- Preheat the oven to 180c/350F degrees.
- Mix dry ingredients together well.
- Add beaten eggs and melted butter to the dry mixture and mix well. If the mixture is a bit thick, add about 1/4 cup water.
- Fill muffin cases just over half way with the batter.
- Bake for 20 minutes until the tops are golden brown. Cool in the pan for a few minutes, then remove.
- Mix the additional cinnamon and melted butter then dip the tops of the muffin in this mixture (optional)
- Eat and enjoy!

- Preheat the oven to 350°F. Line a large muffin pan with paper liners.
- Using the paddle attachment on a stand mixer, a hand mixer, or two forks, cream the oil and sugar. Add the bananas, applesauce, vanilla, and water and beat until smooth. Beat in the eggs.

FLAXSEED MUFFIN IN A MUG
Steps:
- In a bowl, whisk egg, oil, and vanilla together. Set aside.
- Stir in the dry ingredients: flax meal, baking powder, cinnamon, and sugar-free sweetener.
- Stir in the optional ingredients. Raspberries and chocolate chips are my favorite.
- Transfer into a mug - mine was 2.5 inches in height. That's the minimum required to prevent the muffin from overflowing.
- Microwave on high for 1 minute 30 seconds.
- Wait 1 minute before eating not to burn yourself.

- Preheat oven to 325°F.
- Stir all dry ingredients together in a large mixing bowl.
- Add the remaining ingredients and stir until completely incorporated.
- Using a silicone muffin pan or a metal muffin pan filled with cupcake liners, fill ¾ full.

MOIST CHOCOLATE FLAX MUFFINS
Due to my low carb lifestyle, I've been experimenting with many flax muffin recipes. I came up with this chocolate version that uses pumpkin to help keep it moist. They are also yummy for my gluten free friends! I will also add grain sweetened chocolate chips as a treat and to make these even better. (They won't be gluten free anymore with grain-sweetened chips).

Steps:
- Oven 350 degrees. Makes 9 muffins.
- Mix first 5 ingredients and set aside.
- In medium sized microwave safe bowl, add the chocolate block and slowly, gently melt in microwave, stirring every ten seconds. Dont burn the chocolate. Finish the melting by vigorously stirring in the bowl.
- Add in the baking powder. If it cools down, heat for a couple seconds in the microwave and then add one egg. Stir until completely blended. (This takes patience and time). Once blended, add the other two eggs and mix well. Add the remaining ingredients and combine.
- Add wet to dry and mix well. Let batter set for a few minutes while you prepare pans for 9 cupcakes. (I use silicone cupcake liners).
- Place batter evenly in liners with an ice cream scoop. Bake at 350 degrees for 20 minutes or until the top is firm to touch. Cool completely and store in ziplock bag in fridge (remember there is no sugar to preserve them).

HEALTHY BANANA FLAXSEED MUFFINS

- Preheat the oven at 425°F (218°C). Also, grease a 12 count muffin pan (you can use liners if you prefer).
- In a large bowl, add the peeled banana. Mash them wel with a forkl, but if you like them a little bit chunky, then just mash them coarsely.
- Add oil, agave syrup, eggs, vanilla extract, yogurt and mix well.
- Now add the salt, cinnamon and baking soda, and then the whole wheat flour and flax meal. Fold it all gently with the wet ingredients. Do not overmix.
- Add the mini chocolate chips and mix. Save some to top in the baking pan.
- Spoon the batter evenly into each muffin cup. Sprinkle some chocolate chips on the top.
- Bake in preheated oven for 7 minutes then reduce oven temperature to 375 degrees and continue to bake 8-10 minutes until a toothpick inserted into center comes out clean.
- Remove from muffin pan and let the muffins cool completely on a wire rack and enjoy! Store muffins in an airtight container.

This is a recipe I came up with for flax seed using recipe #9176 by Evie*. I tried changing it and it worked perfectly. I sometimes add dried or freeze-dried fruit to these. This recipe make a wonderful flax muffin. The addition of flax seed to recipes gives a nutty flavor without nuts.
