FLUFFY BANANA PANCAKES

Fluffy yet moist thanks to mashed banana mixed into the batter, these pancakes make for the perfect weekend morning breakfast.

Number Of Ingredients 10

2 cups buttermilk (or 2 tablespoons vinegar + enough milk to equal 2 cups)(can substitute almond milk + vinegar)
1 large or 2 small ripe bananas (or about 1 cup mashed) (plus extra for slicing on adding to top of pancakes)
2 eggs
3 tablespoons unsalted butter (melted and cooled slightly) (can substitute melted coconut oil)
2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour
1/4 cup granulated sugar (can substitute pure maple syrup)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Add the buttermilk to a large bowl. If you're using the vinegar plus milk option, let sit for about 10 minutes to allow the milk to turn to buttermilk. Whisk in the mashed banana, eggs, butter, and vanilla into the buttermilk.
  • To a medium bowl, add the the flour, sugar, baking powder, baking soda, and salt. Whisk together to combine.
  • Pour the dry ingredients over the wet and mix just until incorporated. Do not overmix!
  • Let the batter rest for about 5 minutes. It should form bubbles and rise just a bit.
  • Heat a non-stick griddle to 325 degrees Fahrenheit or place a large frying pan over medium heat. Melt a little butter on the cooking surface, spreading it evenly, if desired (or if the griddle/pan is not non-stick). Using a 1/3 cup measure (or a trigger-handled ice cream scoop works as well), pour the batter onto the griddle or into the frying pan. The pancakes are ready to flip when they look a little dry around the edges and start to form little bubbles (about a minute). Flip and cook on the other side until golden brown and the cooked through.
  • Serve topped with sliced bananas, butter, and maple syrup.

1 tablespoon white sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed

Steps:

  • Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  • Stir flour mixture into banana mixture; batter will be slightly lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 tablespoon superfine sugar
3/4 cup desiccated coconut
Pinch salt
4 eggs, separated
1 cup milk
1 cup coconut milk
1 3/4 ounces unsalted butter, melted
Butter, for greasing the pan
6 bananas, sliced in 1/2 lengthwise
Passion Fruit Syrup, recipe follows
1/2 cup superfine sugar
1/4 cup passion fruit pulp

Steps:

  • Preheat the oven to 250 degrees F.
  • Put the flour, baking powder, sugar, desiccated coconut and salt in a bowl and stir to combine. Put the egg yolks, milk and coconut milk into another bowl and whisk to combine. Add the milk mixture and butter to the dry ingredients and mix lightly with a metal spoon until just combined.
  • Place the egg whites in a clean, dry stainless steel bowl and whisk until stiff peaks form. Using a large metal spoon, fold the egg whites through the batter in 2 batches.
  • Heat a large nonstick frying plan over a medium heat and brush a small portion of butter over the base. For each pancake, drop 3 tablespoons of batter into the pan. Avoid overcrowding the pan with pancakes. Cook for 2 minutes on 1 side, turn and cook for another minute. Transfer to a plate and keep warm in the oven while you make the remaining pancakes.
  • Serve the pancakes in stacks of 3 with the banana and Passion Fruit Syrup.
  • Combine the sugar, passion fruit pulp and 1/2 cup water in a small saucepan over medium heat and bring to a boil, skimming any scum from the surface. Reduce the heat to low and simmer for 10 minutes. Remove from the heat and set aside to cool.

1 teaspoon baking soda
1 teaspoon baking powder
1 large egg
1 cup buttermilk
1/4 cup whole milk
1 tablespoon melted unsalted butter, plus 3 tablespoons
3 ripe bananas, cut into 1/3-inch slices

Steps:

  • Preheat oven to 200 degrees. In large bowl sift together flour, sugar, salt, baking soda and baking powder. In separate bowl whisk together egg, buttermilk, milk and melted butter. Slowly combine the dry ingredients with the wet ingredients. Stir until the flour disappears, but being careful not to over beat the batter. In a large cast-iron skillet, melt about 1/2 tablespoon remaining butter. Ladle about 1/4 cup of batter into the pan for each pancake. Immediately press 4 or 5 banana slices into each so the batter oozes slightly over the fruit. Cook until bubbles appear and then flip and cook on the other side, about 3 minutes total. Transfer the pancakes to a platter and keep warm in the oven while you cook the remaining batches, adding butter to the pan as needed. Serve hot with syrup.

