Steps:
- Bring cream just to a boil in a small saucepan over high heat. Reduce the heat to low and keep the cream warm.
- In a large high-sided saucepan over medium-high heat, dissolve the sugar with 2 tablespoons of water. As the sugar mixture begins to bubble, watch for crystals developing on the inside of the pan just above the liquid. Using a pastry brush dipped in water, brush the inside of the pan right above the crystals so the water drips down and dissolves the crystals back into the liquid. When the sugar begins to brown, occasionally move the pan to swirl the liquid gently and cook it evenly. Continue to cook until the mixture is dark golden brown. The total cooking time will be 8 to 9 minutes. Remove the pan from the heat.
- Very carefully add the hot cream to the sugar mixture a few tablespoons at a time. The liquid will bubble up dramatically. Stir the sauce and cook for 1 minute. Add the vinegar, lemon juice and 1/2 teaspoon salt, mix well. Pour into a heatproof bowl. You should have about 1 1/4 cups of sauce. The sauce can be made several weeks ahead, covered with plastic, and stored either at room temperature or in the refrigerator. If refrigerated, warm in a microwave oven before using.
- Serve on top of vanilla ice cream.
CHICKEN WITH WILD MUSHROOM AND BALSAMIC CREAM SAUCE
This recipe is a modern take on the ol' Cream of Mushroom Chicken. This one is more healthful and almost as easy as pouring that condensed, salty mass out of a can. It will heal a long day!

Steps:
- Heat a large pot of water to a boil. Salt the water and add orzo pasta. Cook to al dente.
- Preheat a large nonstick skillet over medium-high heat and add extra-virgin olive oil, 2 turns of the pan. Season chicken liberally with salt and pepper and add to the hot skillet. Cook the chicken for 5 to 6 minutes on each side. Remove the chicken from the pan and cover with foil to keep warm.
- Return the skillet to the heat, turn heat back a bit, and add the butter. Once the butter melts add the mushrooms and brown stirring occasionally for about 4 to 5 minutes. Once the mushrooms are brown season with salt and pepper then add the garlic, thyme and shallots. Cook stirring occasionally for about 2 minutes or until the shallots are wilted. Sprinkle the flour into the pan and cook 2 minutes more. Whisk in the stock, balsamic vinegar and the cream. Turn the heat up to high and simmer for about 2 minutes or until thickened. Slice the chicken on an angle. Add the parsley and the chicken back to the skillet to heat up, about 1 minute.
- To serve, pile orzo on dinner plates and top with the sliced chicken and sauce.
BALSAMIC CREAM SAUCE
The vinegar and cream go very well together. Best when sauteed chicken and asparagus is added to the mix. I use this sauce on pasta all the time.

BALSAMIC CREAM SAUCE
Balsamic cream sauce is a very delicious sauce prepared by cooking balsamic vinegar. It can be used as a delicious topping for your salads or even as a marinating agent. In fact, you can always use it as a dipping sauce for the fried items, Bar B. Q dishes and most snacks. It also goes wonderfully with the seafood. If you are baking salmon, simply coat it with the balsamic cream sauce and then bake it. You can achieve a caramelized texture for your salmon using this sauce. The best part about balsamic cream sauce is the fact that it is not only used as a dressing for salty snacks. It tastes delicious with your deserts just as much. Drizzle it over your vanilla ice cream scoop and find out! Let's have a look at how this amazing sauce is made! Health Benefits Balsamic vinegar which is a key ingredient in this recipe works much like a balm. It can be used as a tonic for curing digestive issues. In the same manner, balsamic cream sauce is also considered as a way to prevent an upset stomach right after you have a spicy meal.

Steps:
- Take a sauce pan. Heat up olive oil into the pan for a couple of minutes. Now add butter in the pan and let it stay on a low heat until it melts completely. Add the minced onion into the pan. Fry it until it is completely caramelized and turns dark brown. It should take about 15 minutes. Add balsamic vinegar after 15 minutes and keep stirring it for a couple of minutes. Now add chicken bouillon granules and cream into the pan. Mix these well and let the whole sauce simmer for a couple of minutes. Add grated parmesan cheese to the mixture and stir until it dissolves completely in the sauce. Take it off the heat and pour the sauce into a separate jar to cool down. Serve as a dip, marinade or dressing in a salad as per your needs and enjoy! Trivia In the year 1046 balsamic vinegar was produced only in the Reggio Emilia and Modena regions of Italy. It was given as a gift to the Holy Roman Emperor who was passing through this region, Henry III. It grew in popularity since and today, it is one of the most common items sold in Italy.

