COKE CAKE
I won this cake at a fund-raising auction at my husband's school. It was soooo yummy and rich! The mom who made it gave me the recipe, too, with the following note: "The success of this cake is while you are baking and mixing, you need to sip on a classic coke. Then after the cake is cooled (and after licking the topping kettle...

Steps:
- 1. MIX BY HAND! Sift flour and sugar together in large bowl.
- 2. Combine butter, shortening or oil, coke, cocoa and heat until butter is melted. Pour over flour mixture and stir well.
- 3. Add buttermilk, baking soda, beaten eggs, vanilla and marshmallows. Mix well and spoon into well greased 13x9 inch pan. Marshmallows will tend to gather together in one section - distribute throughout pan. Bake at 350ºF for 45 minutes or until cake tests done. Spread topping on hot cake.
- 4. TOPPING DIRECTIONS: About 5 minutes before cake is done, combine butter, coke and cocoa in a sauce pan and bring to boil. Stir in remaining ingredients and pour over hot cake while it is still hot in the pan. Topping will be thin, but it will thicken. Leave in pan until cooled.

Steps:
- Heat the oven to 180C/350F/Gas4.
- Sift the flour, sugar, cocoa and bicarbonate of soda into a bowl. Melt the butter and cola drink gently in a pan then add to the dry ingredients, together with the milk, eggs and vanilla.
- Mix gently but thoroughly and tip into a buttered, loose based cake tin (24cm/9½ in diameter). Bake for about 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave for about 15 minutes while you make the topping. Put the butter, cola drink and cocoa into a pan and melt slowly. Bring the mixture to the boil and then pour onto the icing sugar. Beat until smooth and pour over the cake while still warm. Cool the cake in the tin.
- Serve with the sauce, made by melting the chocolate bar gently in a pan with a splash of cream (you may want to add a little warm water to achieve a pouring consistency), stir in the marshmallows if using.

COLA CAKE
This recipe uses a can of soda instead of the oil, water, and eggs added to packaged cake recipes. Cake comes out surprisingly fluffy and moist with a slight kick to it that people love. Experiment with different flavored sodas for slightly differing tastes.

COCA-COLA CAKE
While their recipe may be a secret, Coca Cola itself can be used to make the most delicious and moist chocolate cake you've ever had. Yes, we mean that. Velvety in texture and incredibly tender from the oil and buttermilk, the layers are flavored with both cocoa powder and Coca Cola. But to top it off, Coca Cola is reduced to a syrup and beaten into a slightly salty cream cheese frosting that makes the flavor of the entire cake stand out! Simple in appearance and yet outstanding in flavor and texture, this is the kind of cake that makes it really hard to avoid seconds-trust us, we tried. Use a spoon to create elegant swooshes in the frosting and consider telling sweet-toothed guests that this is just your secret chocolate cake recipe. They might not know why they love it, but the Coca Cola Flavor ensures that they will!

Steps:
- Place the 4 cups of Coca Cola for the Frosting in a medium sized pot and boil over medium-high heat until the liquid is reduced to 1/3 of a cup, about 1 hour and 5 minutes. The liquid will be thick and syrupy. Set aside to cool to room temperature.
- While the Coca Cola for the Frosting is boiling, make the Cake: Preheat oven to 350°F. Grease and line two 9-inch round cake pans with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix briefly to combine. Scatter butter across the surface of the dry ingredients and paddle on low until completely incorporated, about 2 minutes. In a separate bowl, whisk together 1 cup Coca Cola, vegetable oil, buttermilk, eggs, and vanilla. Add the liquid ingredients in 3 additions to the dry ingredients, beating the mixture on medium-low for 2 minutes between each addition. Divide batter evenly among cake pans and bake until a toothpick inserted comes out clean, 30 to 35 minutes. Allow to cool completely before removing from pans, about 1 hour.
- In a clean bowl, beat together butter and cream cheese until well combined. Add powdered sugar and salt and beat on low until incorporated. Increase the speed to medium-high and beat for 4 minutes until shiny and satiny. Use a rubber spatula to scrape the room temperature Coca Cola syrup into the frosting. Beat for another 2 minutes until well incorporated. Scrape down the sides of the bowl to incorporate any syrup that sticks to the bowl, and beat again for 1 minute to combine.
- Place one cake layer on a cake plate. Spread 1/2 cup frosting evenly across the surface. Add the second cake layer. Take 1 cup of frosting and spread it evenly over the entire cake. Refrigerate for 30 minutes before taking the rest of the frosting and spreading it over the cake, using a spoon to create decorative swooshes in the frosting.

