4 6-ounce beef eye round steaks
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
1 to 2 teaspoons sugar, plus a pinch
1 clove garlic, sliced
2 heads radicchio, torn into pieces
1/3 cup sun-dried tomatoes, thinly sliced, plus more for topping
1/4 cup balsamic vinegar (preferably aged)
1/2 cup low-sodium chicken broth
1/2 cup fresh basil leaves, sliced, plus leaves for topping

Steps:

  • Heat a large skillet over medium-high heat. Season the steaks with salt and pepper. When the pan is hot, add 1 tablespoon butter, swirling the pan to coat. Add the steaks, sprinkle them with a pinch of sugar, and sear until golden brown on the bottom, about 4 minutes. Flip and cook until golden on the other side, 2 more minutes. Transfer to a cutting board and tent with foil.
  • Reduce the heat to medium and add 1 tablespoon butter to the skillet. Add the garlic and cook 20 seconds. Add the radicchio in batches, tossing until wilted. Sprinkle with 1 to 2 teaspoons sugar and 1/2 teaspoon salt. Add the sun-dried tomatoes and vinegar and cook until the vinegar evaporates slightly, about 1 minute. Add the broth and cook until the radicchio is tender, about 2 minutes. Stir in the basil. Transfer the radicchio to plates using tongs. Continue cooking the sauce until it thickens slightly, 1 to 2 minutes. Stir in the remaining 1 tablespoon butter.
  • Thinly slice the steak and add to the plates. Drizzle with the sauce and top with more sun-dried tomatoes and basil.

1/3 cup extra-virgin olive oil
1/4 cup balsamic vinegar
6 garlic cloves, chopped
1 tablespoon chopped fresh rosemary
1 teaspoon (packed) finely grated orange peel
1/2 teaspoon dried crushed red pepper
4 large heads of radicchio, each quartered through core end
1 cup Pecorino Romano cheese shavings

Steps:

  • Whisk oil, vinegar, garlic, rosemary, orange peel, and crushed red pepper in large bowl. Add radicchio and toss to coat. Marinate 15 minutes.
  • Prepare barbecue (medium heat). Drain marinade into small bowl. Place radicchio on grill; sprinkle with salt and pepper. Grill radicchio until edges are crisp and slightly charred, turning occasionally, about 6 minutes. Transfer radicchio to serving platter. Drizzle with reserved marinade and sprinkle with cheese shavings.

10 oz skirt steak cut crosswise into 1/2 inch slices
4 T balsamic vinegar, divided
3 large garlic cloves (2 finely chopped and 1 halved)
1 large red onion, cut into 10 wedges
1/2 t peanut oil
1 pint (10 oz) grape or cherry tomatoes, halved
1 c torn radicchio (2 oz)
fresh rosemary sprigs

Steps:

  • 1. Marinate steak in 2 T vinegar and chopped garlic 15 min at room temp. In a separate bowl, combine onion and 1 T vinegar. 2. Heat wok or large skillet over med high heat: add oil. Remove steak from marinade, reserving marinade and cook steak 2 min. Transfer to plate; cover. 3. Add onion to wok and cook 3 min or until slightly softened. Transfer to plate with a slotted spoon,; cover. 4. Add tomatoes to wok; cook 2 min. Add reserved marinade; bring to a boil. Add radicchio and remaining 1 T vinegar; remove from heat. 5. Rub toasts with cut sides of remaining garlic clove until fragrant. Top each w/steak and veg. Garnish with rosemary.

2 large heads of radicchio (about 1 pound total), halved through core end, each half cut into 3 wedges with some core still attached
3 tablespoons olive oil
1 tablespoon chopped fresh thyme
Balsamic vinegar (for drizzling)

Steps:

  • Preheat oven to 450°F. Rinse radicchio wedges in cold water; gently shake off excess water (do not dry completely). Place radicchio in large bowl. Drizzle with olive oil and sprinkle with thyme, salt, and pepper; toss to coat.
  • Arrange radicchio wedges, 1 cut side up, on rimmed baking sheet. Roast until wilted, about 12 minutes. Turn over and roast until tender, about 8 minutes longer.
  • Arrange radicchio on platter, drizzle with balsamic vinegar, and serve.

6 tablespoons extra virgin olive oil, divided
2 tablespoons shallots, finely chopped
1 teaspoon red pepper flakes
1 teaspoon garlic paste (1 medium clove garlic mashed with a pinch of salt)
1/4 cup fresh flat-leaf parsley, chopped
2 teaspoons fresh oregano, finely chopped or 1 teaspoon dried oregano
1 teaspoon fresh thyme leave, finely chopped
kosher salt
black pepper, freshly ground
4 heads radicchio, quartered and core trimmed
16 slices bacon
2 tablespoons balsamic vinegar, aged
2 tablespoons fresh chives, chopped

Steps:

  • In small bowl, whisk together vinegar, 2 tablespoons oil, shallots, red pepper flakes, garlic paste, parsley oregano, and thyme. Season with salt and pepper to taste.
  • Place radicchio quarters in a large bowl and drizzle with enough vinaigrette to coat lightly, tossing gently.
  • Wrap each radicchio quarter in bacon, trimming excess bacon if necessary.
  • Light one chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place radicchio quarters on grill and cook until bacon and leaf edges crisp all over, 2 to 3 minutes per side.
  • Transfer radicchio quarters to a platter. Drizzle with balsamic vinegar and remaining 4 tablespoons olive oil; sprinkle with chives, and serve.

  • Preheat a grill to medium-high (400°F to 450°F), or heat a grill pan over medium-high. Toss together bell peppers, onion slices, olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper in a medium bowl. Place bell pepper mixture on oiled grates, and grill, uncovered, turning occasionally, until charred and softened, 10 to 12 minutes. Immediately return mixture to bowl, and toss with cilantro, chives, lemon juice, and garlic. Cover with plastic wrap, and let steam 15 minutes.
  • Remove steak from marinade; discard marinade. Wipe excess marinade off steak. Place steak on oiled grates, and grill, uncovered, turning occasionally, until lightly charred on both sides and medium-rare, 10 to 15 minutes. Transfer to a cutting board; let rest 15 minutes.
