1/4 cup balsamic vinegar
2 tablespoons brown sugar
2 tablespoons grated onions
2 tablespoons chopped fresh thyme
2 teaspoons canola oil
4 (5-6 ounce) tuna steaks

Steps:

  • 1. Combine vinegar, brown sugar, onion, thyme and oil. Stir until sugar dissolves. Place tuna steaks in resealable plastic bag. Pour half of mixture over tuna. Seal bag and chill 30 minutes, turning occasionally. Refrigerate remaining vinegar-mixture. 2. Preheat grill. Remove tuna from marinade; discard marinade. Grill fish 5 minutes per half-inch thickness, turning once, or until fish flakes with a fork. Brush fish with reserved vinegar mixture just before removing from grill.

I make the sauce way ahead of fishing season and store in the freezer. Even the kids give it two thumbs up! A fancy way to entertain guests and make it seem like you slaved all day. 6 tuna steaks
6 slices bacon (optional)
salt and pepper
1 tablespoon sesame seeds
1/2 cup balsamic vinegar
1/3 cup soy sauce
1 tablespoon honey
3 tablespoons veal glaze (paste form, available in specialty food stores)

Steps:

  • Wrap bacon around tuna steaks and secure with toothpicks (if using).
  • Salt and pepper.
  • For sauce: Combine all ingredients in a sauce pan and heat on medium until reduced by half.
  • Sauce should be made ahead of time and can be refrigerated up to one week.
  • Sauce can also be frozen and thawed in refrigerator before reheating.
  • When warm and reduced, whisk in one tablespoon of butter until melted.
  • Spoon some sauce on plate add grilled steak and drizzle sauce over the top.
  • Grill tuna steaks 4 minutes per side over hot coals.

4 fresh tuna steaks, 8 ounces each, 1-inch thick
1 lemon, zested
3 sprigs fresh rosemary, about 2 tablespoons leaves stripped from stem
Handful flat leaf parsley
3 cloves garlic, crushed
Coarse salt and black pepper or grill seasoning
Extra-virgin olive oil, for cooking
Stuffed Portobellos, recipe follows
Serving suggestions: Mixed green salad dressed with oil and vinegar
2 tablespoons balsamic vinegar
1 large lemon, juiced
2 teaspoons Worcestershire sauce
2 tablespoons extra-virgin olive oil, plus more, for drizzling
4 medium to large portobello mushroom caps
Coarse salt and black pepper, or grill seasoning spice blend
3 large, firm plum tomatoes, seeded and diced
2 sprigs fresh rosemary, leaves finely chopped to about 2 tablespoons
1/2 pound fresh smoked mozzarella, thinly sliced
Serving suggestions: Garlic toasts or grilled crusty bread

Steps:

  • Rinse and pat tuna steaks dry. Place zest on top of cutting board. Pile rosemary and parsley leaves on top of zest. Pile garlic and some coarse salt and black pepper or grill seasoning on top of herbs. Finely chop the garlic, herbs, and spices. Drizzle the olive oil over the tuna steaks just enough to coat each side. Rub herb and garlic mixture into fish, coating pieces evenly on each side. Let stand 10 minutes.
  • Grill tuna steaks 6 minutes on each side or 4 minutes on each side, if you prefer pink tuna at the center. Cook steaks over: high setting on indoor electric grill, medium high heat on outdoor gas grill or, 6 inches from hot, prepared charcoal.
  • Combine first 4 ingredients in a bowl or large food storage plastic bag. Coat mushroom caps evenly in marinade.
  • Place mushroom caps on the grill cap-side-up and season with grill seasoning or salt and pepper. If you are using an indoor tabletop electric grill, preheat to 400 degrees F or "high" setting. If you are using an outdoor gas grill, preheat to medium high; for a charcoal grill, prepare coals and cook mushrooms 6 inches from hot coals. Mushrooms will cook 4 to 6 minutes on each side. Cook mushrooms covered or under tin foil tent and turn occasionally.
  • Combine tomatoes, rosemary, and smoked mozzarella. Drizzle with oil and toss.
  • Fill mushroom caps with tomato mixture and top with sliced mozzarella. The mushrooms will look like small pizzas. Place caps in oven at 425 degrees F until cheese melts or you can close grill lid or replace tin foil tent over mushroom caps to melt cheese, it will take 1 to 3 minutes. Serve as-is or, place stuffed caps on garlic toast or sliced crusty bread to catch the juices.

