MOIST & DELICIOUS BANANA NUT BREAD
I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

Steps:
- Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
- *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
BUTTERY BANANA NUT BREAD
Very moist and nutty, this bread has a flavor of butter that lingers on the palate. The spices in this are very subtle, but if you like a spicier bread, just increase those for a richer flavor.

Steps:
- Preaheat oven to 350F.
- Cream together softened butter and sugar in a mixer at medium speed until lightly fluffy.
- Add eggs one at a time, waiting a few moments after each addition to give time to blend.
- Add the dry ingredients alternatively to the mixer with some of the banana, allowing each to blend before adding some of the other.
- When all is mixed, fold in the chopped nuts.
- Grease sides and bottom of a 9x5-inch loaf pan and add batter to it.
- Bake in preheated oven for 1 hour or until it tests clean with a toothpick.
- Cool on a rack 10 minutes, then remove from pan to finish cooling.
- Dust with confectioners sugar (if desired), or you may use your favorite glaze (optional).
- Store unused portions in refrigerator, wrapped in foil.
BUTTERY BANANA BREAD
This is so buttery and moist. My extended family always goes nuts over it. Except I don't put nuts in it because two nephews are deathly allergic. But you can :-) Use 1/2 pecans if you want them.

- Preheat oven to 350°F Lightly grease loaf pan or put liners in muffin pan.
- In medium bowl, combine flour, baking soda and salt; set aside.
- In large bowl, add 2 bananas and sugar. Whip for a good 3 minutes until light & fluffy. Add melted butter, eggs and vanilla; beat well scraping sides. Mix in dry ingredients until just blended. Mash other 2 bananas so they still have a bit of texture and fold into.
- Pour batter into loaf pan or muffin cups.
- Bake for 1 1/4 hours if in loaf pan. Approx 15-20 minute if large muffins. Check with toothpick.
- Cool for 10 minutes then turn out loaf or pull muffins out of pan to cool completely. Dust with powdered sugar.
- Optional, toast bread slices.

- Preheat the oven to 350 degrees F and put a rack on the middle shelf. Butter and flour a 9 by 5 by 3-inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder and salt.
- In a separate small bowl, mash the bananas with a wooden spoon, leaving a bit of texture.
- In another large bowl, use a hand electric mixer or stand mixer to cream the 1/2 cup of butter and sugar together until light and fluffy. Add the eggs, 1 at a time. Stir in the mashed bananas, sour cream and vanilla and beat until just combined. Add the dry ingredients and gently stir in pecans. Pour the batter into the pan and put on a sheet tray.
- Bake for 1 hour and 10 minutes. Let cool for 5 minutes in the pan then turn out onto a wire rack to finish cooling. Slice and serve with Honey Butter.
- Mix the butter and the honey together in a small bowl with a wooden spoon. Serve with the banana bread.
PEANUT BUTTER BANANA BREAD

- For the bread: Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
- Whisk together the flour, baking soda, cinnamon and salt in a medium bowl.
- Beat together the peanut butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth. The bread can be stored at room temperature in an airtight container for up to 3 days.

- Heat the butter over medium-low heat in a small saucepan until the milk solids are deep golden brown and the butter smells toasted, 15 to 20 minutes.
- Whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon and salt in a medium bowl.
- Stir the brown butter so that any milk solids that have fallen to the bottom are distributed equally throughout the butter. Reserve 4 tablespoons of the brown butter for the glaze. - MASH bananas thoroughly. Measure exactly 3 cups prepared fruit into 6- or 8-quart saucepot.
- Add lemon juice and fruit protector; stir until well blended.
- STIR in pectin.
- Add butter to reduce foaming, if desired.
- Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
- ADD sugars; stir until well blended. Add walnuts and spices; mix well. Return to full rolling boil and boil exactly 1 minute, stirring constantly.
- Remove from heat.
- Skim off any foam with metal spoon.
- LADLE immediately into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly.
- Process 10 minutes in a hot water bath or use the inversion method. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.).