PAN-BRAISED CHICKEN WITH VEGETABLES IN BALSAMIC-CREAM SAUCE
Lovely flavors of the Mediterranean combine in this main dish recipe to serve over mashed potatoes or pasta. Onion, mushrooms, garlic, fresh tomatoes, fresh spinach, cream, and a touch of balsamic vinegar really dress up boneless, skinless chicken thighs, in about an hour.

Steps:
- Spread chicken thighs on a clean work surface. Pat dry with paper towels and season both sides with salt and pepper. Sprinkle 1/2 of the Italian seasoning all over them.
- Heat oil in a 12-inch nonstick skillet over medium-high heat. Add chicken thighs and brown for 3 minutes per side. Remove chicken to a plate and keep warm.
- Add onions to the same skillet and stir up any browned bits from the bottom of the pan. Cook, stirring occasionally, until onions just start to become tender, 3 to 5 minutes. Add mushrooms and cook until they begin to soften, about 4 minutes. Stir in garlic and remaining Italian seasoning. Taste and adjust salt and pepper. Cook and stir for 1 minute.
- Add chicken broth and return chicken thighs to the skillet. Reduce heat to low, cover, and cook until chicken juices run clear, about 15 minutes. An instant-read thermometer should read 165 degrees F (74 degrees C). Remove chicken to a cutting board and cut into bite-sized pieces.
- Return chicken to the skillet and increase heat to medium. Add tomatoes and spinach. Cook and stir until tomatoes are heated through and spinach is tender, but still bright green, about 3 minutes.
- Stir in 1/2 cup heavy cream and balsamic vinegar; bring to a gentle boil. Cook and stir for 3 minutes. If you prefer a creamier sauce, add more cream. Serve with shaved Parmesan cheese.

PAN-SEARED CHICKEN WITH BALSAMIC CREAM SAUCE, MUSHROOMS AND ONIONS
Pan-Seared Chicken with Balsamic Cream Sauce, Mushrooms and Onions - Tender, juicy chicken breasts, pan-seared to perfection, caramelized onions and sautéed mushrooms, paired with a silky balsamic cream sauce. This dish will have your loved ones feeling like they are eating at a fine dining restaurant. The pan drippings from cooking the chicken, paired with the acidity of the balsamic vinegar and the richness of the heavy cream come together to make an incredibly flavorful sauce that also doubles as an amazing gravy.

- COOK THE CHICKEN: season both sides of the chicken breast with salt, pepper, and garlic powder. Heat the oil in a large skillet over medium-high heat and cook the chicken all the way through, roughly 6-12 minutes depending on the size. Make sure chicken reaches 165ºF on a thermometer; remove the chicken to a plate.
- CARAMELIZE THE ONIONS: add the butter to the skillet along with the onions. Push the onions around the pan so they pick up all the flavor bits left behind by the chicken, lower the heat to medium-low and allow the onions to cook for 12-15 minutes, stirring them as needed to prevent from sticking. The onions are done when they soften completely and deepen in color. Add the thyme, red pepper flakes, sugar, and balsamic vinegar, let the vinegar cook out for a couple of minutes.
- MAKE THE SAUCE: Grab a whisk for this next step. Slowly pour in the chicken broth in a steady stream while you whisk, this will help deglaze the pan. Kick the heat up to high and let the sauce reduce for 2-3 minutes or until it thickens a bit. Once the sauce reduces, lower the heat again, and add in the cream. You don't want the cream to start boiling immediately as it will cause the sauce to split. Let the sauce come to a gentle simmer, once it does, add in the chicken breasts and spoon the sauce on top. Serve immediately. The sauce will thicken as it sits so you may need additional broth to thin it out.
