GRILLED VENISON HEART WITH PEPPERS AND ONIONS



Grilled Venison Heart with Peppers and Onions image

This recipe can be done with any large heart. I designed it for deer and elk, but it will work with antelope, moose, wild boar or whatever. For non-hunters, try beef heart, veal heart or lamb hearts. You don't have to marinate the meat, but it adds a lot of flavor, and helps keep it moist on the grill.

1 or 2 deer hearts (or 1 elk, moose or beef heart)
4 tablespoons olive oil, (divided)
1 tablespoon sherry or red wine vinegar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon ground black pepper
3 or 4 colored bell peppers, (cut into 2 to 3 pieces each)
1 large onion, (cut into large wedges)

Steps:

  • Trim the hearts as discussed above. In a large bowl, mix 2 tablespoons of olive oil with the vinegar, Worcestershire sauce, salt, oregano, thyme and black pepper. Massage the marinade into the meat, put everything into a container that can just about hold everything and marinate for as little as 30 minutes, or as much as 2 days.
  • When you are ready to cook, get your grill hot. Coat the peppers and onion in the rest of the olive oil and salt well.
  • Grill everything on high heat. Put the hearts and veggies on the grill -- skin side down for the peppers -- and leave them alone with the grill cover open for 8 minutes. Flip everything and grill, uncovered, for 5 more minutes.
  • Check the peppers and onions, and when they are nicely cooked with a little char, remove and put in foil to steam. Remove any blackened skin from the peppers.
  • If the hearts are not cooked through yet, cover the grill and cook for 2 to 5 more minutes. If you are using a thermometer, you want to get the meat off the grill when it is 130°F in the center. You can also use the finger test for doneness. Tent the hearts loosely with foil and let rest for 5 to 10 minutes. Sprinkle with black pepper and good sea salt at the table.

1 3-pound beef tri tip roast
2 Tablespoons Beef Rub (or equal parts salt, pepper, and garlic powder)
½ cup Texas Style BBQ Sauce (recipe link in notes below)
¼ cup melted butter

Steps:

  • Preheat. Preheat your grill to 350 degrees F for two-zone grilling.
  • Season. Season the tri tip on all sides with Beef Rub and place it on the indirect heat on your grill.
  • Warm the sauce. Place the butter and BBQ sauce in a medium saucepan and onto your grill to heat through.
  • Grill the tri tip. Grill the tri tip on indirect heat, flipping every 6-7 minutes. Close the lid in between each flip.
  • Add sauce. Mop liberally with BBQ butter sauce after each time you flip the roast. Continue to grill the tri tip until the internal temperature reads one of the following: 115 degrees F for a rare roast (about 30 minutes), 125 degrees F for a medium-rare roast (about 35 minutes), or 135 degrees F for a medium roast (about 40 minutes).
  • Finish grilling. When the roast reaches the desired internal temperature for the doneness you prefer, move it over to direct heat and grill for 2-3 minutes per side or until internal temperature reaches your desired finished doneness: 125 degrees F for rare, 135 degrees F for medium-rare, or 145 degrees F for medium.
  • Rest, slice, and serve. Transfer the roast to a cutting board and let the roast rest for 10-15 minutes. Slice against the grain and serve with additional BBQ sauce.

1 tablespoon olive oil
1 small green bell pepper, chopped
1/2 yellow onion, finely chopped
1 tablespoon garlic salt
3 1/2 cups Neely's BBQ sauce, recipe follows
1 pound pork, beef, or chicken, cooked and chopped into bite-size pieces
1 pound spaghetti
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • In a large skillet, heat olive oil over medium heat. Saute the pepper and onion until softened, 1 to 2 minutes. Stir in the garlic salt. Add the BBQ sauce and bring to a boil. Reduce the heat to a low simmer and add the chopped meat.
  • Meanwhile, fill a large pot with water and bring to boil. Season liberally with salt and add spaghetti. Cook until al dente (firm but not hard), about 7 minutes, and drain. Toss spaghetti with sauce.
  • In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cooked uncovered, stirring frequently, for 1 hour 15 minutes.

