Hearty Banana, Apple & Carrot Oatmeal Muffins image

These Hearty Banana, Apple & Carrot Oatmeal Muffins are healthy, delicious and perfect for breakfast or after school snacks.

Number Of Ingredients 19

1 cup flour
3/4 cup oatmeal
1/4 cup oat bran
2 tsp baking powder
2 tsp cinnamon
1 banana (mashed)
1 apple (chopped)
3/4 cup grated carrot
1/4 cup raisins
1/2 cup brown sugar
1/4 cup coconut oil
1/2 cup sour cream or Greek yogurt
1/2 cup apple juice
1 tsp vanilla
1 egg
1/4 cup oats
2 tbsp flour
2 tbsp melted butter
2 tbsp brown sugar

Steps:

  • Preheat your oven to 400 degrees.
  • In a small bowl, first mix together the streusel ingredients and set aside.
  • In a separate bowl mix together the flour, oatmeal, oat bran, baking powder and cinnamon. Set aside.
  • With a mixer cream together the coconut oil and sugar. Then add the sour cream, juice and vanilla. Mix well. Then add the egg.
  • Mix in the banana and grated carrot.
  • Add the dry ingredients to the wet ingredients and gently combine.
  • Stir in the apples and raisins.
  • Line a muffin sheet with muffin cups and fill them about 2/3 full.
  • Add about a tablespoon of the streusel mix on top of each cup of muffin batter.
  • Bake 20 - 25 minutes.

1½ cups large rolled oats
1 cup whole wheat flour, ( 60%. You can use all-purpose flour if you prefer)
3 tsp baking powder
½ tsp salt
1½ tsp cinnamon
½ tsp nutmeg
2 eggs
4 tbsp vegetable oil
6 tbsp sugar
⅔ cup milk
1 cup mashed ripe banana
1 cup grated unpeeled apple, (approximately one large apple)

Steps:

  • Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg. Set aside.
  • Beat together the eggs. oil and sugar until fluffy.
  • Blend in the milk.
  • Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
  • Do not over mix. Fold in only until the fruit is mixed through the batter.
  • Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm.

Apple Banana Oat Muffins, an easy, on the go snack with the flavors of banana bread! Super easy to whip up and great for breakfast or dessert.

Number Of Ingredients 11

1 ½ cup all-purpose flour
1 cup old fashioned oats
½ cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 egg
¾ cup milk
1/3 cup vegetable oil
1 cup mashed bananas 3 medium sized bananas
½ cup grated granny smith apple peeled

Steps:

  • Pre heat oven to 400 degrees. Place all of the dried ingredients in a bowl and mix to combine.
  • In a large separate bowl, add in the remaining ingredients and mix to combine.
  • Pour the dry mixture into the wet mixture about ¼ of the bowl at a time and mix with a spoon until just wet and combined. DO NOT OVER MIX.
  • Line a cupcake tin with paper baking cups. Pour mix into baking cups 2/3 of the way. Sprinkle a pinch of granulated sugar on top of each muffin.
  • Bake 18-20 minutes, until golden brown on the top and a toothpick inserted into the center of a muffin comes out clean.
  • Let cool on a wired rack for 2 minutes in the tin. Take muffins out and place back on wired rack to cool completely. Enjoy!

1 tablespoon vegetable oil
1/2 cup grated peeled tart apple
1/4 cup mashed ripe banana

Steps:

  • In a small bowl, combine the first seven ingredients. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apple and banana., Fill greased muffin cups about three-fourths full. Bake at 375° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

3/4 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon ground cinnamon

2 egg whites
1 cup mashed ripe bananas (about 2 medium)
1/2 cup packed brown sugar
1/4 cup fat-free milk
1/4 cup canola oil
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, beat the egg whites, bananas, brown sugar, milk and oil. Stir into dry ingredients just until moistened. Stir in pecans. , Coat muffin cups with cooking spray; fill two-thirds full with batter. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. 1 stick (8 tablespoons) unsalted butter
1 1/2 cups whole wheat pastry flour or white whole wheat flour
1/2 cup plus 2 tablespoons rolled oats
1 teaspoon baking powder
1/2 teaspoon fine salt
1/4 teaspoon baking soda
1/2 cup reduced-fat sour cream
1/2 cup packed dark brown sugar
1 teaspoon pure vanilla extract
2 large eggs
2 medium bananas, peeled and cut into 1/2-inch pieces (about 1 heaping cup)

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with cupcake liners.
  • Melt the butter in a small skillet set over medium heat, and cook until it starts to bubble and foam, about 5 minutes. Continue cooking, stirring constantly, until the foam subsides and brown specks start to appear, 1 to 2 minutes. Transfer the butter to a medium mixing bowl to cool slightly.
  • In a large bowl, combine the flour, 1/2 cup of the oats, the baking powder, salt and baking soda.
  • Add the sour cream, sugar and vanilla to the browned butter and whisk. Add the eggs and whisk until combined. Fold the wet ingredients into the dry ingredients and mix until just combined. Then fold in the bananas (don't worry if there are a few lumps).
  • Divide the batter evenly among the prepared pan. Sprinkle with the remaining 2 tablespoons oats. Bake until the muffins are light golden and a toothpick inserted in the center comes out clean, 20 to 24 minutes. Cool in the pan for a few minutes, and then transfer to a wire rack to cool completely.
