Steps:
- Add your quinoa and water to a small saucepan. Bring the water to a boil, then reduce to simmer, cover and allow the quinoa to cook for 15 minutes.
- Remove the pan from the heat, remove the lid and fluff the quinoa with a fork. Allow to cool completely before storing for later!
- To assemble your bowls, follow this "loose" formula. Add 1 cup of cooked quinoa into each bowl. Top with your desired veggies of choice, protein, and healthy fat (avocado, nuts, seeds, etc.), and then finish with a dressing!

BLT QUINOA BOWLS

- Prepare quinoa according to package directions. Combine 3 tablespoons olive oil, basil, 1 tablespoon vinegar and lemon juice. Add to cooked quinoa; stir to combine., Place 2-3 in. of water in a large skillet with high sides; add remaining vinegar. Bring to a boil; adjust heat to maintain a gentle simmer. Break 1 cold egg at a time into a small cup; holding cup close to surface of water, slip egg into water. Cook, uncovered, until whites are completely set and yolks begin to thicken but are not hard, 3-5 minutes. Using a slotted spoon, lift eggs out of water. Keep warm., In a large skillet, heat remaining oil over medium heat. Cook tomatoes until they begin to release their juices, 8-10 minutes. Add arugula; cook and stir just until arugula is wilted, 1-2 minutes., To serve, divide quinoa evenly among 4 bowls. Add cherry tomatoes, arugula, avocado slices and crumbled bacon. Top each with a poached egg.

MEAL PREP FARRO AND QUINOA VEGGIE BOWLS
At the beginning of the week I like to cook off a big batch of grains, prep and chop my veggies and roast any veggies to use all week long in bowls and salads. It helps me eat healthier without having to think too hard about it. Prepping as much as you can will help this meal, and whatever version you want of it, come together in a breeze.

- In a 6-quart saucepan, combine the water, farro, quinoa, bay leaf, the grated zest of 1 lemon and a large pinch of salt. Stir and bring to a boil over medium-high heat. Stir again then cover, reduce the heat to a simmer and cook over medium-low heat for 10 minutes. Bump the heat up to medium and cook, uncovered, until all of the liquid has absorbed and the grains are al dente, 5 to 7 minutes.
- Cover, remove from the heat and let stand for 5 minutes more. Remove and discard the bay leaf and fluff the grains with a fork.
- While the grains cook, prep your veggies, herbs and cut the 2 lemons into 10 wedges. If meal prepping for the week, only cut the amount of avocado you need right away. Refrigerate everything (except the nuts and seeds) in separate airtight containers for up to 3 to 4 days until needed.
- To assemble 1 bowl: Scoop 1/2 cup of the cooked grains into a shallow bowl then top with a few thin avocado slices, some of the cucumber and a handful each of the baby lettuce and carrots. Add a sprinkle of the cashews and sunflower seeds followed by a scoop of hummus. Finish with a sprinkle of herbs, a squeeze of 1 lemon wedge and drizzle of olive oil. Feel free to top the bowl with any of the suggested add-ins or switch-ups.
- After refrigerating the grains, let them come to room temperature before serving. Alternatively, warm them in the microwave, or in a skillet with a little water over low heat until the liquid evaporates.

- Tip the onion and bulgur mix into a pan, pour over 600ml water and stir in the thyme and bouillon. Cook, covered, over a low heat for 15 mins, then leave to stand for 10 mins. All the liquid should now be absorbed. When cool, remove the thyme and divide the bulgur between four bowls or plastic containers.
- For the avocado topping, toss all the ingredients together except for the rocket. Pile onto two portions of the bulgur and top with the rocket.
- For the beetroot topping, first pile the chickpeas on top, then toss the beetroot with the tomato, mint, cumin, a good pinch of cinnamon, the oil and vinegar. Toss well, add the orange, then pile onto the remaining portions of bulghur, scatter with the pine nuts and sprinkle with extra cinnamon. Chill in the fridge until needed.

COPYCAT FIRST WATCH QUINOA POWER BOWL
I think you are really going to enjoy this protein-packed quinoa mixed with grilled chicken, lemon, feta, roasted tomatoes and shredded carrots. I, like many people, have been trying to eat healthier. Part of that has been substituting refined wheat flour with more whole grains like quinoa. I often brunch at First Watch, and decided to try one of their Quinoa Power Bowls, instead of going for the pancakes. I was pleasantly surprised at how fresh, hearty and satisfying the dish was, and the boost of energy stayed with me for hours without leaving me sluggish, as typical with sugar-laden pancakes. So, I decided to try to make this new dish a staple in my diet. The recipe is quite simple, and the dish is a complete meal all-in-one, so it takes the guess work out of what side dishes to prepare to ensure a balanced meal of protein, whole grains and fresh veggies. - Rinse quinoa thoroughly to remove any residue. Combine quinoa and chicken broth in a large pot over high heat. Bring to a boil. Reduce heat to low, cover and simmer 15 minutes. Remove from heat and let sit covered for 5 minutes.
- While the quinoa is cooking, you can prepare the lemon dressing. Zest and juice a lemon into a small bowl. Add olive oil, salt and freshly cracked black pepper. Set aside.
- Thaw frozen chicken strips in the microwave (do not overcook) and finely dice. Set aside.
- Once the quinoa is cooked, add lemon dressing, chicken, feta cheese, diced tomatoes, carrots, half-and-half and water. Cook over medium heat for 15 minutes, stirring frequently, until thick and creamy.
