- For the pesto: In a food processor, combine the walnuts, garlic, jalapeno, cheese, salt and pepper. Process until the mixture is smooth. Add the spinach and arugula and process until blended. With the machine running, gradually add the olive oil.
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water. Place the cooked pasta and pesto in a large serving bowl. Toss well and thin out the sauce with a little pasta water, if needed.
- Season with salt and pepper, to taste. Garnish with Asiago cheese shavings and serve.
- *Cook's Note: For a milder pesto, remove the seeds from the jalapeno pepper.
SPINACH BASIL PESTO
This sauce is perfect for freezing in an ice cube tray. I just pop out a couple of cubes from the freezer and add to a pasta dish for a quick and easy meal. The Parmesan cheese can be omitted and added after thawing. Pour any pesto you aren't using immediately into an ice cube tray, cover with plastic wrap, and store in freezer.

- Blend the spinach, basil, pine nuts, Parmesan cheese, garlic, salt, pepper, lemon juice, lemon zest, and 2 tablespoons olive oil in a food processor until nearly smooth, scraping the sides of the bowl with a spatula as necessary. Drizzle the remaining olive oil into the mixture while processing until smooth.

SPINACH-BASIL PESTO
This pesto is so simple, and its mild, herbaceous flavor makes it the ideal companion for just about any of the meatballs. While many pesto recipes call for pine nuts, we prefer the flavor (and lower price) of walnuts. Try roughly chopping them to add a nice, crunchy texture. We also love this as a healthy party dip, especially because it has no raw garlic - your guests will thank you too! You can swap arugula for spinach if you prefer. Pesto freezes well and will keep for up to three months in the freezer.

- Preheat oven to 350 degrees. Spread out the walnuts on a small rimmed baking sheet and roast in oven for about 12 minutes, giving them a shake after 6 minutes. Continue roasting until golden brown and toasted. Set aside and allow to cool thoroughly.
- Fill a large stockpot three-quarters full with water, and bring to a boil over high heat. Meanwhile, fill a large bowl half way up with ice and water and set close to the sink.
- Dump the spinach and basil into the boiling water and stir. After 1 minute, strain the greens, and plunge them into the bowl with ice water. Drain the greens again and squeeze them tightly to get as much water out as possible. Chop the greens roughly.
- Combine the greens and walnuts with the salt, olive oil and Parmesan in a food processor and process until a smooth consistency is reached. Taste and season with additional salt, if desired.

ARUGULA-BASIL PESTO WITH PINE NUTS, PARMESAN AND RICOTTA

- Toast the pine nuts in a dry skillet until lightly browned; let cool. Pulse in a food processor until finely ground.
- Add the arugula, basil and 1/4 teaspoon salt and pulse until finely chopped.
- Add the parmesan and pulse to combine.
- Slowly pour in the olive oil, pulsing to incorporate. Transfer the pesto to a bowl and stir in the ricotta. You'll have about 1 cup pesto; use about 1/2 cup for 1 pound pasta.
SPINACH AND ARUGULA PESTO

- In a food processor or blender, combine spinach, arugula, garlic, salt, walnuts, cheese, lemon juice, and water. Process until they form a paste. Gradually blend in olive oil, taste adjust seasoning if necessary.
BASIL, SPINACH AND ARUGULA PESTO
Steps:
- For the garlic confit. Heat 1/2 cup of the olive oil in a small pan over low heat until warm. Add garlic cloves and cook until very soft, about 30 minutes. Using a slotted spoon, remove the garlic cloves, reserving both cloves and oil.
- For the pesto: Have a large bowl of ice water ready. In a small pot over high heat, bring 4 cups of water to a boil, and blanch basil or chervil until tender, about 30 seconds. Remove with slotted spoon and transfer to ice water. Place spinach and arugula in boiling water until bright green and tender, about a minute. Drain well and transfer to ice water. When greens are well chilled, drain well, place in a kitchen towel, and squeeze as hard as possible to remove excess moisture.
- In a blender, combine half the garlic cloves, half of the garlic cooking oil, half of the blanched greens (basil or chervil, spinach, and arugula), half of the hazelnuts and half of the ricotta salata. Blend five minutes.
- Add the remaining garlic cloves, garlic cooking oil, blanched greens, hazelnuts and ricotta salata. Blend, adding 1/4 cup additional olive oil, or more as needed, for two to five minutes, to make a thick but pourable pesto. Season with salt and pepper to taste. Blend one minute more. If desired, serve over hot linguini or other pasta.