Steps:
- Preheat oven to 325°.
- Sift together the flour, baking soda, and salt; set aside.
- Liberally grease and lightly flour a standard Bundt pan.
- Beat the eggs with an electric mixer; gradually add the softened butter and the sugar and beat until creamy.
- Beat in the Coca-Cola, rum, vanilla, and milk (note--use only fresh, bubbly Coke, not flat Coke, as called for in some recipes; the bubbles actually make a honeycomb effect in the finished cake).
- Gradually add the flour mixture to the mixing bowl, beating constantly until you have a smooth batter.
- Pour the cake batter into the prepared pan; bake 45-60 minutes, or until the cake tests done.
- Let the cake cook slightly; use a knife to work around the sides and center of the cake, and then invert the cake on a serving platter.
- The sauce: while the cake is baking, make the sauce--bring the Coca-Cola, sugar, and corn syrup to a boil in a 2-quart saucepan; continue cooking at med-high heat, stirring, until the syrup thickens.
- Remove from the heat and immediately stir in the butter and the rum.
- Serve the cake warm, spooning plenty of sauce over each individual serving.
- *Can double the sauce, if you want.

CHERRY COKE CAKE
Chocolate and cherries are a magical combination. Here, we amp up the cherry flavor by using cherry cola in the cake batter.

Steps:
- For the cake: Preheat the oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray, then line with parchment and spray the parchment.
- Combine the cake mix and pudding mix in a stand mixer fitted with the paddle attachment and mix on low speed to blend. With the mixer still running, add the egg whites, cherry cola and vegetable oil and mix until combined. Raise the speed to medium and mix until increased in volume, lighter in color and smooth, about 5 minutes. Fold in the maraschino cherries. Divide the batter between the prepared baking pans; smooth into even layers using an offset spatula.
- Bake until a skewer inserted in the center comes out clean and the edges pull away from the sides of the pan, about 15 minutes. Transfer to a rack and let cool in the pans, about 10 minutes, then turn out onto racks and let cool completely, about 1 hour.??
- For the frosting: Mix the confectioners' sugar, butter and salt together in a stand mixer fitted with the whisk attachment. Mix on low speed until well blended, then increase the speed to high and whip until light and fluffy, 3 to 5 minutes. Add the maraschino cherry liquid and continue to whip until bright pink and spreadable. Add the chopped cherries and mix on low speed until evenly distributed.
- Using a serrated knife and sawing in long, even strokes, carefully halve the cake layers horizontally. Place 1 layer, cut-side up, on a platter or cake stand; spread 1 1/2 cups frosting on top. Stack another cake layer on top and spread another 1 1/2 cups frosting on top. Repeat with the remaining 2 cake layers, then cover the top and sides with a thin layer of frosting (this is the crumb coat) and use a bench scraper or large offset spatula to smooth out the sides and top (it's okay if some cake shows through). Refrigerate 15 minutes, then add another 1/2-inch layer of frosting to the top of the cake and smooth out to make a perfectly flat top. Refrigerate until ready to cover with ganache.
- For the ganache: Meanwhile, place the chocolate in a heatproof bowl and heat the cream in a small saucepan over medium-high heat until beginning to boil. Pour the cream over the chocolate and let sit, stirring occasionally, until the mixture is completely smooth and the chocolate is melted, about 5 minutes. Let cool 30 minutes, then pour over the chilled cake so that the top is completely coated and chocolate drips decoratively down the sides. Let set at room temperature 30 minutes, then top with the whole cherries in the center of the cake and serve.
