2 cups tomato ketchup
2 Tablespoons liquid smoke ((you can also substitute soy sauce for a less smoky flavor))
1 1/2 cups brown sugar
1/2 cup onion, (minced)
1 24 ounce package pre-made frozen meatballs

Steps:

  • In the bowl of the slow cooker, whisk together the ketchup, liquid smoke (or soy sauce) and brown sugar until well combined.
  • Stir in onions and meatballs until evenly coated.
  • Cover the slow cooker and set to high.
  • Cook for 2 hours until hot and bubbly.
  • Set the slow cooker to warm and serve hot.

1/2 tsp. onion powder
1-1/2 cups KRAFT Original Barbecue Sauce, divided
2 lb. extra-lean ground beef
2 eggs, beaten
25 unsalted tops saltine crackers, finely crushed (about 1 cup)
1 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Heat oven to 375ºF.
  • Combine tomatoes, onion powder and 3/4 cup barbecue sauce in slow cooker sprayed with cooking spray; cover with lid. Cook on HIGH until ready to add the meatballs.
  • Meanwhile, cover 2 rimmed baking sheets with foil; spray with cooking spray. Mix meat, eggs, cracker crumbs, cheese and remaining barbecue sauce just until blended. Shape into 72 small meatballs, using about 1 Tbsp. meat mixture for each meatball. Place on prepared baking sheets. Bake 15 min. or until done.
  • Add meatballs to slow cooker; stir to evenly coat with sauce. Reduce heat to LOW to keep meatballs warm until ready to serve right from the slow cooker.

KOREAN BARBECUE-STYLE MEATBALLS



Korean Barbecue-Style Meatballs image

These meatballs, inspired by traditional Korean barbecue, bring the savory-sweet flavors of caramelized meat without the need for a grill. As the meatballs bake, the soy sauce marries the garlic and scallions to create a glaze. This meatball mixture can be made ahead and left to marinate in the fridge for 3 hours or even overnight. Use ground beef that is 85 percent lean meat, 15 percent fat, or 80 percent lean and 20 percent fat for juicier meatballs. The Ritz crackers here make for a more tender meatball, but feel free to substitute plain dry bread crumbs. The meatballs are tasty on their own, but for a simple dipping sauce, combine 2 tablespoons soy sauce and 1 tablespoon distilled white vinegar. Serve over steamed rice with kimchi, or as a sandwich with mayonnaise or marinara sauce.

I use 1 teaspoon meat mix per meatball for a good appetizer size; make sure to firmly shape the meatballs or they disintegrate in the sauce.
  • Cook meatballs: Heat a non-stick frying pan over medium-high heat and add some oil. Cook the meatballs until browned on the outside and entirely cooked through. OR bake the meatballs at 425°F for 10-12 minutes.
  • Slow cook with sauce: Once the meatballs are cooked, mix all sauce ingredients together in a 3-4 quart slow cooker. Add the meatballs and cook on low for 3-4 hours. The meatballs keep in the slow cooker for another 1-2 hours.

½ cup almond flour
¼ cup Parmesan cheese, grated
2 fresh garlic cloves, pressed
¼ medium onion, very finely chopped
1 large egg
1 bunch fresh parsley, finely chopped
sea salt and ground black pepper, to taste
2 Tbsps olive or avocado oil
2 cups homemade barbecue sauce

Steps:

  • In a large mixing bowl add the ground chicken, almond flour, Parmesan cheese, garlic, onion, egg, chopped parsley, sea salt, and pepper. Stir really well to combine everything.
  • Using your clean hands, shape spoonfuls of meat mixture into 1 - inch meatballs as shown.
  • Heat your oil in a large skillet over medium-high heat.
  • Cook your meatballs while stirring until golden brown and cooked through about 8-10 minutes.
  • Once your meatballs are cooked, add in the barbecue sauce.

One 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
Mashed potatoes, for serving
Chopped fresh parsley, for serving
Green salad, for serving
5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • In a large skillet over medium-high heat, add the barbecue sauce, vinegar, brown sugar, hot sauce and Worcestershire and bring to a boil. Add the All-Purpose Meatballs and bring to a simmer. Cover and cook until the meatballs are heated through, 8 to 10 minutes.
  • Spoon over mashed potatoes and sprinkle with parsley. Serve with a green salad.
  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.
