SLOW-COOKED BARBECUED BEEF SANDWICHES

1 boneless beef chuck roast (3 pounds)
1-1/2 cups ketchup
1/4 cup packed brown sugar
1/4 cup barbecue sauce
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 teaspoon liquid smoke, optional
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 sandwich buns, split
Sliced onions, dill pickles and pickled jalapenos, optional

Steps:

  • Cut roast in half and place in a 3- or 4-qt. slow cooker. In a small bowl, combine the ketchup, brown sugar, barbecue sauce, Worcestershire sauce, mustard, liquid smoke if desired and seasonings. Pour over beef., Cover and cook on low for 8-10 hours or until meat is tender. Remove meat; cool slightly. Skim fat from cooking liquid., Shred beef with two forks; return to the slow cooker. Cover and cook for 15 minutes or until heated through. Using a slotted spoon, place 1/2 cup on each bun. Serve with onions, pickles and jalapenos if desired. Freeze option: Place individual portions of cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth / water if necessary.

2 tablespoons cold water
12 kaiser rolls, split
Dill pickle slices, optional

Steps:

  • Cut roast in half. Place in a 5-qt. slow cooker. In a small bowl, combine the ketchup, onion, brown sugar, vinegar, mustard, Worcestershire sauce, garlic, salt, celery seed, paprika and pepper; pour over roast. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat. Skim fat from cooking juices; transfer to a large saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into juices. Return to a boil; cook and stir for 2 minutes or until thickened., When meat is cool enough to handle, shred with two forks. Return to slow cooker and stir in sauce mixture; heat through. Serve on rolls with pickle slices if desired.

1 medium onion, chopped
1/4 cup cider vinegar
1/4 cup molasses
2 tablespoons Worcestershire sauce

This recipe came from a military wife almost 30 years ago (thanks Elise) and it couldn't be much easier. Simply combine all ingredients and cook for 3 hours, then shred the meat. Serve it on buns of your choice...and then sit back and take in the compliments! Everyone loves this recipe, and I've used it at fund raising events with great success! Excellent with potato salad or coleslaw.

3 pounds beef chuck
2 onions, chopped
1 (28 ounce) can diced tomatoes with juice
½ cup distilled white vinegar
½ cup water
3 tablespoons sugar
⅓ (10 fluid ounce) bottle Worcestershire sauce

4 pounds boneless chuck roast
1 onion, chopped
2 tablespoons butter
3 tablespoons distilled white vinegar
12 ounces chile sauce
2 tablespoons brown sugar
1 teaspoon mustard powder
2 tablespoons Worcestershire sauce
½ teaspoon freshly ground black pepper
1 teaspoon salt
⅛ teaspoon ground cayenne pepper
3 cloves garlic, minced

Steps:

  • Place roast in a large covered pan. Roast at 325 degrees F (165 degrees C) for 2 hours, or until the meat falls apart and shreds easily.
  • In a large skillet, melt butter over medium heat. Add onions, and saute until onions become translucent.
  • Stir in vinegar and chili sauce. Fill empty chili sauce bottle with water, shake, and pour liquid into skillet. Mix in brown sugar, mustard, Worcestershire sauce, black pepper, salt, cayenne pepper, and garlic. Cook sauce over low heat, stirring often, until thickened.
  • With two forks, shred roasted beef. Stir meat into the sauce in the skillet, and simmer for 30 minutes.

This is wonderful melt in your mouth Shredded beef! We always make more than enough and eat the leftovers for days. This is great for having a group of people over and letting them serve themselves form the crock pot. You can combine the ingredients in a ziploc bag and freeze ahead if you like.

2 -3 lbs roast (chuck or rump are my favorite)
1 (16 ounce) can of sweet baby ray's original barbecue sauce
2 minced garlic cloves
1 (12 ounce) can Coke (I use vanilla coke)
2 teaspoons onion salt
12 rolls or 12 French baguettes

Steps:

  • Put the chuck roast in the crock pot. pour the can of coke over the roast, sprinkle the onion salt on top of the roast add the minced garlic and then smother the whole thing with barbecue sauce.
  • Cook it on low for 8 - 10 hours. the meat will practically shred itself when you insert a fork into it. Just continue to move the fork around and mix the meat completely with the sauce.

6 ounces tomato paste
1/2 pint chili sauce
1/2 cup finely chopped green pepper
1 cup chopped celery
2 tablespoons brown sugar
1 tablespoon vinegar
1 quart canned tomato
2 -3 onions, quartered
2 hot peppers (I used jalapenos)

Steps:

  • Cook roast until fork tender. Shred beef.
  • Add tomato past, chili sauce, green pepper, celery, sugar and vinegar.
  • Combine canned tomatoes, onion and hot peppers in blender.
  • Mix in with the beef mixture.
  • Cook in covered pot until liquid is absorbed into beef.

2 cups ketchup
1 medium onion, chopped
1/4 cup cider vinegar
2 tablespoons Worcestershire sauce

1/2 teaspoon black pepper

Steps:

  • Cut roast in half and place into Crock-Pot slow cooker. Combine ketchup, onion, vinegar, molasses, Worcestershire sauce, garlic, salt, mustard, black pepper, garlic powder and red pepper flakes in large bowl. Pour sauce mixture over roast. Cover and cook on LOW 8 to 10 hours or on HIGH 4 to 5 hours or until done.
  • Remove roast from cooking liquid; cool slightly. Trim and discard excess fat from beef. Shred meat with 2 forks.
  • Let cooking liquid stand 5 minutes to allow fat to rise. Skim off and discard fat.
  • Return meat to Crock-Pot slow cooker. Stir to evenly coat meat with sauce. Adjust seasonings. Cover and cook on LOW 15 to 30 minutes or until hot.
  • Spoon filling into sandwich buns and top with additional barbecue sauce, if desired.
