HEARTY BANANA, APPLE & CARROT OATMEAL MUFFINS
These Hearty Banana, Apple & Carrot Oatmeal Muffins are healthy, delicious and perfect for breakfast or after school snacks.

Steps:
- Preheat your oven to 400 degrees.
- In a small bowl, first mix together the streusel ingredients and set aside.
- In a separate bowl mix together the flour, oatmeal, oat bran, baking powder and cinnamon. Set aside.
- With a mixer cream together the coconut oil and sugar. Then add the sour cream, juice and vanilla. Mix well. Then add the egg.
- Mix in the banana and grated carrot.
- Add the dry ingredients to the wet ingredients and gently combine.
- Stir in the apples and raisins.
- Line a muffin sheet with muffin cups and fill them about 2/3 full.
- Add about a tablespoon of the streusel mix on top of each cup of muffin batter.
- Bake 20 - 25 minutes.

- Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg. Set aside.
- Beat together the eggs. oil and sugar until fluffy.
- Blend in the milk.
- Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
- Do not over mix. Fold in only until the fruit is mixed through the batter.
- Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm.

- Pre heat oven to 400 degrees. Place all of the dried ingredients in a bowl and mix to combine.
- In a large separate bowl, add in the remaining ingredients and mix to combine.
- Pour the dry mixture into the wet mixture about ¼ of the bowl at a time and mix with a spoon until just wet and combined. DO NOT OVER MIX.
- Line a cupcake tin with paper baking cups. Pour mix into baking cups 2/3 of the way. Sprinkle a pinch of granulated sugar on top of each muffin.
- Bake 18-20 minutes, until golden brown on the top and a toothpick inserted into the center of a muffin comes out clean.
- Let cool on a wired rack for 2 minutes in the tin. Take muffins out and place back on wired rack to cool completely. Enjoy!

- Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with cupcake liners.
- Melt the butter in a small skillet set over medium heat, and cook until it starts to bubble and foam, about 5 minutes. Continue cooking, stirring constantly, until the foam subsides and brown specks start to appear, 1 to 2 minutes. Transfer the butter to a medium mixing bowl to cool slightly.
- In a large bowl, combine the flour, 1/2 cup of the oats, the baking powder, salt and baking soda.
- Add the sour cream, sugar and vanilla to the browned butter and whisk. Add the eggs and whisk until combined. Fold the wet ingredients into the dry ingredients and mix until just combined. Then fold in the bananas (don't worry if there are a few lumps).
