These delicious Banana Bread Brownies may be my favorite sweet treat to use up ripe bananas! They're thick and moist with a finger-licking brown butter frosting.

1-1/2 cups granulated sugar
1 cup plain Greek yogurt ((or sour cream))
1/2 cup butter (softened)
2 large eggs
3-4 ripe bananas (mashed)
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
4 Tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla extract
1-2 Tablespoon milk

Steps:

  • Preheat oven to 375 degrees F and grease a 9x13 inch pan with non-stick cooking spray.
  • In a large bowl, cream together the sugar and butter. Beat in the sour cream and eggs, bananas and vanilla extract.
  • Add the flour, baking soda, salt, and mix just until moistened. Stir in walnuts, if using.
  • Spread batter evenly into prepared pan and bake for 23-28 minutes or until a toothpick inserted in the center comes out clean, or with few crumbs. Make frosting while the bars bake.

1 ½ cups white sugar
1 cup sour cream
½ cup butter, softened
2 eggs
1 ¾ cups mashed ripe bananas
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts
½ cup butter
4 cups confectioners' sugar
3 tablespoons milk
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 15x10-inch jelly roll pan.
  • Beat white sugar, sour cream, 1/2 cup softened butter, and eggs in a bowl with an electric mixer until creamy. Beat in bananas and 2 teaspoons vanilla extract. Add flour, baking soda, and salt; mix for 1 minute. Stir walnuts into batter until evenly incorporated. Spread batter in prepared pan.
  • Bake in the preheated oven until golden, about 27 minutes. Cool.
  • Melt 1/2 cup butter in a large saucepan over medium heat until bubbling and golden brown, 3 to 5 minutes. Remove from heat.
  • Whisk confectioners' sugar, milk, and vanilla extract into melted butter until a smooth frosting consistency is reached. Spread frosting over cooled banana bars.

1 ¾ cup (3-4) ripe bananas, mashed
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
¾ tsp. salt
½ cup chopped walnuts (optional)
Frosting
½ cup butter
4 cups powdered sugar
1 ½ tsp. vanilla
3 Tbsp. milk

Steps:

  • Heat oven to 375 degrees.
  • Grease and flour a 15x18 jelly roll pan (or a cookie sheet with sides).
  • In a large bowl, beat together sugar, sour cream, butter and eggs until creamy.
  • Blend in bananas and vanilla.
  • Add flour, baking soda and salt and blend for one minute. Stir in nuts.

  • It will be thicker than a glaze but thinner than a frosting.

  • Note: I began making the frosting when the bars only had about 10 minutes left to bake. You do not want to let the frosting sit too long before spreading on the bars or it will make it very difficult to spread. If this happens, reheat the frosting in the microwave for a short amount of time to make it thinner and spread better.

I got this great recipe from a site called CaramelPotatoes.com. So yummy. The sour cream helps to keep these light, like cake, but the bananas make it super moist. This is a great way to use up over-ripe bananas. I put them in the freezer and just thaw them when I'm ready to bake. Works great!

1 cup sour cream
1/2 cup butter, softened

1 3/4 cups bananas, mashed (3 or 4)
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup walnuts, chopped (optional)
frosting
1/2 cup butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
3 tablespoons milk

Steps:

  • Heat oven to 375 degrees. Grease and flour a 10×15 jelly roll pan. Beat first four ingredients until creamy. Blend in bananas and vanilla until incorporated. Add dry ingredients and blend one minute. Sitr in nuts and spread in pan. Bake 20 to 25 minutes -until light brown and center springs back to the touch (don't over bake). Cool and frost with Browned Butter Frosting.
  • For the frosting: 1/2 cup butter.
  • 2 cups powdered sugar.
  • 1 1/2 teaspoons vanilla.
  • 3 tablespoons milk.
  • Heat butter in saucepan over medium heat past the melting point until it boils and turns a delicate brown.Remove from the heat and immediately wisk in the remaining ingredients. This should make a thick glaze. Using a spatula smooth over the top of the Monkey Bars immediately. Work quickly, it hardens fast!

  • Spread dough in prepared pan; use a spatula to get the dough evenly spread on the pan.
  • Bake for 20 to 25 minutes or until light brown.
  • Cool in the pan.
  • Prepare the frosting by heating the butter in a medium size saucepan over medium heat until slightly frothy and just brown but not burned; remove from heat.
  • Mix in the powdered sugar, vanilla and milk; whisk until smooth and fluffy.
  • Spread frosting on cooled cake.
  • Cut into 2 x 2 inch bars.
