Marinated, slow-cooked, lamb stew with lamb shoulder, garlic, rosemary, onion, paprika, roasted bell peppers, tomato, parsley, red wine, and chicken stock.

3 1/2 pounds lamb shoulder, cut into 2 inch pieces
6 cloves garlic, crushed and peeled
1 sprig fresh rosemary, about 1 tablespoon chopped
1/2 cup dry white wine
2 tablespoons extra-virgin olive oil
1 large onion, peeled and chopped
Salt
2 teaspoons sweet paprika
1 10-ounce can roasted red bell peppers, cut into 1/2 inch strips
1 large ripe tomato, peeled, seeded, and chopped
2 tablespoons chopped fresh parsley
1 bay leaf
1 cup dry, full-bodied red wine
1 cup chicken stock
Freshly ground black pepper

Steps:

  • Marinate lamb with garlic, rosemary, white wine: Combine the lamb, half of the garlic cloves, rosemary, and white wine in a medium bowl. Let marinate for 2 to 3 hours. Drain the meat, discard the marinade, and pat dry with paper towels. Mince the remaining garlic cloves and set aside.
  • Brown the lamb: Heat olive oil in a large, heavy-bottomed pan with lid, over medium-high heat. Working in batches, brown the meat on all sides, about 10 minutes per batch. Salt the meat as it browns.
  • Sauté onions and garlic: Remove the meat from the pan and add the chopped onion to the pan. Cook, scraping browned bits stuck to the bottom of the pot with a wooden spoon, until the onions are soft, about 5 minutes. Add the garlic and cook another minute.
  • Return meat to pan, add paprika, roasted peppers, tomatoes, parsley, bay leaf, red wine, bring to simmer: Return the meat to the pan with the onions and garlic. Stir in paprika, roasted peppers, tomatoes, parsley, bay leaf, and red wine. Bring to a boil, reduce heat to medium, and simmer uncovered for 15 minutes, allowing the liquids to reduce a bit.
  • Add chicken stock, simmer: Add the chicken stock, bring to a boil, reduce heat to low and simmer, covered, stirring occasionally, until meat is very tender, 2 to 2 1/2 hours. Add freshly ground black pepper and more salt to taste. Serve with rustic bread. If you want, try garnishing with fresh mint leaves (though I have no idea how "Basque" that is, it just tastes good.) Extra-virgin olive oil
1 onion
4 garlic cloves
Leaves from a handful fresh thyme sprigs
Leaves from 1 big stem fresh rosemary
2 cups diced fresh tomato
4 cups cubed (1-inch) cooked lamb
6 cups chicken broth
Salt and freshly ground black pepper
2 cups cooked white beans, such as Borlotti
1/2 fennel bulb, sliced as thin as possible

Steps:

  • Heat a 2-count of oil in a large soup pot over medium heat. Add the onion, garlic, and herbs and cook until softened, about 5 minutes. Add the tomato and cook until the vegetables cook down to a pulp, about 5 more minutes. Stir in the lamb and then the chicken broth. Bring to a simmer and season with salt and pepper. Simmer until the lamb is very tender, 20 to 30 minutes. Add the beans and simmer until warmed through. Then mash some of the beans against the side of the pot to break them down and thicken the soup. Season with salt and pepper and a drizzle of olive oil. Ladle the soup into bowls, top with fennel, and serve hot.

1 1/2 cups dried navy beans
2 lamb shanks
3 cups thinly sliced cabbage
2 large carrots, sliced
2 celery ribs, sliced
2 garlic cloves, minced
1 large onion, finely chopped
1 1/2 teaspoons dried thyme
1 1/2 teaspoons dried marjoram
1/2 teaspoon crushed celery seed
1/2 teaspoon dry mustard

Steps:

  • Combine all ingredients except salt and pepper in a slow cooker; cover and cook on low until beans are tender, 7-8 hours.
  • Remove lamb shanks; cut meat into bite sized pieces and return to soup.

A warming North African soup. Can be made up to 2 days in advance - definitely one of those dishes that tastes better the day after! This is definitely a traditional favourite duirng Ramadan.

1 cup dried lima beans
2 tablespoons olive oil
750 g lamb
2 medium brown onions, coarsely chopped
2 garlic cloves, crushed
2 medium carrots, coarsely chopped
2 celery ribs, trimmed and coarsely chopped
2 cups chicken stock
4 cups water
400 g chopped tomatoes
4 tablespoons chopped fresh coriander
2 tablespoons lemon juice

Steps:

  • Place the Lima beans in a large bowl and cover with water. Allow to soak overnight. Rinse well and drain before using.
  • Heat the olive oil in a large saucepan, cook the lamb until browned on all sides to seal it. Add all the vegetables (EXCEPT tomatoes) and cook until softened - stir well.
  • Add the beans, stock and water to the pan and bring to the boil. Reduce heat and simmer covered for 1 hour. Skim the surface around every 20 minutes or so.
  • Remove lamb from pan. If using lamb on the bone, remove all bones. Pull lamb into small pieces. return lamb to pan along with the tomatoes. Simmer for another hour covered.
  • Remove from heat and add the coriander and lemon juice. Stir well then serve with fresh bread.