4 tablespoons balsamic vinegar
2 green onions (white and light-green part), finely chopped
2 tablespoons coarsely grated ginger
1 1/2 pounds thick tuna steak
4 tablespoons sesame seeds
1 tablespoon oil

Steps:

  • Mix vinegar and 2 tablespoons water with green onion and ginger in a bowl. Place tuna in mixture, and marinate about an hour.
  • To cook, remove tuna from marinade; set marinade aside. Press sesame seeds into both sides of tuna. Heat nonstick pan to medium, and add oil. Quickly sear tuna on both sides, just a couple of minutes -- seeds brown quickly. Remove tuna from pan, pour in reserved marinade, and bring to a boil. Pour over tuna, and serve.

This fast and easy recipe is credited to Cynthia Charbeneau of Traverse City, MI. I made the recipe from the www.fustinis.com website. Fustini's is a store in Traverse City that specializes in all sorts of different olive oils and balsamic vinegars. The balsamics and olive oils also come in infused varieties (I just bought a pomegranate infused balsamic for salads). I love shopping in this store when I am up north. On the website, very few ingredient proportions are listed for this recipe, so I listed the proportions I tried tonight. I would never have thought I would enjoy strawberries with fish, but I really thought this dish was a winner. DH said he "liked it." I used Fustini's 18-year aged balsamic vinegar. I omitted the sugar and water. DH always cooks the tuna steaks by first putting them in the oven on 200F for a short time before pan searing them. This way, they are still rare (but not cold) on the inside. I put the strawberry/balsamic combination in a saucepan on the stovetop between medium low and low, just enough to warm them up. I served with one of our favorite salads, Recipe #191024 191024, using Fustini's 12-year-old white balsamic vinegar.

1 cup fresh strawberries, sliced (approximately)
blackening seasoning, to taste
1 tablespoon balsamic vinegar (use your favorite kind)
water (just a little bit)
1 pinch sugar (depending on the sweetness of your balsamic)

Steps:

  • Rub fish with your favorite blacken seasoning.
  • Grill or saute fish until cooked to desired amount.
  • While fish is cooking, in a saucepan combine warm sliced strawberries with a little water, 1 Tb balsamic vinegar, and a pinch of sugar (depending on the sweetness of the balsamic vinegar).
  • Spoon berries over the fish and enjoy.

6 tablespoons white wine
1 cup plus 2 tablespoons balsamic vinegar
2 tablespoons sugar
1 teaspoon freshly ground black pepper
1 1/2 pounds ripe fresh tomatoes, cut into 1/2-inch dice
2 teaspoons olive oil
2 teaspoons salt
3/4 pound haricots verts or green beans, stem ends trimmed
1 teaspoon fresh lemon juice
6 6-ounce, 1-inch-thick, fresh tuna steaks
1/4 cup loosely packed basil leaves, very thinly sliced

Steps:

  • Combine wine, vinegar, sugar, and 1/4 teaspoon pepper in a small saucepan over medium-high heat. Simmer until slightly thickened and syrupy, 25 to 30 minutes. Remove from heat, and set aside.
  • Combine tomatoes, 1 teaspoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Toss, and set aside
  • Heat grill to medium hot. Combine haricots verts, lemon juice, remaining teaspoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl; toss well. Arrange beans on the grill and cook, turning, until just limp and lightly charred, 2 to 4 minutes. Transfer to a serving platter.
  • Sprinkle remaining teaspoon salt and 1/4 teaspoon pepper on all sides of tuna steaks. Brush wine-and-vinegar mixture on tops and sides of steaks and place, glazed side down, on grill. Grill, brushing with more glaze, until lightly charred, about 3 minutes per side for rare, 6 to 7 for well done. Transfer to serving platter with beans. Add basil to tomatoes, toss, and spoon over tuna. Serve immediately.

1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1/4 cup orange juice

Steps:

  • Sprinkle the tuna with the salt and pepper.
  • Heat the oil in a large nonstick skillet set over medium high.
  • Add the tuna and cook 2 minutes on each side, or until cooked almost to desired degree of doneness.
  • The tuna will continue to cook slightly after it is removed from the pan.
  • Two minutes on each side will result in a pink, not red, center.
  • After removing the tuna from the pan, add the vinegar and orange juice and cook, stirring, until the liquid begins to turn to a syrup.