- Place 1/2 cup oil and next 6 ingredients in processor. Process to thick paste. With motor running, add remaining 1/4 cup oil and 2 tablespoons water to processor. Blend until smooth. SPINACH, PINE NUT, FETA STUFFED FOCACCIA W. BASIL-ARUGULA PESTO
This was the BEST recipe of the class. I could not stop myself from eating it!! If you love pesto this is a stuffed bread for you. We did make this on the grill, but it can be made in the oven.I have posted the recipe for the Basil-Arugula Pesto (rz #183224) which can be made ahead of time or while the dough is resting.

- Stir together the yeast and 1/2 cup of warm water in the large bowl of an electric stand mixer.
- Set aside and let stand for 5-10 min until the yeast is bubbly.
- To the yeast mixture add the remaining 3 cups of warm water, salt and olive oil.
- Slowly add the flour one cup at a time and mix with the dough hook until the dough is soft and not too sticky. **You may not need all of the flour.**.
- Knead by hand or mix on medium speed for 10 min, or until the dough is no longer sticky.
- Set aside to rise for 1 hour or until dough has doubled in size.
- Preheat the oven to 425º or grill.
- Start the spinach filling while dough is rising.
- Saute the garlic in some olive oil in a large saute pan.
- Add the spinach leaves and saute until wilted.
- Take off the heat and add the mint and toasted pine nuts.
- Salt and add red pepper flakes to taste.
- When slightly cooled, fold in the crumbled feta.
- Punch down the dough, then shape into a rectangle in a well oiled half sheet baking pan.
- Dimple with your finger tips and brush with olive oil.
- Set aside for 15 min or so.
- Place the dough filled sheet pan on the rack of a grill or in the oven and cover with the lid for a few min, just long enough to have the dough slightly rise and firm up - about 5 min or so.
- Spread the pesto lengthwise across one half of the dough, leaving a one inch border.
- Spread the spinach mixture over the pesto.
- Cover with the grill lid and cook for a few more min, until the dough is firm enough for you to lift up the non-pesto half and fold over the filled half - 3-5 minute.
- Press the edges together with a fork to keep the filling inside while cooking.
- Brush with olive oil.
- Move the pan to the side of the grill and continue to bake over indirect heat until it is golden and done - about 7-10 minute.
- Remove from heat and let cool for 10 min or so before cutting and serving.

- Bring a medium pot of water to a boil. Prepare an ice-water bath and set aside. Place spinach leaves and basil in a colander or strainer; pour boiling water over spinach and basil. Immediately transfer to ice-water bath to cool. Squeeze leaves together to extract as much water as possible.
- Transfer spinach and basil to the bowl of a food processor along with cheese, garlic, olive oil, and pine nuts. Process until a smooth paste is formed; season with salt and pepper. Use immediately or store in an airtight container, refrigerated, for up to 5 days.

- Set a cast-iron skillet over medium heat. Toast the garlic cloves until their skin begins to darken on one side. Turn the cloves and repeat on the other sides.
- Remove the garlic cloves and set aside. Reduce the heat to low and add the pine nuts. Toast until golden-brown, stirring occasionally. Meanwhile, peel and trim the garlic cloves.
- Place the mixed greens, garlic, pine nuts, and pepper flakes (if using) in a food processor; pulse to coarsely chop. Process the mixture while drizzling in 1 cup of the olive oil; continue processing until smooth. Season with salt and pepper to taste.
- FOR FREEZING: divide the pesto into dinner-sized portions, place in freezer bags, and top with olive oil to cover. Roll the bags carefully to squeeze out as much air as possible. I like to put the small freezer bags into a large, labeled freezer bag. When you thaw out a portion (running hot water over the bottom of the bag is enough!), mix the contents of the bag and stir in some grated pecorino.