1 pound dried great northern beans
2 tablespoons butter
1 cup coarsely chopped onion
1 clove garlic, finely minced
2 lamb shanks, about 1 pound each
10 cups water
1 1/2 cups peeled and diced tomatoes
1 bay leaf
6 sprigs fresh parsley tied in a bundle
3 sprigs fresh thyme tied in a bundle or 1/2 teaspoon dried
2 whole cloves
20 peppercorns
Salt, if desired
1/4 cup finely chopped parsley

Steps:

  • Soak the beans or not according to package recommendations.
  • Heat the butter in a kettle and add the onion, garlic and lamb shanks. Cook, stirring the onion and turning the shanks, about five minutes.
  • Drain the beans and add them to the kettle. Add the water, tomatoes, bay leaf, parsley sprigs, thyme, cloves, peppercorns and salt to taste. Bring to the boil and let simmer two hours.
  • Remove the shanks, bay leaf, parsley and thyme sprigs.
  • Remove the skin from the shanks. Remove the meat from the bones and shred it or cut it into small bite-size pieces. Return the meat to the soup. Reheat and serve sprinkled with chopped parsley.

4 small lamb shanks
3 tablespoons olive oil
1 cup dried white bean
6 garlic cloves
1 cup chicken stock or 1 cup beef stock
1 cup red wine
1 (14 ounce) can diced tomatoes, undrained
1/2 butternut squash, peeled and cut into 1 1/2 inch cubes
1/2 cup pitted black olives
2 sprigs thyme
fresh ground black pepper

Steps:

  • Combine the flour and salt in a zip-lock plastic bag.
  • One at a time, add the lamb shanks and shake until evenly coated.
  • Place a large saute pan over med-high heat and add the oil.
  • Add the lamb and cook, turning, for 15-20 minutes, until browned on all sides.
  • Transfer lamb to the slow cooker.
  • Add in the beans, garlic, stock, wine, and tomatoes.
  • Cover and cook on LOW for about 5 hours.
  • Add in the squash and cook on LOW for another 3 hours, until the lamb and squash are very tender.
  • Just before serving, stir in the olives and thyme and season to taste with salt and pepper.

1 broiler/fryer chicken (2 to 3 pounds)
8 cups water
2 medium leeks, sliced
2 medium carrots, sliced
1 large turnip, peeled and cubed
1 large onion, chopped
1 large potato, peeled and cubed
1 garlic clove, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon snipped fresh parsley
1 teaspoon dried thyme
12 ounces smoked Polish sausage, sliced
2 cups navy beans, rinsed and drained
1 cup shredded cabbage
1 can (15 ounces) tomato sauce

Steps:

  • In Dutch oven, slowly bring chicken and water to a boil; skim foam. Reduce heat; cover and simmer for 45-60 minutes or until tender. Remove chicken; set aside until cool enough to handle., Strain broth and skim fat. Return broth to Dutch oven. Add the leeks, carrots, turnip, onion, potato, garlic, salt, pepper, parsley and thyme. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Meanwhile, remove chicken from bones; discard bones and skin. Cut chicken into bite-size pieces; add to the Dutch oven. Add the sausage, beans and cabbage. Simmer, uncovered, for 30 minutes or until vegetables are tender. Stir in tomato sauce; heat through.

Steps:

  • Combine the flour and salt in a resealable plastic bag. One at a time, add the lamb shanks and shake until evenly coated.
  • Place a large sauté pan over medium-high heat and add the oil. Add the lamb and cook, turning, for 15 to 20 minutes, until browned on all sides.
  • Transfer the lamb to the slow cooker. Add the beans, garlic, water, wine, and tomatoes. Cover and cook on low for about 5 hours. Add the squash and cook on low for another 3 hours, until the lamb and squash are very tender. (In a pinch, the squash can be added at the beginning of cooking and left in the entire time.)
  • Just before serving, stir in the olives and thyme and season to taste with salt and pepper.

½ pound dried great Northern beans, sorted and rinsed
1 onion, chopped
3 tablespoons olive oil
3 cloves garlic, chopped
1 ¼ pounds ground lamb
3 carrots, peeled and diced
3 stalks celery, diced
1 ½ cups canned roma tomatoes, with liquid
¼ cup chopped fresh parsley
1 teaspoon dried thyme
½ teaspoon dried oregano
fresh ground black pepper
salt to taste
6 cups chicken broth
½ pound baby spinach leaves
4 ounces feta cheese, crumbled

Steps:

  • Soak the dried beans in water overnight. After soaking, drain off remaining water, and rinse.
  • In a large stockpot, cook the onion in oil over low heat until just beginning to soften, about 4 minutes. Stir in garlic, and cook for 1 minute. Increase the heat to medium, and add lamb; cook for 3 to 4 minutes. Stir in carrots and celery, and cook for 1 minute. Stir in tomatoes, and season with parsley, thyme, oregano, and with freshly ground pepper and salt to taste. Add beans and broth to the pot. Bring to a boil, boil for 5 minutes, then reduce heat to medium-low. Simmer, covered, for 1/1/2 hours, or until beans are tender.
  • Rinse spinach, and then place in a saucepan. Place over medium heat, and cook until wilted. This will only take a short time, and you will not need to add more liquid to the pan.
  • Top each serving of soup with wilted spinach and crumbled feta cheese.