1/4 cup brown sugar
2 tablespoons chili powder
Kosher salt and freshly ground black pepper
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 racks baby back ribs
1 cup low-sodium chicken broth
2 tablespoons apple cider vinegar
1 cup barbecue sauce

Steps:

  • Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
  • Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
  • Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

YUMMY RIBS - BAKED & BBQ'D - EASY!!

This is a recipe discovery (and my first posting of a recipe) but I've gotten so many amazing recipes off this site that I thought I owe it to the site to post an amazing and super-easy rib recipe. The delicious part of this is that it is so completely HANDS OFF that they can cook all day with a quick finish on the bar-b and your guests will be crooning for hours. Make lots - they go quick!! I should mention this recipe is so flexible - adjust however you like and you'll still get an amazing result!! I like to serve it with baked sweet potato (simply chop up a sweet potato, wrap in foil, and throw them in the oven for the last 30-45 mins) and coleslaw. mmmm goood. You can also "improve" any store bought sauce by adding ketchup, brown sugar or maple syrup or honey to suit your tastes - if you like garlic, add that too for a personalized "wow" result.

2 racks pork back ribs (or more)
0.5 (8 ounce) can beer or 0.5 (8 ounce) can other liquid
2 tablespoons montreal steak spice
salt
pepper
2 cloves chopped garlic (optional)
8 ounces bottled barbecue sauce (honey based ones are awesome)

Steps:

  • Chop ribs to a size that will fit your roaster. Sprinkle Salt, Pepper and a touch of Montreal Steak Spice over the ribs.
  • Place ribs in the roasting pan and pour about an inch of beer in the bottom of the roaster.
  • Roast ribs in oven for 2 hours at 350F or 3 hours at 325°F They'll smell great.
  • Take them out of the roaster, let them cool slightly and then slather them with your favorite bbq sauce and grill them on your barbecue until the sauce thickens and becomes a bit sticky. Indirect grilling works best but if you don't, watch them closely because the sugar in the barbecue sauce will make them turn black if you aren't careful. Serve them quickly!

Remove meat to a serving platter and keep warm. Skim fat from pan juices and thicken juices if desired. Serve with beef.

3 1/2 lbs boneless beef roast (chuck roast is perfect)
1 medium onion, peeled and chopped
1 cup ketchup
1/2 cup chili sauce
1/3 cup brown sugar
2 tablespoons spicy brown mustard
2 tablespoons Heinz 57 steak sauce (or your favorite hot sauce)
1 tablespoon dried garlic or 2 tablespoons fresh garlic
1 tablespoon cajun spices (or your favorite season salt)
1/2 teaspoon black pepper
1 tablespoon canola oil or 1 tablespoon olive oil

Steps:

  • Trim beef to remove fat; cut meat into large cubes about 2" x 2" (save fat & meat trimmings for latter).
  • Coat the bottom of a large crock-pot cooker with a little olive or canola oil to prevent sticking, then place meat in the cooker with the onion, Cajun spice, and garlic.
  • Mix together remaining ingredients (sauce) and pour over meat.
  • Cover and cook on high for 4 to 5 hours, or until meat shreds easily - stir once or twice during cooking if you can.
  • Remove the meat & onion from cooker with a slotted spoon and shred the meat with a potato masher or 2 forks, then pour about 1/2 cup of the sauce over the meat - serve with the remaining sauce on the side for those people that would like more sauce (or just save the extra sauce for other uses latter).
  • If you not afraid of a few extra calories, boil the trimmed off meat & fat with a cup of water in the microwave (or on the stove) and then add just the "liquid" from that to the crock-pot. I like to trim the fat off the meat because not everyone likes fat in their sandwich, but the fat is full of flavor :).
