4 medium ears sweet corn
4 teaspoons butter, melted
3/4 teaspoon salt
1/4 teaspoon pepper
16 fresh basil leaves
1/2 medium lemon
2 teaspoons minced fresh cilantro
Additional butter, optional

Steps:

  • Place corn in a 6-qt. stockpot; cover with cold water. Soak 20 minutes; drain. Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Brush butter over corn; sprinkle with salt and pepper. Press 4 basil leaves onto each cob. Rewrap corn in husks; secure with kitchen string., Grill corn, covered, over medium heat 20-25 minutes or until tender, turning often. Cut string and peel back husks; discard basil leaves. Squeeze lemon juice over corn; sprinkle with cilantro. If desired, spread with additional butter.

Steps:

  • Combine basil, oil, red pepper, salt, and black pepper in a bowl.
  • Remove husks from corn.
  • Place each ear of corn on a piece of heavy foil.
  • Brush ears with mixture.
  • Wrap corn in the foil.
  • Place corn on the grill rack directly over medium coals. Grill uncovered about 20 minutes/until kernels are tender, turning frequently.

8 ears corn, husked and kernels removed
Sliced scallions, for garnish

Steps:

  • Combine the butter and basil in a food processor and process until smooth, season with salt and pepper, to taste, and pulse a few more times. Scrape into a small bowl.
  • Put a large saute pan on the grill over low heat and add the basil butter. When the butter is hot add the corn kernels and saute for 3 to 4 minutes. Transfer to a serving bowl and garnish with torn basil leaves and scallions.

8 ears of unhusked corn
Cilantro pesto
1/2 cup cilantro leaves, large stems removed
2 tablespoons freshly squeezed lime juice
1 garlic clove, peeled, and grated on a Microplane grater
1 teaspoon kosher salt
1 teaspoon finely ground fresh black pepper
1/4 cup canola or vegetable oil
1/4 cup extra virgin olive oil
4 limes, each cut into 4 to 6 wedges
Fleur de sel
16 tablespoons (8 ounces) unsalted butter, cut into pats

Steps:

  • 1. Keeping the husks attached, peel them back in sections on each ear of corn, and remove the silk. Cover the exposed corn with the husk.
  • Soak the corn in cold water for 5 to 10 minutes.
  • 2. Preheat one grate of a well-oiled charcoal or gas grill to medium-high and another to high.
  • 3. Place the cilantro, lime juice, garlic, salt, and pepper in a small food processor or in a blender and pulse to combine. With the machine running, slowly drizzle in the oils. Alternately the pesto can be combined by hand. Set aside.
  • 4. Place the corn, still covered by the husk, on the medium-high grate. Cook for 3 minutes, turn to the other side, and cook for 3 minutes.
  • Remove from the grill, peel back the husk, return to the high grate to mark and lightly char the corn on all sides, turning and jockeying between medium and high as need for 5 to 7 minutes total.
  • 5. Remove the corn from the grill and brush generously with the pesto. Squeeze lime over the ears and sprinkle with fleur de sel. Serve with any remaining limes, and pats of butter on the side.

Steps:

  • Peel back husks, leaving them attached at the base of the ear. Remove and discard silk; pull husks back over corn. Place ears in a large bowl or pot; cover with cold water. Let soak 10 minutes.
  • Preheat grill to high; lightly oil grates. Drain corn. Arrange ears on grill. Cover and cook, turning occasionally, using tongs, until husks are slightly charred and corn is tender, 15 to 20 minutes. Remove ears from grill.
