, 3 to 4 minutes. Remove the skillet from the heat and continue to cook until the garlic is completely golden, 1 more minute. Strain through a fine-mesh sieve; remove the garlic to a paper towel-lined plate to cool.
- Make the berbere honey glaze: In a small pot over medium-low heat, warm the vinegar and honey until the honey is loose and less viscous. Whisk in the berbere and cook over low heat until evenly distributed and heated through, about 2 minutes.
- Toss the wings with the glaze and fried garlic before serving. Top with chives.
PAPRIKA CHICKEN WINGS
I love chicken wings because they are fast and easy to prepare and can make a delicious meal. I often create three different flavors of wings, arrange in a serving platter with kale or green leaf lettuce as a divider. Tuck your favorite dip in the middle and everyone thinks you ordered this from a deli! My husband and I often make about 12 wings with our favorite frozen pizza for TV night. NOTE; Please look for 'gourmet' paprika, I found a Spanish one that costs the same as the common brands yet tastes so much better.

- 1. Preheat the oven to 500°F. Line a baking dish with foil. 2. Peel and mince or press the garlic; transfer to a medium bowl. 3 cloves garlic 3. Add lime juice, olive oil, paprika, salt, and pepper to the minced garlic and mix well. ½ lime 1 tbsp extra virgin olive oil 1 tsp paprika ½ tsp salt ½ tsp black pepper 4. Add the chicken drumsticks to the garlic-paprika mixture and toss until well coated. Place the drumsticks in the baking dish. 1 ¼ lb chicken drumsticks 5. Place the drumsticks in the oven and bake, flipping halfway through cooking time, until they are cooked through and browned, 20-25 minutes. 6. In a small bowl, prepare the dressing by whisking together lime juice, olive oil, Dijon, salt, and pepper. ½ lime 2 tbsp extra virgin olive oil ½ tsp Dijon mustard ¼ tsp salt ¼ tsp black pepper 7. Wash and dry the mixed greens. ½ (5 oz) pkg spring mix (mixed greens) 8. Wash and halve the tomatoes. ½ pint grape tomatoes 9. Halve and pit the avocado; scoop out the flesh and medium dice. 1 avocado 10. To serve, arrange the greens on plates, top with tomatoes and avocado, and drizzle with the dressing. Add chicken drumsticks to the side. Enjoy!

Steps:
- Cut wings at joints.
- Preheat oven to 425 degrees.
- Be sure wings are thawed and dry them well with paper towels.
- Combine flour, paprika, garlic salt, black pepper and cayenne pepper in a plastic bag.
- Shake to mix ingredients and add wings.
- Line a large baking sheet with Release foil and melt the butter on it. ( Makes for easy clean up.).
- Add wings to pan and turn to coat.
- Bake for 30 minutes.
- Turn wings over and bake for 15 more minutes or until crispy and done.
