SIMPLE HOT CHILLI SAUCE
I have an abundance of chillis so I want to make a sauce. I'm planning on trying this with other types of chillis as needed, but for now, saving this recipe per how I found it. http://www.taste.com.au/recipes/19696/hot+chilli+sauce Modified per suggestions. Receipe states should last 3 weeks in the fridge, but I'm sure if you sterilised, it would last longer and canning would probably make it last even longer. Prep time includes blending time.

HOT CHILI SAUCE
I've been making this sauce since 1988. My son, David, loved it and I've been making it ever since. Add some to almost any savoury dish. It's especially good to serve at the table when only some like it HOT!! Use the same recipe with less chillis and even children will enjoy it.

- Add all other ingredients.
- Bring to boil.
- Lower heat and simmer for 20 minutes, stirring now and then.
- Leave to cool slightly.

- NB: Use scissors to chop hot chillis and avoid touching the raw flesh. Any variety of red chilli can be used; some are milder than others. I usually use the small Thai hot chilli.
FERMENTED HOT CHILI SAUCE
I'm posted this sauce full of heat, good for you food enzymes, beneficial bacteria, vitamin C and carotene from http://nourishedkitchen.com/fermented-hot-chili-sauce-recipe/ I used kefir whey to inoculate the chilies with beneficial bacteria. You don't need a starter. But if you want these two sights are great. http://www.culturesforhealth.com/ or http://www.wildernessfamilynaturals.com/category/culturing-products.php. Just salt and chili's. The cooking time is fermentation time.

Steps:
- Snip the stems from the chilies, but leave their green tops intact.
- Combine all all ingredients in a food processor, or mince by hand, until chopped to a fine pasty texture.
- Spoon the chili paste into a glass mason jar and allow it to fermented, covered, at room temperature for five to seven days.
- After the chili paste has bubbled and brewed for about a week, set a fine-mesh sieve over a mixing bowl and spoon the fermented chili paste into the sieve. With a wooden spoon, press the chili paste into the sides of the sieve so that the sauce drips from the sieve into the waiting mixing bowl.
- Once you've pressed and pushed the chili sauce through the sieve, pour the sauce from the bowl into jar or bottle and store in the refrigerator. The sauce will keep for several months.
- Don't discard any remaining chili paste; rather, use it to season stir-fries, eggs, Bloody Mary`s -- .

CHILI SAUCE FOR HOT DOGS, FRIES AND HAMBURGERS
This is 1 of my 2 staple chili sauces. This is a great recipe to keep on hand for those chili cravings. I have used this recipe on hot dogs, brats, fries and hamburgers of all varieties; even over spaghetti. This recipe freezes very well and will last in the freezer up to 6 months as long as it is properly sealed in airtight containers with a piece of plastic wrap inside the container sitting directly on top of the sauce mixture. You can reduce the cooking time by cooking over a higher heat - just make sure to watch the chili closely, stirring often, so it does not burn on the bottom.

Steps:
- With your clean hands start by adding 4 cups of water, 2 cans of chicken or beef stock and 1 can of regular tomato paste in a large pot. Place the raw hamburger in the liquid and use your hands to break all down so there are no chunks. Add dried onion, chili powder, kosher salt, garlic powder, cinnamon, parsley and cayenne pepper, black pepper and mix well.
- Simmer uncovered over low heat for 2 hours or until the mixture becomes thick and viscus. Stir often! Taste for seasoning and spice level; add more to suit your taste.
- Let cool and store in airtight containers in the freezer. This is also great served over spaghetti with extra sharp cheddar and fresh diced onions.
