1 tablespoon olive oil
1 red bell pepper, chopped
1/2 onion, chopped
2 cloves garlic, chopped
2 (28-ounce) cans baked beans
1/2 cup brown sugar
1/3 cup Neelys BBQ seasoning, recipe follows
1/4 cup molasses
1 cup Neelys BBQ sauce, recipe follows
3/4 cup chopped pork or beef brisket
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 275 degrees F.
  • In a large Dutch oven, heat oil over medium heat. Saute the red pepper, onion and garlic until softened, about 2 minutes. Add the baked beans and remaining ingredients and bring to a low simmer. Cover the beans and place in the preheated oven. Bake for 45 minutes.
  • Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

2 red onions
2 cloves of garlic
1 fresh red chilli
2 large carrots
olive oil
1 heaped teaspoon sweet smoked paprika
1 level teaspoon cumin seeds
1 level teaspoon dried chilli flakes
6 medium sweet potatoes
1 x 700 ml jar of passata
2 x 400 g tins of mixed beans
100 ml quality BBQ sauce
a few sprigs of fresh rosemary
½ a loaf of ciabatta or stale bread
40 g Cheddar cheese, optional
fat-free natural yoghurt, to serve

Steps:

  • Preheat the oven to 180°C/350°F/gas 4.
  • Peel the onions and garlic, then finely slice with the chilli. Peel and chop the carrots. Put all these into a large roasting tray and place on a medium heat with a lug of oil, the paprika, cumin and chilli flakes. Cook for 20 minutes, or until softened, stirring regularly.
  • Meanwhile, scrub the sweet potatoes clean, then rub them with a little oil, sea salt and black pepper, place on a baking tray and put aside.
  • When the time's up, stir the passata into the tray, add a splash of water to the empty jar, swirl it around and pour it in along with the beans (juice and all). Drizzle over the BBQ sauce, season lightly and stir well.
  • Pick and roughly chop the rosemary leaves, toss in a little oil and sprinkle over the top, then place in the oven for around 1 hour, or until bubbling, baked and gorgeous, adding a splash or two of water to loosen, if needed.
  • Put the tray of sweet potatoes into the oven for the same amount of time, or until soft and cooked through.
  • Around 20 minutes before the beans are ready, tear the bread into rough chunks and toss with a drizzle of oil in a roasting tray.
  • Grate over the Cheddar (if using), then place on the bottom shelf of the oven for around 15 minutes, or until crispy and golden, to make croutons.
  • Remove everything from the oven, tear up or squidge open the potatoes, and serve with the beans, dollops of yoghurt and the homemade croutons to mop up that delicious sauce, with a simple green salad on the side.

2 tablespoons kosher salt
1 pound small dried beans, such as great northern, navy, or pinto beans, picked over and rinsed
8 ounces sliced bacon, cut into 1/2-inch strips
1 1/2 cups finely minced yellow onion (about 1 large onion)
2 tablespoons finely diced seeded jalapeño (about 1 medium pepper)
1/4 cup finely diced green bell pepper
1 tablespoon minced garlic (about 3 medium cloves)
2 cups chicken stock or low-sodium broth
1 1/2 cups ketchup
1/2 cup dark brown sugar
1/4 cup honey
1/4 cup molasses
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
1 tablespoon barbecue rub
1 tablespoon hot sauce

Steps:

  • In a large container, whisk together 2 quarts water and salt until salt has dissolved. Add beans, cover, and let stand overnight at room temperature. Drain and rinse beans.
  • Place a large dutch oven over medium-high heat. Add bacon and cook until fat has rendered and bacon has crisped, 7-10 minutes. Transfer bacon to a paper towel-lined plate, leaving as much fat in dutch oven as possible.
  • Add onion to dutch oven and cook, stirring occasionally, until onion softens and begins to brown around the edges, about 7 minutes. Stir in green pepper, jalapeño, and garlic and cook until fragrant, about 1 minute. Stir in 3 cups of water, chicken stock, reserved bacon, and beans. Bring to a boil, then reduce heat to low and simmer for 1 hour. Preheat oven to 300°F while beans are simmering.
  • Stir in ketchup, brown sugar, honey, molasses, mustard, vinegar, barbecue rub, and hot sauce. Cover and transfer to oven. Cook beans for 4 hours, stirring occasionally. Remove cover and cook until beans are tender throughout and sauce has thickened, about 1 hour longer. Remove from oven and let cool for 15 minutes. Season with salt. Serve immediately; alternatively, store in an airtight container in the refrigerator for up to 1 week, or freeze. Reheat before serving.

This delicious recipe can be prepared stove top, in the oven, on a BBQ grill, in the crock pot, or over the lowest part of a campfire. The original recipe came from a Marlboro booklet called The Original Cook Like a Man Cookbook. It also called for 2 cups smoked ham, chopped, and was a one-pot meal for camping. We prefer it as a side dish without the ham, and make it on the stove or in the oven, too. My son is the one who introduced me to it. This recipe represents typical cowboy cuisine of the Southwestern U.S.

