Yield about 1-1/2 dozen.

Number Of Ingredients 13

2-1/4 cups all-purpose flour
1 cup granola without raisins
3/4 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
3/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup miniature semisweet chocolate chips
1/2 cup chopped dry roasted peanuts
1/2 cup raisins
1/2 cup chopped dried apricots

Steps:

  • In a large bowl, combine the flour, cereal, brown sugar, baking powder and salt. In another bowl, beat the eggs, milk, oil and vanilla; stir into dry ingredients just until moistened. Fold in the chips, peanuts, raisins and apricots., Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

I made these for breakfast on a whim. I wanted muffins but couldn't seem to locate a suitable addition, until I came across a Nut and Berries trail mix. I thought, "Why not?". The muffins turned out crispy and sweet on the outside, and fluffy yummy on the inside. The batter is thicker than usual muffin batter, which I like because it's easier to spoon them into a tin.

Number Of Ingredients 9

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup sugar
1 cup milk
2/3 cup vegetable oil
1 egg
1 tablespoon vanilla bean paste
1 cup trail mix, with granola, nuts and dried berries

Steps:

  • Preheat oven to 375 degrees.
  • Mix together flour, baking soda, salt and sugar in a mixing bowl.
  • In a separate bowl, whisk the milk, oil, egg and vanilla together until the egg is beaten well.
  • Pour the liquid into the flour mixture and stir just enough to combine (it's important not over mix muffins). The batter will be thicker than typical muffin batter, but that's ok. It's also okay if it's a little bit lumpy.
  • Stir in the trail mix.
  • Spoon the batter into a greased muffin tin, filling the cups most of the way and bake for 25 minutes.
  • Turn out the muffins onto a clean kitchen town and let cool for a few minutes before serving.

This gorgeous recipe for moist and flavorful yet also healthy muffins comes from " The Wild Wild West" cookbook, which I got of my wonderful swap partner and friend Tammie in the 2009 Cookbook Swap. I luv how easy and quick it comes together and how tasty the muffins are while still being good for you.

Number Of Ingredients 17

3/4 cup oat bran (use toasted for more flavour)
3/4 cup flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon (original calls for 1/2ts but I like it better this way)
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 large egg
1 cup applesauce
1/2 cup low-fat plain yogurt
2 tablespoons oil (mixed with 1 tbsp applesauce)
1 tablespoon applesauce
3 tablespoons honey or 3 tablespoons agave nectar
1 cup apple, chopped (1 apple)
1/2 cup pecans, chopped (optional, I leave them out)
cinnamon sugar, for sprinkling (optional)

Steps:

  • Coat muffin pan with non-stick cooking spray or line with paper cups (muffins will stick to them though).
  • Combine first 8 ingredients in a large bowl.
  • In a second bowl combine oil mixed with 1 tbs applesauce, 1 cup applesauce, yoghurt, egg and honey/agave nectar. Add to dry ingredients and stir only until just moistened.
  • Fold in apples and pecans if using. Pour into prepared muffin tins, sprinkle lightly with cinnamon sugar if using.
  • and bake in the pre-heated oven at 400°F for 20-25 minutes.
