Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

This recipe is a variation on a recipe I found on avocado.org. All of the ingredients are fresh which makes for a great authentic guacamole. Plus, avocado.org also taught me that avocados are great for regulating blood sugar and cholesterol! As if we need an excuse to eat guacamole...

1 tablespoon lime juice
1 diced garlic clove
1/2 cup diced cilantro
1/2 cup chopped green onion
1/2 teaspoon cumin
1/2 teaspoon salt

Steps:

  • Cut avocados into halves.
  • Pit and peel the avocado halves.
  • Combine avocados and remaining ingredients in medium-large bowl.
  • With a fork, mash avocados and mix in ingredients to desired consistency.

5 -6 ripe avocados
1 small red onion
2 limes, freshly squeezed
1 -2 jalapeno
1 cup chopped cilantro
salt
fresh ground pepper
hot sauce

Steps:

  • Mash up avacados in a bowl, make them as smooth or as chunky as you like. (We like it fairly chunky).
  • Peel and dice red onion.
  • Chop up fresh Cilantro, stems and all.
  • Dice jalepeno(s), de-seed if desired *Remember that the seeds give more heat* I leave them in because we love our mexican food spicy!
  • Add everything into a large bowl and stir, add in salt and freshly ground black pepper to tase, add the juice of the two limes.
  • Stir to combine, taste to see if it is hot, salty or sour enough, adjust to your taste, if you want more heat add the hot sauce -- once it is to your liking cover with plastic wrap and put in the fridge untill you are ready to serve.
  • This goes well with my salsa recipe, and tastes great with tacos, burrito's, nachos, tortilla chips or even carrot and celery sticks.

I used leftover Recipe #226934 in this. If your leftover chicken meat isn't very Mexican tasting, you might want to rub it with some cumin powder & chile powder first, or even some Mexican seasoning.

1/4 cup low sodium soy sauce
1/4 cup red wine vinegar
2 tablespoons honey
1/2 teaspoon hot sauce, to taste
1/4 teaspoon ground black pepper, to taste
3 (4 ounce) leftover cooked boneless skinless chicken breast halves or 12 ounces leftover cooked beef, cut into thin strips
1 red bell pepper, seeded and cut into thin strips
1/2-1 red onion, halved and thinly sliced
6 -8 flour tortillas
1 Hass avocado, peeled and pitted
1/2 cup diced canned tomatoes or 1/2 cup salsa
1 teaspoon garlic clove, minced
1/2 lime, juice of (will prevent discoloration) (optional)
2 tablespoons fresh cilantro leaves, chopped
salt, to taste

Steps:

  • In a shallow dish, whisk together soy sauce, vinegar, corn syrup, hot sauce, and pepper. Add leftover meat strips, bell peppers and onion and toss to coat.
  • Set a large greased stove-top grill pan over medium-medium high heat.
  • Grill meats and veggies 5 to 7 minutes, drizzling any remaining juices over the top, until vegetables are cooked to your liking and meat is heated through.
  • Transfer mixture to a serving platter.
  • Meanwhile, warm tortillas in the microwave or according to package directions.
  • To make the guacamole, in a zip-top bag or medium bowl, mash avocado lightly.
  • Then add tomato, garlic, lime juice and cilantro and combine.
  • Season, to taste, with salt and black pepper.
  • Serve fajitas with guacamole, some sour cream, and salsa on the side.

This is the best version of this classic guacamole dip. The ingredients are kept to a minimum, so it's as fresh-tasting as possible.

1 large ripe tomato
3 avocados, very ripe but not bruised
juice 1 large lime
handful coriander, leaves and stalks chopped, plus a few leaves, roughly chopped, to serve
1 small red onion, finely chopped
1 chilli, red or green, deseeded and finely chopped
tortilla chips, to serve

Steps:

  • Use a large knife to pulverise 1 large ripe tomato to a pulp on a board, then tip into a bowl.
  • Halve and stone the 3 avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl with the tomato.
  • Tip the juice of 1 large lime, a handful of roughly chopped coriander, 1 finely chopped small red onion and 1 deseeded and finely chopped red or green chilli into the bowl, then season with salt and pepper.
  • Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover with cling film and chill until needed.

1 lime, juice of
1/2 medium red onion
1 garlic, minced
1 tomatoes
1/4 cup cilantro (chopped finely)
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Halve an pit avocados.
  • Scoop out avocados w/ tablespoon into bowl.
  • Mash until soft but still chunky.
  • Add everything else.
  • Mix.
  • Serve chilled or at room temperature.

This is my favorite homemade salsa...it is quick and easy and nothing beats it with chips. It is also delicious on grilled chicken breasts or grilled fish. I know that there are a million of these recipes on here...but you must try it!!!

6 -8 hot house tomatoes
1 medium red onion
1 -2 jalapeno
1 cup chopped fresh cilantro
salt
fresh ground black pepper
hot sauce (if needed)
2 freshly squeezed limes, juice of

Steps:

  • Dice the tomatoes (Plese use a knife and cutting board, if you use a food processor it cuts them to fine and you will have salsa soup).
  • Dice the red onion and jalepeno(s) adjust to taste, if you like it spicy add the seeds and use 2, if you like a mild salsa scrape out the seeds and don't use them -- we add 2 peppers seeds and all, we love it spicy!
  • Finely Chop up the Fresh Cilantro, stems and all, measure out a cup. *This is a loose measurement, if you want more or less, you can add it, this is a recipe to taste*.
  • Add the tomatoes, onions, cilantro and jalepenos to a bowl, add salt and the fresh ground black pepper to taste. Add in the freshly squeezed lime juice and stir.
  • Taste it and see if it is the way you like it, if it needs more of anything add it -- if you want it hotter still add some hot sauce, a couple of drops at a time.
  • Once it is hot, salty or sour enough, stir well and put in the fridge untill ready to serve.