1 (15 ounce) can pink beans, rinsed, drained (I substitute pinto beans when I can't find pink beans)
1 (15 ounce) can kidney beans, rinsed, drained
1/2 lb bacon
16 ounces ham, cubed (optional)
1 large green pepper, chopped
1 medium onion, chopped
1 jalapeno pepper, minced
1/2 cup brown sugar
1/2 cup barbecue sauce
2 garlic cloves, minced

Steps:

  • Cook and chop bacon.
  • Combine all ingredients in a large Dutch oven (or crock pot if using that). Mix well.
  • Simmer on the stove, over a camp fire, in the oven (at 350°F), in the crock pot, or on the grill (medium heat) until the vegetables are soft (at least an hour).
  • You should stir often (unless you're cooking in the oven or crock pot), to prevent sticking on the bottom of the Dutch oven. Stir lightly, you don't want to mash the beans.

3 tablespoons distilled white vinegar
2 tablespoons honey garlic sauce

Steps:

  • Pour the baked beans, navy beans, kidney beans, ketchup, brown sugar and vinegar into the slow cooker. small bunch coriander , chopped

Steps:

  • Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. Stir in beans, passata, Worcestershire sauce (if using) and seasoning and simmer for 10-15 mins until thickened. Stir through coriander and serve.

Traditionally, these beans were cooked in a low-heat oven almost all day. This on-the-stove version cuts the time in half without compromising flavor. Customary additions such as molasses and salt pork give the beans a sweet and smoky flavor.

1 pound dried navy beans, or great Northern beans
4 ounces salt pork, or thick-cut bacon
1 large onion, cut into 1/4-inch dice (about 1 1/4 cups)
1 clove garlic, minced
3 cups tomato juice
1/4 cup tomato paste
3 tablespoons unsulfured molasses
3/4 cup packed dark-brown sugar
1/4 cup cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow or Dijon mustard
3/4 teaspoon ground turmeric
10 dashes hot sauce, such as Tabasco
Coarse salt and freshly ground pepper

Steps:

  • Put beans in a large bowl; cover with cold water by 2 inches. Loosely cover beans with plastic wrap, and let soak at room temperature 7 to 10 hours.
  • Drain beans; transfer to a large saucepan. Cover with cold water by 2 inches. Bring to a boil. Reduce heat to medium-low; simmer, covered, until beans are very tender, about 1 hour. Drain beans, reserving cooking liquid; set beans and liquid aside.
  • If using salt pork, trim meat from the rind, and cut meat into 1/4-inch dice. Score rind with a knife. If using bacon, cut into 1/4-inch dice. Transfer salt pork (meat and rind) or bacon to a large Dutch oven or stockpot.
  • Cook over medium heat, stirring occasionally, until fat is rendered and meat is browned and cooked through, 8 to 10 minutes. Transfer meat to a large bowl using a slotted spoon, leaving rind and rendered fat in the Dutch oven. Add onion and garlic to the Dutch oven. Cook, stirring occasionally, until onion is translucent, 4 to 5 minutes.
  • Stir in tomato juice, tomato paste, molasses, sugar, vinegar, Worcestershire sauce, mustard, turmeric, hot sauce, 1 teaspoon salt, the beans, and 4 cups reserved cooking liquid. Bring to a boil. Reduce heat. Cover, and cook at a bare simmer, stirring occasionally, until slightly thickened, about 1 hour. Uncover, and cook, stirring occasionally, until thickened, about 2 hours and 45 minutes.
  • Season with salt and pepper. If not serving immediately, let cool completely, and refrigerate in an airtight container, up to 2 days. Reheat beans over medium-low heat before serving.

This is mandatory with our ribs--all you need is a potato salad and coleslaw and you're all set.

  • Put bacon in large, heavy pot over medium heat and cook until lightly brown, about 5 minutes.
  • Discard all but 2 tablespoons fat.
  • Add onion, garlic, and ginger and sauté until soft, about 5 minutes.
  • Remove pot from heat and stir in remaining ingredients.
  • Pour into baking dish.
  • Bake, covered, for 1 hour.

8 slices center cut bacon (Reserve 3 Tbsp drippings) (cooked and crumbled or 8 slices to lay on top)
1/2 medium green pepper (finely diced)
1 medium sweet onion (finely diced)
1 lb lean ground beef
seasoned salt & black pepper
2 28 oz cans hickory flavored baked beans
2/3 cup barbecue sauce
1 10 oz can chili seasoned tomatoes (i.e. Rotel Chili Fixin's)
1/2 cup brown sugar
3 Tbsp whole grain mustard
2 Tbsp Worcestershire sauce
2 tsp barbecue seasoning (i.e. Grill Mates Smokehouse Maple or Barbecue Magic)

Steps:

  • Preheat the oven to 350°F.
  • In a 12-inch cast iron skillet or similar, saute the green pepper, onion and ground beef in reserved bacon drippings until no pink remains in the beef. Season with seasoned salt and black pepper to your taste. After browning, drain any excess fat from the pan.
  • To the skillet add beans, barbecue sauce, chili style tomatoes, brown sugar, Worcestershire sauce, whole grain mustard and barbecue seasoning. Stir until the ingredients are well blended. Add crumbled bacon.
  • Place into the oven and bake for 60-75 minuites.
  • Stir well, and allow the baked beans to rest for 5-10 minutes on the counter before serving to allow the sauce to thicken.

