BANANA GINGERBREAD LOAF
Deliciously spiced, easy to make Banana Gingerbread Loaf is one of my family's favourite loaf cakes. It's perfect for any time of day!

Steps:
- Preheat the oven to 350°F (175°C).
- Grease and flour or line a 8½ by 4½ inch (2 lb) loaf pan.
- Peel and mash the bananas in a medium bowl.
- Stir the molasses, sugar, buttermilk, egg and olive oil into the mashed banana. Set aside.
- Sift the flour, baking powder, baking soda, salt, ginger, cinnamon, ground cloves and nutmeg together into a large bowl.
- Stir in the banana mixture until thoroughly combined, but do not over-mix.
- Pour the batter into the loaf pan and bake for 40 to 50 minutes, or until a skewer inserted in the centre of the loaf comes out clean.
- Let the loaf cool in the pan for about 15 minutes and then carefully remove and cool completely on a wire rack.
- To make the glaze:
- Sift together the icing sugar and the ginger.
- Gradually add the water, a bit at a time, until a creamy, drizzle-able consistency is reached.
- Place a sheet of baking parchment or waxed paper underneath the wire rack with the cooled cake on it.
- Drizzle the glaze over top of the cake.
- Allow the glaze to set for at least a half hour before slicing.
- Store your Banana Gingerbread Loaf in a sealed container at room temperature.
GINGER BANANA BREAD
This is a very moist banana bread with lots of banana flavor. There is a bit of spice for those who like a bit of 'extra' in their banana bread. This recipe still has a big banana flavor with a scrumptious note of spice to make it really special.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
- Combine flour, baking soda, cinnamon, nutmeg, ginger, and salt together in a bowl.
- Beat butter, white sugar, and brown sugar together in a bowl using an electric mixer until smooth and creamy. Stir bananas, eggs, lemon juice, and vanilla extract into creamed butter mixture until well blended. Stir banana mixture into flour mixture until batter is just combined; pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 60 to 65 minutes. Cool bread in the pan for 10 minutes before turning onto a wire rack to cool completely.

- Preheat the oven to 350 degrees. Thoroughly grease a 9 x 5 inch loaf pan.
- In a large mixing bowl, whisk together the flour, salt, soda, ginger, cinnamon, nutmeg, and cloves. Set aside.
- In another bowl, whisk together the butter, sugar, and molasses until well combined. Whisk in the eggs, one at a time, until well combined. Stir in the milk and smashed bananas.
- Add the flour mixture to the banana mixture and stir until no white remains. Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, or 45-55 minutes.

- Preheat the oven to 350 degrees. Spray a 9x5 loaf pan.
- Sift together all the dry ingredients.
- In a large bowl, cream the butter, brown sugar, molasses, and honey until smooth.
- Mix in the eggs one at a time. Mix in the sour cream and bananas.
- Stir in the dry ingredients just until blended.
- Place the batter in the pan and bake for 55-60 minutes, or a toothpick comes out clean.
- Cool in the pan for 10 minutes, then turn onto a wire rack and cool completely. Dust with powdered sugar or glaze.

BANANA LOAF

- Preheat the oven to 180c/350f gas mark 4, then cream together the butter and sugar until fluffy before beating in the eggs.
- Peel and mash the bananas with a fork. Beat the mash into the mixture, adding a few drops of vanilla extract. Sieve the flour and baking powder, fold into the mixture before adding the nuts.
- Spoon the mixture into the tin and smooth the top. Bake for 40-50 minutes until the loaf has risen and is golden. Cool the loaf for 10 minutes then turn out and cool on a wire rack. Slice and serve.

- Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Mash bananas in a large bowl with a fork. Add brown sugar, molasses, oil, eggs, and 1/4 cup milk. Stir until combined. Stir flour, ginger, cinnamon, baking soda, cloves, allspice, and salt together in another bowl. Stir flour mixture into the banana mixture until just incorporated. Pour into the prepared pan.

BRILLIANT BANANA LOAF
A cross between banana bread and a drizzle cake, this easy banana loaf recipe is a quick bake that can be frozen. It's great for using up overripe bananas, too.

- Heat oven to 180C/160C fan/gas 4.
- Butter a 2lb loaf tin and line the base and sides with baking parchment.
- Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
- Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
- Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
- Cool in the tin for 10 mins, then remove to a wire rack.
- Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
- Drizzle the icing across the top of the cake and decorate with a handful of banana chips.