2 cups skim milk
170 g passion fruit
2 large ripe bananas, thinly sliced

Steps:

  • Place flour and sugar into a medium bowl and gradually blend in milk, egg yolks, and 1/4 cup of passionfruit. Whish egg whites to stiff peaks and fold into mixture.
  • Heat spray oil in a non stick frying pan over a medium heat. Add 1/2 cup of pancake mixture to pan, arrange 8 banana slices over. Cook for approximately 1 to 2 minutes on each side or until golden and puffed. Repeat to make 12 pancakes.
  • Serve pancakes with extra passionfruit.
  • Tip: Use fresh passionfruit when in season. 170g can is equivalent to approximately 8 large or 10 small passionfruit.

2 medium eggs, beaten
pinch of baking powder (gluten-free if coeliac)
splash of vanilla extract
1 tsp oil
25g pecans, roughly chopped
125g raspberries

Steps:

  • In a bowl, mash 1 large banana with a fork until it resembles a thick purée.
  • Stir in 2 beaten eggs, a pinch of baking powder (gluten-free if coeliac) and a splash of vanilla extract.
  • Heat a large non-stick frying pan or pancake pan over a medium heat and brush with ½ tsp oil.
  • Using half the batter, spoon two pancakes into the pan, cook for 1-2 mins each side, then tip onto a plate. Repeat the process with another ½ tsp oil and the remaining batter.

350g self-raising flour
1 tsp baking powder
2 very ripe bananas
2 medium eggs
1 tsp vanilla extract
250ml whole milk
butter, for frying
2 just ripe bananas, sliced
maple syrup (optional)
pecan halves, toasted and roughly chopped (optional)

Steps:

  • Sieve the flour, baking powder and a generous pinch of salt into a large bowl. In a separate mixing bowl, mash the very ripe bananas with a fork until smooth, then whisk in the eggs, vanilla extract and milk. Make a well in the centre of the dry ingredients, tip in the wet ingredients and swiftly whisk together to create a smooth, silky batter.
  • Heat a little knob of butter in a large non-stick pan over a medium heat. Add 2-3 tbsp of the batter to the pan and cook for several minutes, or until small bubbles start appearing on the surface. Flip the pancake over and cook for 1-2 mins on the other side. Repeat with the remaining batter, keeping the pancakes warm in a low oven.
  • Stack the pancakes on plates and top with the banana slices, a glug of sticky maple syrup and a handful of pecan nuts, if you like.

150g plain flour
2 tsp baking powder
3 tbsp golden caster sugar
400ml can coconut milk, shaken well
vegetable oil, for frying
1-2 bananas, thinly sliced
2 passion fruits, flesh scooped out

Steps:

  • Sift the flour and baking powder into a bowl, and stir in 2 tbsp of the sugar and a pinch of salt. Pour the coconut milk into a bowl, whisk to mix in any fat that has separated, then measure out 300ml into a jug. Stir the milk slowly into the flour mixture to make a smooth batter, or whizz everything in a blender.
  • Heat a shallow frying pan or flat griddle and brush it with oil. Use 2 tbsp of batter to make each pancake, frying two at a time - any more will make it difficult to flip them. Push 4-5 pieces of banana into each pancake and cook until bubbles start to pop on the surface, and the edges look dry. They will be a little more delicate than egg-based pancakes, so turn them over carefully and cook the other sides for 1 min. Repeat to make 8-10 pancakes.
  • Meanwhile, put the remaining coconut milk and sugar in a small pan. Add a pinch of salt and simmer until the mixture thickens to the consistency of single cream. Use this as a sauce for the pancakes and spoon over some of the passion fruit seeds.