1 pound pinto beans, soaked overnight
7 cups water
1 bay leaf
1 onion, diced
3/4 pound ground chuck
1 clove garlic, minced
1 teaspoon sweet paprika
1 teaspoon dried thyme
1 tablespoon chili powder
3/4 cup ketchup
1/4 cup dark brown sugar
1/3 cup yellow mustard
2 tablespoons Worcestershire sauce
Salt and freshly ground black pepper

Steps:

  • Quick soak method for beans: Cover beans with water, bring to a boil. Turn off heat, let stand 1 hour. Drain.
  • Place pinto beans in a large pot with water and bay leaf, and bring to a boil. Reduce heat to a steady boil and cook until tender, about 1 hour.
  • In the meantime, heat a 12-inch non-stick pan over medium heat. When hot but not smoking, add onions and cook, stirring often until they begin to soften. Add 2 tablespoons of the bean cooking water and cook until the onions are softened, about 5 to 6 minutes.
  • Add the ground chuck and garlic and cook, stirring often, until the meat is brown and cooked through, about 5 to 7 minutes.

Traditional baked beans need to cook for hours, but these Instant Pot ones are ready in 40 minutes! They also use a secret ingredient: bourbon. To make the dish vegetarian, simply omit the bacon.

4 slices thick-cut bacon, diced
1 small onion, chopped
Kosher salt and freshly ground black pepper
2 teaspoons smoked paprika
1/4 teaspoon cayenne pepper
3/4 cup low-sodium chicken broth
2 15.5-ounce cans navy or small white beans, drained and rinsed
2/3 cup packed light or dark brown sugar
1/4 cup molasses
3 tablespoons apple cider vinegar
2 tablespoons tomato paste
2 tablespoons bourbon
1 tablespoon Dijon mustard

Steps:

  • Put the bacon in a 6- to 8-quart Instant Pot; set to sauté on medium heat. Cook, stirring, until the bacon is crisp and the fat is rendered, about 5 minutes. Remove the bacon with a slotted spoon and transfer to a paper towel-lined plate. Pour off all but 2 tablespoons fat from the pot.
  • Add the onion and 1 teaspoon each salt and black pepper to the Instant Pot. Cook, stirring, until the onion is soft and translucent, 6 to 7 minutes. Add the paprika and cayenne; cook 30 seconds. Add the broth and scrape up any browned bits from the bottom of the pot with a wooden spoon. Turn off the sauté function. Stir in the beans, brown sugar, molasses, vinegar, tomato paste, bourbon and mustard.
  • Put on the lid, making sure the steam valve is in the sealing position. Set to pressure-cook on high for 10 minutes. When the time is up, carefully turn the steam valve to the venting position and let the pressure release. Carefully remove the lid. Set the pot to sauté on medium heat; cook until the beans thicken slightly, about 5 minutes. Stir in the reserved bacon.

1 Tbs olive oil
1 small yellow onion (finely chopped)
1 pound hot Italian sausage
1 red bell pepper (cored, seeded, and finely chopped)
1 yellow bell pepper (cored, seeded, and finely chopped)
1 can pork and beans (16 ounces)
1 can Bush's Original Baked Beans (24 ounces)
1 cup barbecue sauce
½ cup ketchup
1 Tbs whole grain or dijon mustard
2 Tbs spicy brown mustard
2 Tbs Worcestershire sauce
1 Tbs soy sauce
1 tsp chili powder
2 Tbs molasses
4 Tbs brown sugar
8 slices bacon (cooked until crispy)

Steps:

  • Preheat the oven to 350 degrees and spray a 9x13 baking dish with cooking spray.
  • In a large heavy bottom Dutch Ovenadd 1 Tbs olive oil, and the onions, after 3-5 minutes add in Italian sausage.
  • Brown the Italian sausage, and when half done, add in the bell peppers.
  • Cook until sausage is fully browned, and veggies are soft.
  • Drain meat mixture.
  • Add the beans, barbecue sauce, ketchup, mustard, other mustard, Worcestershire sauce, soy sauce, chili powder, molasses and brown sugar to the sausage and onions and peppers.
  • Simmer mixture for 5 minutes.
  • Pour mixture into a baking dish.
  • Cook bacon until nice and crispy.
  • Sprinkle the bacon pieces over the top of the bean mixture.
  • Cover and cook for 40-45 minutes.
  • After 45 minutes, remove the foil and continue to bake for an additional 10 minutes.
  • Let sit for a few minutes, and then serve.
