Steps:
- Combine all ingredients in a small pot. Bring to a boil over medium heat. Once boiling, stir only occasionally to prevent sticking or boiling over. It will eventually thicken. Sweeten as desired. Add your favorite toppings. I like peanut butter, mini chocolate chips, or the healthy nutella recipe linked earlier in this post. Serve hot, or refrigerate overnight and serve either hot or cold the next day.View Nutrition Facts

BANANA OATMEAL ROCKS
Don't let the name fool you! These are cookies that end up soft and tender with a nice crunch from the nuts. I love the flavor comination of the lemon and banana. I personally don't care for rasins, so I use crasins (dried cranberries) This is another great way to use up ripe bananas!

Steps:
- Heat oven to 350°F Line cookie sheets with non-stick aluminum foil or spray with Pam spray.
- For cookies, beat sugar and margarine in large bowl until creamy. Add bananas, egg and lemon peel; beat well. Add combined flour, cinnamon, baking soda, salt, ginger and nutmeg; mix well. Add oats, raisins (crasins), and nuts; mix well.
- Drop dough by rounded tablespoonfuls onto cookie sheets.
- Bake approximately 10 minutes or until light golden brown. (Do not overbake; cookies should remain soft.) Slide cookies and foil from cookie sheets onto wire rack; cool while preparing glaze.

RIDICULOUSLY HEALTHY BANANA OATMEAL COOKIES
In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

Steps:
- Preheat the oven to 180c.
- Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.
- Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.
- Bake for around 20mins until golden brown.

LOW FAT BANANA OAT BREAD
Wholesome goodness of oatmeal in a moist banana bread. Low fat and low sugar, DH doesn't like overly sweet banana bread. This is one of my inventions and I hope you like it as much as we do.

BANANA OATMEAL MUFFINS - LOW FAT
These are tasty little muffins that I whipped up. They are low in fat but don't taste like it and can be jazzed up with little guilt. I love them with walnuts and white chocolate chips. The other great thing about this recipe is that no mixer is required and can be made in one bowl.

- The Mistake: Going Overboard With Portion Size Too much of anything can be unhealthy — oatmeal included. Oatmeal can be tricky, too, because the portion sizes differ when you're working with dry oats.
- The Mistake: Not Adding to Your Oatmeal to Make It a Full Meal OK, yes, we just built the defense on why oatmeal is such a healthy food — but to make it a balanced meal, you'll want to consider rounding it out a bit.
