CAESAR PORK CHOPS AND PASTA

- Cook pasta in large saucepan as directed on package, omitting salt.
- Meanwhile, heat large nonstick skillet on medium heat 5 min. or until very hot. Top chops evenly with 2 Tbsp. dressing and 1/4 cup cheese; press cheese into dressing to secure. Add chops, cheese sides down, to skillet; cook 4 min. on each side or until done (145ºF). Transfer to plate; cover to keep warm.
- Drain pasta; add to skillet with spinach and garlic. Cook and stir 1 min. or just until spinach is wilted. Stir in remaining dressing, cheese and tomatoes; cook and stir 1 min. or until heated through. Serve with chops.

- With machine running, drop garlic through feed tube of food processor to mince. Stop, add fresh basil, and process until chopped. Add lemon juice, oil, salt and pepper and process to make thin wet rub. Spread both sides of pork chops with basil mixture. Let stand 15 to 30 minutes.
- Prepare a medium-hot fire in grill. Brush the grate clean and oil the grate. Grill chops, over direct heat, turning once, to medium rare doneness, 5 to 6 minutes per side, or until the internal temperature reaches 145°F, followed by a 3-minute rest time.
BASIL PORK CHOPS WITH CAESAR PENNE

Steps:
- Place pork chops in a zip lock bag, and add brown sugar, 1-1/2 tsp dried basil, salt, chili powder, 1 tbsp canola oil. Seal bag and press on bag with fingers to distribute ingredients evenly over pork chops.
- Start pot of water for pasta, and salt well. Once water gets to a boil place pasta in pot and cook until el dente. Drain pasta and return the empty sauce pan to the stove.
- Add the diced onions, minced garlic, and chicken broth to the sauce pan for 2-3 minutes on medium-high heat. Add Caesar dressing, olives, and green onions. Cook for an additional 2 minutes. Lastly, add the penne pasta back to the pot, mix well, and cook on low until pork chops are done.
- Spray a large skillet with non-stick cooking spray and cook pork chops over medium heat 5-8 minutes on each side or until browned and internal temperature reads 160F. Serve the pork chops with the Caesar penne pasta. Enjoy!

- In pie pan or shallow dish, mix flour and Italian seasoning. Pour dressing into another pie pan or shallow dish.

- Trim and discard excess fat from chops.
- In a large frying pan, sear the chops.
- When the chops are browned on the outside, add the juice, water, hot sauce, salt, and pepper.

PENNE WITH PORK CHOPS
This is what we had for dinner tonight. I've made dishes similar before, but haven't measured out the ingredients so others can duplicate it. Feel free to improvise. Water could be easily sustituted for the tomato juice. About half way through the cooking time taste the sauce for acidity. Add a pinch of sugar if needed to cut the acidity of the tomatoes.

- Saute the onion in the olive oil in a large pot until translucent.
- Add the garlic and continue cooking until the garlic is slightly brown.
- While the onion is cooking mix the tomato paste and water together.
- Place the pork chops in the pot.
- Add the tomato paste mixture, crushed tomatoes, and the tomato juice to the pot then stir.
- Add the dry seasonings, wine, and mushrooms. Simmer for 1 hour.
- 10 minutes before the sauce is finished add the parsley.
- Remove pork chops and keep warm while you mix pasta and sauce.
- Serve with a salad.
